Categories     Seafood     Fish

Time 25m

Yield 4

Number Of Ingredients 11

2 tablespoons paprika
2 teaspoons cayenne pepper
1 ½ teaspoons ground white pepper
1 ½ teaspoons ground black pepper
1 tablespoon salt
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon dried thyme
1 teaspoon dried oregano
4 (6 ounce) fillets red snapper
1 ½ cups butter, melted

Steps:

  • In a small bowl, mix together paprika, cayenne pepper, white pepper, black pepper, salt, onion powder, garlic powder, thyme, and oregano.
  • Heat a large cast iron skillet over high heat for 10 minutes, or until extremely hot.
  • Dip fish into melted butter, and sprinkle each fillet generously with the seasoning mixture. Place the fish fillets in the hot skillet. Pour 1 tablespoon of butter over each fillet. Cook until the coating on the underside of the fillet turns black, 3 to 5 minutes. Turn the fish over. Pour another tablespoon of butter over the fish, and cook for 2 minutes, or until fish flakes easily with a fork.

COCOA BLACKENED STEAK WITH MARCONA ALMOND ROMESCO

Cocoa Blackened Steak with Marcona Almond Romesco image

Provided by Food Network

Categories     main-dish

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 24

4 leeks, cleaned and root ends intact
2 tablespoons cocoa nibs
2 tablespoons olive oil
1 tablespoon red wine vinegar
Smoked flaky sea salt
100 grams (7 tablespoons) smoked paprika
25 grams (1 2/3 tablespoons) dark cocoa powder
25 grams (1 2/3 tablespoons) onion powder
20 grams (1 1/3 tablespoons) ground cumin
20 grams (1 1/3 tablespoons) garlic powder
20 grams (1 1/3 tablespoons) smoked flaky sea salt, such as Maldon
20 grams (1 1/3 tablespoons) sugar
1 tablespoon instant ground coffee
4 bone-in rib eyes, each 1 1/2-inches thick
400 grams (14 ounces) piquillo peppers
100 grams (1/2 cup) olive oil
1/2 cup chopped white chocolate
1/2 cup sun-dried tomatoes
1/4 cup sherry vinegar
1 tablespoon smoked paprika
15 grams or 2 1/2 teaspoons kosher salt
6 cloves garlic
200 grams (8 ounces) Marcona almonds, toasted
Neutral cooking oil

Steps:

  • For the leeks: Preheat the oven to 475 degrees F. Line a baking sheet with a wire rack.
  • Put the whole leeks on an unlined sheet tray and bake, flipping halfway through, until completely charred, about 20 minutes. Allow to cool to the touch.
  • For the cocoa blackened steak: Combine the smoked paprika, cocoa powder, onion powder, cumin, garlic powder, smoked salt, sugar and coffee in a bowl. Divide the mixture between the each of the rib eyes and let sit for 15 minutes.
  • For the leeks: Once the leeks are cool to the touch, remove the outer layers, revealing the soft leeks inside. Finely chop the leeks and add to a bowl. Add the cocoa nibs, olive oil and red wine vinegar and season with the smoked sea salt. Taste and adjust the seasoning.
  • For the Marcona almond romesco: Blend the peppers, olive oil, white chocolate, tomatoes, sherry vinegar, smoked paprika, salt and garlic in a blender until smooth. Add the almonds to a food processor and pour over the blended sauce. Pulse until coarse, not smooth.
  • Heat a 14-inch cast-iron skillet over medium-high heat. Add 2 tablespoons cooking oil and the steaks and cook on both sides until evenly charred, about 7 minutes per side, searing in batches if needed. Remove from the skillet and put on the rack on the sheet tray. Let rest for 10 minutes before slicing.
  • Serve the steak alongside the romesco and the leek condiment.

BLACKEYED PEAS AND CAJUN SAUSAGE

Blackeyed Peas and Cajun Sausage image

Beans and sausage, what could be more Cajun than this? It's hearty and yummy. According to a study of nearly ten thousand Americans, a diet containing at least 300 micrograms of the B vitamin folate (found in beans) reduces the risk of stroke and heart disease.

CAJUN BLACKENED SALMON WITH PUREED PEAS AND DOOR STOP FRIES

Cajun Blackened Salmon With Pureed Peas and Door Stop Fries image

Here is a quick, easy recipe that tastes great. You can make Cajun spice by grinding your own herbs and spices, but why fuss when you can buy already blended Cajun spice, that tastes great, I use Schwartz brand and prefer this one to others I have tried.

Provided by The Flying Chef

Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 7

olive oil
4 salmon fillets (about 150g each fillet)
4 teaspoons cajun spices (I allow for a teaspoon for each, but add more or less depending on desired spice level, I always use)
1 (500 g) frozen peas
100 g butter
salt and pepper (If using salted butter you won't need extra salt.)
potato (As many chips as you want... I looovvee big fat chips.)

Steps:

  • Peel and cut potatoes into very fat chips, heat some oil in a large frying pan and fry chips until cooked and crisp, turning constantly, to brown on all sides. Alternatively fry in a chip fryer if you have one.
  • Coat salmon with Cajun seasoning, heat a small amount of oil in a pan, place salmon skin side down and fry for 4-5 minutes, turn and fry for a further 4-5 Min's. Cooking times will vary depending on the thickness of the fillet.
  • Bring a large pan of salted water to the boil, add peas and boil for about 5 Min's. Drain and puree peas with butter, salt and pepper in a food processor or blender.
  • To serve: Divide puree mix between 4 plates, place salmon on top, and stack chips on top of each other.
