GARLIC BUTTER ACORN SQUASH
This is a savory version of the classic fall flavor of acorn squash!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Place each squash half in the baking dish, cut side down.
- Bake squash in the preheated oven for 30 minutes. Flip squash over and place 1 tablespoon butter and 1 teaspoon garlic into each squash. Season with salt and pepper.
- Bake squash, cut-side up until tender, about 20 more minutes. Cool for about 5 minutes before serving.

- Put squash in a microwave-safe bowl; add sage. Dot squash with butter pieces; season with salt and pepper. Cover bowl tightly with plastic wrap.
- Cook in microwave oven set on High for 5 minutes. Stir squash to coat in melted butter while checking cubes for softness. Replace plastic and continue to cook until completely tender, 2 to 4 minutes.

- 1. Place face up in baking dish. (To cup the butter inside. It is OK if it leans a little... just so long as it holds the butter without dripping. Trim a tiny flat place off the bottom if necessary -- or cradle on a clean metal jar lid.)

- Fill the water bowl of your smoker 1/2 way. Place wood chips in the side tray. Preheat the smoker to between 275°F with the top vent open for approximately 5 to 10 minutes.
- With a large sharp chef's knife, carefully cut each squash in half lengthwise. Scoop out and discard the seeds and fibrous strands.
- Brush or rub the inside of each squash half with the oil to coat the flesh, 1/2 teaspoon each half.
- Place the squash on a rack of the smoker, flesh side up. Smoke for 1-1/2 hours. Replenish the water and wood chips as needed, approximately at 45 minutes.
- At 1 hour and 15 minutes, prepare the sweet filling. In a small saucepot over medium heat, melt the butter, sugar, and cinnamon together. Once melted, stir in the maple syrup.
- At 1 hour and 30 minutes, spoon the butter mixture into the squash halves. Continue to smoke for another 30 minutes or until the flesh is soft when pierced with a sharp paring knife or fork. The flesh will likely be browned.
- Serve the squash with either a spoon or a fork. If feeling adventurous, add a few dried cranberries or raisins or some pecans to each squash half.

- Make the browned butter. Place butter in a 1-2 quart pot over medium high heat. Cook until it melts, then foams, whisking frequently. Continue to cook until brown specs form in the bottom of the pot, 3-4 minutes. The color will turn golden brown and smell nutty. Remove from heat and immediately transfer to a measuring cup to stop the cooking process. Add the maple syrup and whisk to combine. Set aside to cool slightly while you cut the squash.

- Cut your squash(es) in half then spoon out the seeds. Use a knife to cut a shallow criss-cross pattern in the meat of the squash. Brush the inside with olive oil, and sprinkle with 1/2 teaspoon salt. Place on a sheet pan and roast cut side up. Set timer for 30 minutes.
- In a small bowl or ramekin mix the remaining salt with the sugar and spices. At the 30 minute mark sprinkle the seasoning mix generously on the meat of the squash. Close the oven and roast another 10 minutes or until they are very tender with browned bits (see the pictures).
- Make the brown butter. Heat a small saucepot over medium heat. Add in the 4 tablespoons of butter, cut up into pieces so it melts evenly. Whisk continuously. It will bubble, then foam, then you will see it get brown on the bottom of the pot. Remove it while it’s a light brown color. Continue whisking it and pour it into a jar, ramekin, etc.
