5 cloves garlic, peeled
Salt
1/4 to 1/3 pound fresh green beans, trimmed and cut into 2-inch pieces
2 lemons, zested
1 teaspoon fennel seed
5 to 6 sprigs fresh thyme, leaves stripped and finely chopped
3 to 4 sprigs fresh rosemary, leaves stripped and finely chopped
A handful flat-leaf parsley, finely chopped
1/2 to 2/3 cup extra-virgin olive oil, divided
Black pepper
4 boneless skinless chicken breasts
4 boneless, skinless chicken thighs
1 pound asparagus spears
8 slices prosciutto
1 cup basil leaves, about 20 leaves
1/2 cup fresh mint leaves, 5 to 6 stems stripped of their leaves
A handful pine nuts, 3 to 4 tablespoons, lightly toasted and cooled
1/2 cup grated Parmigiano-Reggiano
1 (15-ounce) can cannellini beans, rinsed
1 (15-ounce) can garbanzo beans, rinsed

Steps:

  • Heat grill or grill pan to medium-high.
  • Fill a small skillet with about 1-inch water and bring to a boil.
  • Grate the garlic onto acutting board and add a couple teaspoons salt, mash into paste with the flat of your knife.
  • Add salt to boiling water and cook green beans 1 minute then drain and cool under cold running water then reserve.
  • Reserve 1/5 of the pasted garlic, about 1 clove and add the rest to a shallow dish. To the garlic, add the lemon zest, fennel seed, chopped thyme, rosemary, parsley and about 1/4 to 1/3 cup extra-virgin olive oil and some black pepper. Stir with a fork to combine then add chicken pieces and coat evenly. Grill chicken 12 to 15 minutes until juices run clear.
  • Bring a medium saucepan of water to a boil.
  • Trim asparagus of tough ends. Add salt and the asparagus to the water and blanch for 2 minutes. Remove from the water and place into an ice water bath to cool. Once cooled, pat dry with paper towels, drizzle with a touch of extra-virgin olive oil and season with salt and pepper. Divide the asparagus into 4 piles and roll 2 layered slices of prosciutto around each pile to form bundles. Grill 7 to 8 minutes until prosciutto is crisp and spears are tender.
  • Place basil and mint leaves in a food processor with the nuts. Add some salt and pepper and turn processor on. Stream in about 1/4 to 1/3 cup extra-virgin olive oil to form a thick pasty sauce. Transfer the sauce to a bowl. Stir in the reserved garlic paste and the grated cheese. Add the cooled green beans and the canned beans to the bowl and stir to combine. Adjust seasoning.
  • Remove chicken from the grill and squeeze the juice of 1 of the zested lemons down over the meat while still hot.
  • Serve 1 piece each chicken breast and thigh with an asparagus bundle and some bean salad alongside.

12 ounce Yukon Gold Potatoes
5 teaspoon Basil Oil
3 clove Garlic
6 ounce Asparagus
2 tablespoon Garlic Herb Butter
2 ounce Prosciutto
10 ounce Chicken Cutlets
1 unit Chicken Demi-Glace
4 tablespoon Crème Fraîche
2 teaspoon Cooking Oil
Kosher Salt
Pepper

Steps:

  • • Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 450 degrees. Bring garlic herb butter to room temperature. Wash and dry produce. • Dice potatoes into ½-inch pieces; toss on one side of a baking sheet with half the basil oil (all for 4), salt, and pepper. (For 4, spread potatoes out across entire sheet.) • Peel garlic. Place whole cloves in the center of a small piece of foil. Drizzle with oil; season with salt and pepper. Cinch into a packet and place on same sheet. • Roast on top rack until potatoes are browned and tender and garlic is softened, 20-25 minutes. (You'll add more to the sheet after 15 minutes.)
  • • Trim and discard woody bottom ends from asparagus.
  • • Gather asparagus into four even bundles (eight bundles for 4 servings) on a clean work surface. Starting 1 inch from the bottom of the spears, roll up each bundle in a slice of prosciutto, so that the prosciutto covers as much length as possible. TIP: Tug the prosciutto a little as you wrap to keep it tight around the asparagus. • Once potatoes have roasted 15 minutes, remove sheet from oven. Carefully place wrapped asparagus on empty side. Roast until asparagus are tender and prosciutto is crispy on the bottom, 10 minutes. (For 4 servings, leave potatoes and garlic roasting; add asparagus to a second sheet and roast on middle rack.) • Remove sheet from oven; flip wrapped asparagus. Return to oven until crispy all over, 2-4 minutes more.
  • • Meanwhile, pat chicken* dry with paper towels; season generously all over with salt and pepper. • Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add chicken and cook until browned and cooked through, 3-5 minutes per side. • In the last 2 minutes of cooking, reduce heat to low; add half the garlic herb butter to pan. Spoon over chicken until coated. Turn off heat; leaving butter in pan, transfer chicken to a cutting board.
  • • While chicken rests, carefully transfer garlic to a cutting board and mash cloves with a fork until smooth. • Heat pan used for chicken over medium-high heat. Stir in demi-glace and ¼ cup water (1⁄3 cup for 4 servings); simmer until slightly thickened, 2-3 minutes. Turn off heat. • Stir in crème fraîche and garlic. (TIP: If sauce seems too thick, add water 1 tsp at a time until it reaches a drizzling consistency.) Season with salt and pepper.
  • • Once potatoes are finished roasting, carefully add potatoes and remaining garlic herb butter to a large bowl. Toss until butter has melted and potatoes are evenly coated. • Divide chicken, wrapped asparagus, and potatoes between plates. Drizzle chicken with as much sauce as you like. Serve with any remaining sauce on the side for dipping.

4 ounces cream cheese, softened
1 teaspoon garlic, minced
1 teaspoon dry basil leaves
1/8 teaspoon pepper
12 chicken tenders
salt and pepper (optional)
6 prosciutto ham slices (more depending on size)
1 tablespoon butter

Steps:

  • In a small bowl, stir together cream cheese, garlic, basil leaves and pepper.
  • Place chicken tenders on a sheet of waxed paper. Spoon 1/6th of cheese filling evenly onto the center of chicken tender. Top with a second chicken tender. (Note: The original recipe didn't call for salt, but at this point you can season with salt and pepper.) Wrap a slice of prosciutto ham around the filled chicken. Repeat this to make a total of 6 stuffed chicken tenders.
  • In large nonstick skillet, melt butter over medium heat until foamy. Add chicken and cook 3 minutes, turn, reduce heat to low and cover. Cook 8 minutes or until chicken is no longer pink inside.
  • Tip: Toss hot cooked noodles in the buttery pan juices left in the skillet. Add a little chopped parsley for a great side dish.
