SHARLOTKA (RUSSIAN APPLE CAKE)
Russian sharlotka is a simple to make apple cake recipe that is made up of a light sponge cake filled with small apple pieces.

- 1. Cover the bottom of a baking form with parchment paper. Melt the butter and generously brush the inside of the baking form. Alternately, you can also spray the form with a pan release baking spray. 2. Cut two apples into small dice. Place them into a bowl and sprinkle with the lemon juice and cinnamon. Mix to make sure all apples are evenly covered. Set aside. 3. In a bowl, mix the flour and baking powder. Set aside. 4. Preheat the oven to 350F. 5. In a large bowl, add the eggs and a pinch of salt. Beat the eggs with an electric mixer until the egg yolks and egg whites are combined. Add about 1/4 of sugar, increase the speed of the mixer and continue beating the eggs. Gradually add all the sugar. Beat the eggs for about 6 minutes or until the mixture has thickened and turned very pale. It should fall in ribbons from a spatula. 4. Add the sour cream and vanilla extract to the eggs and mix with the electric mixer just until combined. 5. In batches, sift the flour into the egg mixture and gently fold it in with a spatula. Mix just until the batter is smooth and no pockets with flour remain. Make sure to not over mix. 6. Pour 1/3 of the batter into the baking form and evenly spread it with a spatula. In an even layer, add half of the apples. Slightly press the apples into the batter. Add more batter to cover the apples. Spread the batter over apples if needed. Add the remaining apples and cover them with the rest of the batter. Slightly shaking the form will help getting rid of the air pockets.* 7. Slice the remaining apple first into quarters and then into very thin wedges and arrange on top of the cake.** 8. Place in the oven and bake for 50 to 60 minutes or until a toothpick inserted in the middle of the cake comes out clean. 9. Once the apple cake is done, take it out of the oven and let it cool on a rack before removing it from the baking form.
RUSSIAN APPLE TART
Amazing Russian apple tart from my grandma's collection. Thin, crispy crust topped with sweet apples with a great cinnamon and lemon flavor.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a small cookie sheet.
- Mix apple slices with lemon juice in a bowl. Stir lemon zest, walnuts, and cinnamon together in a separate bowl.
- Mix sugar and butter together in another bowl. Mix in egg, followed by flour until a dough forms.
- Spread dough over the prepared cookie sheet with your hands. It will be thin. Sprinkle walnut mixture evenly over the dough and press it in with your hands. Arrange the apple slices over top.
- Bake in the preheated oven for 30 minutes.
- While the tart is baking, heat the apricot jam in microwave or stovetop until it reaches a liquid consistency, about 1 minute.
- Remove the tart from the oven and brush it with warmed jam. Return to the oven and bake until golden and set, 15 to 20 more minutes.
- To serve, pour cognac into a ladle, carefully light with a match, and pour over the whole tart. The alcohol will burn off.

- Preheat the oven to 350 degrees F.
- Toss the apples, sugar, cinnamon, allspice, and salt together in a large bowl.
- Roll the pastry, on a lightly floured surface, into a 12-inch round. Line a baking sheet with parchment paper and spray with cooking spray. Arrange the pastry on the baking sheet. Put the apple mixture in the center of the pastry and spread evenly to the edges, but leaving enough dough to fold over to create a crust on the rim. Brush the crust with melted butter and drizzle the remaining butter over the apples.
- Bake until the crust is golden brown, about 40 minutes.
- While tart is cooking, put the peach preserves into a microwavable bowl and microwave until syrupy, about 20 seconds.
- Remove the tart from oven and brush with the warmed preserves. Pull the parchment paper off the sheet tray and transfer the tart to a wire rack to cool. Cut as desired and serve.

- Preheat the oven to 350 degrees. Grease and flour a 10 inch round cake pan. Line the bottom of the pan with parchment paper. You can also use a baking spray instead of the butter/oil and flour. Spray the top of the parchment paper also. Whisk the eggs and sugar together until they are pale yellow and foamy. Add the sour cream to the batter. Dissolve the baking soda in vinegar and add to the batter also. Mix to combine. Add the flour to the batter and mix just until the flour is incorporated. Meanwhile, peel the apples and cut into small, thin pieces. Add the apples to the prepared cake pan. Pour the batter over the apples and distribute evenly over the top. Bake in a preheated 350 degree oven for 45-50 minutes, until the sharlotka is golden, or when a toothpick comes out clean from the center of the cake. Run an offset spatula or butter knife around the edges of the cake pan. Flip the cake over onto a cooling rack. The parchment paper will peel right off. Flip the cake over right side up. Allow it to cool for about 15 minutes. Place the sharlotka onto a serving platter. Dust with confectioner's sugar. You can also sprinkle it with a bit of cinnamon if you like.

- Remove core from the apples, cut in large chunks 2",lay parchment paper on the bottom of your baking form ( I use 8 1/2 inch spring form).
- Lay the apples on top of parchment paper.
- Let eggs warm up for 10 minutes,then mix till light yellow and foamy; add sugar in, small portions at a time, let sugar dissolve; add flour; mix till you see air bubbles, pour mixture on the apples.
- It will soak throughout, do not mix apples with batter.
- Bake for 55 minutes on 375°F.
- When pie is done flip upside down, Apples will be on the top.
- Enjoy.

- Preheat Oven to 375˚F and butter a 9" springform pan. Sift together 1 1/2 cups flour, 1/4 cup sugar, 2 tsp baking powder and 1/4 tsp salt. Dice 1/2 cup chilled butter and cut it into the flour with a pastry blender, for 1 to 2 min or until butter crumbles are pea-sized.
- In a small bowl, beat 1 egg well with a fork. Add 1/3 cup cream and stir until blended then drizzle over flour mixture and fold with a spatula just until it comes together. Do not over-mix. Transfer dough to prepared springform pan and spread out evenly (it won't be perfect, but try to seal the edges to keep the apple juices in).
- Peel, core and thinly slice apples (about 1/16" thick). Transfer to a large bowl. In a small ramekin, stir together 1/4 cup sugar and 1 tsp cinnamon then sprinkle over apple slices and toss gently to combine.
- Right away, arrange apple slices in rings starting with the largest slices at the edges and working towards the center, overlapping the slices halfway as you go. Once there is 1/2″ space is left in the center, layer 3 thin apple slices in a long strip. Roll strips together to form a little rose and place in the center.* Dice up 1 1/2 Tbsp of butter and dot the top of the tart with butter. Place pan over a foil lined baking sheet to catch stray apple juices then bake at 375˚F for 30 min.
