A new twist on mashed potatoes, an old favorite.

2 large russet potatoes, peeled and cut into chunks
½ cup salted butter, cubed
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh marjoram

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
  • Meanwhile, combine butter, rosemary, sage, thyme, and marjoram in a large microwave-safe bowl. Microwave on high power until melted, about 30 seconds.
  • Add potatoes to the herb butter mixture. Beat with an electric mixer until almost smooth with a few lumps remaining.

2 pounds russet potatoes, scrubbed
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature, cut into pieces
1 cup milk, warmed

Steps:

  • Put the potatoes in a large saucepan, add enough cold water to just cover and salt generously. Bring to a simmer over medium heat and cook, uncovered, until the potatoes are tender and a thin knife easily passes through the center, 45 to 55 minutes.
  • Drain the potatoes, cool slightly and then peel. Add back to the pot with the butter, warm milk, 1 1/2 teaspoons salt and a few grinds of pepper. Turn the heat to low and mash with a potato masher until the milk and butter are blended in.

5 pounds Yukon gold potatoes, peeled and cubed
4 cloves garlic, peeled and smashed
kosher salt
1 cup whole milk or heavy cream
1 1/2 sticks (12 tablespoons) salted butter, at room temperature
8 leaves fresh sage, 6 whole leaves + 1 Tbsp chopped)
3 sprigs fresh thyme
3/4 cup crème fraîche
fresh black pepper
chopped fresh chives, for serving

Steps:

  • 1. In a large pot of cold water, bring the potatoes and garlic to a boil. Salt the water and cook until the potatoes are tender, about 20 to 30 minutes.2. Meanwhile, heat the cream, 4 tablespoons butter, 1 tablespoon chopped sage, and the thyme sprigs over medium heat until the butter has melted. Remove from the heat and let the herbs sit in the warm cream until the potatoes are done. Remove the thyme sprigs before adding to the potatoes. 3. Drain the potatoes, return the potatoes to the pot and mash over low heat, or mash in the bowl of stand mixer fitted with the paddle attachment. Add the herbed cream and crème fraîche. 4. In a skillet, melt 6 tablespoons butter and the sage leaves over medium heat until just browned. The butter will melt, foam and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan. Remove the sage leaves. Pour the browned butter into the warm mashed potatoes. Taste and season with salt and pepper.5. Serve the potatoes warm, topped with the remaining 2 tablespoons butter, sage and fresh chopped chives.

6 tablespoons unsalted butter, at room temperature
1 tablespoon finely chopped fresh parsley
Kosher salt
1/8 teaspoon freshly grated nutmeg
3 cups milk
1 bay leaf
2 pounds russet potatoes (about 4)

Steps:

  • Beat the butter in a small bowl with a rubber spatula until creamy. Add the parsley, 1/4 teaspoon salt and the nutmeg and mix to combine. Scrape the butter onto a piece of plastic wrap and form into a log. Wrap tightly and refrigerate until firm, at least 30 minutes, or freeze up to 1 week.
  • Combine the milk, 1 teaspoon salt and the bay leaf in a large saucepan. Peel the potatoes and cut into 1-inch pieces, adding them to the pot as you go so they don't discolor. Bring to a gentle simmer over medium heat; cook, stirring to prevent the milk from scorching, until the potatoes are very tender, 15 to 20 minutes.
  • Drain the potatoes, reserving the milk in a liquid measuring cup or bowl; discard the bay leaf. Return the potatoes to the saucepan and add all but about 1 tablespoon of the herb butter. Mash with a potato masher, gradually adding the reserved milk as needed, until creamy (you may have leftover milk). Season with salt. Transfer to a serving dish and top with the remaining 1 tablespoon herb butter just before serving.

1/3 cup chopped onion
1 garlic clove, minced
1 tablespoon butter
3/4 cup sour cream
1 teaspoon dill weed
1/4 to 1 teaspoon salt
1/2 teaspoon minced fresh rosemary
1/2 teaspoon grated lemon zest
1/4 teaspoon crushed red pepper flakes, optional
Paprika, optional

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. 4 garlic cloves
6 tablespoons unsalted butter, softened
1/4 cup freshly grated parmesan cheese
1 cup sour cream
2 (3 1/2 ounce) packages boursin cheese (or other garlic-herb cream cheese)
1/3 cup chopped fresh chives
salt
fresh ground black pepper

Steps:

  • Boil the potatoes and garlic in salted water to cover until tender; drain.
  • Preheat the oven to 350° degrees; rub a 13 x 9 inch baking dish with 2 tablespoons butter.
  • Sprinkle the parmesan cheese into the dish and tip the dish so the cheese is evenly distributed and adheres to the butter.
  • Put the potatoes and garlic into a large bowl, add the sour cream, Boursin, 2 tablespoons of the remaining butter, and the chives.
  • Using an electric mixer, beat the potatoes until smooth.
  • Taste for seasoning and add salt and pepper to taste.
  • Transfer to the prepared dish and dot with the remaining 2 tablespoons butter.
  • **At this point, you can cover and refrigerate for 2-3 days or freeze for up to 1 month.
