This quick bread recipe features buttermilk and raisins and makes two loaves.

4 cups all-purpose flour
2 cups firmly packed brown sugar
2 cups buttermilk *
2 large Land O Lakes® Eggs
3 tablespoons Land O Lakes® Butter melted
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup golden raisins
1 cup butterscotch baking chips

Steps:

  • Heat oven to 350°F. Grease bottoms only of two (9x5-inch) loaf pans. Set aside.
  • Combine all ingredients except raisins in bowl; beat at low speed, scraping bowl often, until well mixed. Stir in raisins.
  • Spoon batter evenly into prepared loaf pans. Bake 40-50 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes. Remove from pans. Cool completely.

1-1/2 cups chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine the flour, pudding mix, baking powder and salt; add to creamed mixture alternately with milk. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. Steps:
