CAESAR SALAD CROUTONS
A fine Caesar salad is only as good as it's croutons.

Steps:
- Combine garlic and oil in a small saucepan. Simmer until cloves are a light gold color, about 15 minutes. Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids. Set garlic oil aside.
- Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet.
- Arrange bread cubes in a single layer on baking sheet. Bake, turning bread cubes periodically, until lightly browned, about 20 minutes.
- In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat. Cook toasted bread cubes in batches until light to medium golden brown, turning frequently. Add more ghee and garlic oil as needed. Turn out into basket lined with paper towels, and drain for about 20 minutes.

To get the briny flavor of anchovies, capers are used. Nutritional yeast replaced Parmesan, miso giving it the traditional flavor. This is easy and oh so good! This has the intesity of a true Ceaser! From Chef Tal Ronnen's The Conscious Cook.

- Preheat your oven to 350*F.
- Spread the focaccia cubes on a baking sheet and bake for 10 minutes, or until lightly toasted.
- Mince the garlic and capers in a food processor. Add the mayonnaise, miso paste, nutritional yeast, agave nectar, and 1/2 cup water and pulse to combine. With the motor running, slowly add the oil in a thin stream. Continure to blend until emulsified, about 1 more minute. Season with salt and pepper.
- Place the lettuce and croutons in a large bowl. Drizzle the dressing over the top and toss well to coat.
- Serve immediately and enjoy!

This homemade Caesar salad is loaded with flavor! - Preheat the oven to 375 degrees F (190 degrees C). Place bread on a rimmed baking sheet.
- Whisk together oil, butter, garlic, salt, and pepper in a liquid measure. Pour mixture over the bread and toss with your hands until evenly coated. Spread bread mixture into a single layer. Bake in the preheated oven until golden brown and toasted, yet slightly soft in the center, 15 to 18 minutes, tossing croutons a few times during baking. Remove from the oven and let cool completely while you prepare the salad.
- Place garlic, anchovies, and salt in a large salad serving bowl; press the mixture with a fork until a paste forms. Stir in egg yolk, lemon juice, Dijon, and Worcestershire sauce until well combined. Slowly whisk in olive oil until all is incorporated and mixture is well blended and smooth. Stir in 2 tablespoons Parmesan cheese and 1/4 teaspoon pepper. Remove about 1/4 cup of dressing and set aside for another use.
- When ready to serve, add lettuce and 1/2 of the croutons to the bowl with the remaining dressing; toss until well coated. Reserve remaining croutons for another use.
- Sprinkle salad with additional Parmesan and pepper if desired. Serve immediately.

- In a bowl whisk together oil, mayonnaise, cheese, vinegar, mustard, anchovy paste, garlic, pepper, and Worcestershire sauce.
- Meanwhile cook bacon and tear lettuce into bite size pieces to make about 10 cups. Place in large bowl. Add bacon, cheese, croutons, and dressing and toss well to combine.
- Enjoy.

- Add the yeast and honey to the lukewarm water and stir until dissolved. Combine flour and salt in a bowl. Add yeast mixture to the bowl, along with olive oil. Mix ingredients together until you have a wet dough. Drizzle with olive oil, cover, and let rise overnight in the fridge. Let the dough come up to room temperature for at least 1 hr. before shaping. If you need focaccia, faster, let your dough rest for at least 4 hrs. at room temperature (or use a rising-assist in your oven, if you have one) until very bubbly.
- Drizzle oil onto a rimmed baking sheet and spread it around to coat the entire inside of the sheet pan. Transfer dough into it, and fold each of the edges in to the middle of the dough to trap some air. Let it relax for a moment and gently push it out to fit the tray. Leave to rest for 1 hr at room temperature.
- Pre-heat the oven to 220°C/430°F. To make the Caesar salad dressing, add mayonnaise, lemon juice, olive oil, anchovies, garlic, Parmesan, honey, and a grinding of pepper into a jug. Blend with an immersion blender until smooth.
- Whisk together some olive oil and water and season with salt. Dip your fingers into the mixture and use your fingertips to gently press into the dough (as if you were gently pushing the surface away from you, watch the video to see the technique in action!), repeat this whole process with freshly-dipped fingers all over the surface, making sure you don’t press to the bottom of the dish and let too much air escape. Crumble flaky sea salt over the top and bake in the oven at 220°C/430°F for approx. 20 – 25 min., or until browned.
