CAJUN BUFFALO WINGS

Steps:
- Heat oil in a deep fryer to 375°F.
- Combine the butter, hot sauce, and garlic powder in a small saucepan over low heat.
- Heat until the butter is melted and the ingredients are well blended; set aside.
- Combine the flour, Cajun Spice Mix Recipe, paprika, cayenne, and salt in a large zip lock bag put the wings into the bag shake to coat each wing evenly.
- Put the wings in the refrigerator for 1 hour (helps adhered flour to wings).
- Put all the wings into the hot oil and fry them for 10 to 15 minutes.
- Remove the wings from the oil to a paper towel to drain.
- As soon as drained into the hot sauce mixture stir to coat them.
- Serve with lots of Blue cheese dressing and celery sticks on the side.
- This will help cool down the heat.

- Preheat oven to 450°F. Place wings in large resealable plastic bag. Sprinkle Creole Seasoning over wings. Seal bag and shake to coat evenly.
- Arrange wings in single layer on foil-lined 15x10x1-inch baking pan sprayed with no stick cooking spray.
- Bake 35 to 45 minutes or until wings are cooked through and skin is crisp, turning halfway through cooking.
- Mix hot sauce and melted butter in large bowl. Add hot wings; toss to coat well. Serve wings with blue cheese or ranch dressing and celery sticks, if desired.

- Preheat oven to 180 degrees celsius.
- Cut the wings into wingettes and drumettes. Use a kitchen scissors to cut off any excess skin or hair on them
- Mix all the ingredients for the flour coating together. Pat the chicken wings dry with paper towels and toss them in the flour coating
- Place a rack on top of a baking tray. You can cover the tray with some foil if you wish. Spread the wings on top of the rack. Bake for 20 minutes
- Brush the wings with some olive oil after 20 minutes. Turn them over and brush the other side
- Turn the temperature up to 200 degrees Celsius and bake for 25 minutes or until golden and crisp
- To make the buffalo sauce, place all the ingredients in a saucepan and bring to a boil.
- Pour the sauce over the hot wings and serve.
- For the ranch dip whisk all of the ingredients in a bowl and serve

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.

- Line a baking sheet with aluminum foil, and lightly grease with cooking spray. Place the flour, cayenne pepper, garlic powder, and salt into a resealable plastic bag, and shake to mix. CAJUN SPICE CHICKEN WINGS WITH REMOULADE SAUCE
Hot, crispy wings dipped in a cold, creamy sauce provide a great contrast in texture, flavor, and temperature. This New Orleans-inspired version of Buffalo-spiced chicken wings uses a technique that does not include a deep fryer so it's easier and less messy. By using baking powder in the spice rub, these wings stay super crispy!

- Prepare spice rub by combining baking powder, salt, garlic powder, and onion powder, cumin, paprika, cayenne, black pepper, oregano, and thyme in a small bowl. Mix until thoroughly combined.
- Place wings in a large bowl and toss in 3 tablespoons spice rub. Toss wings with tongs until thoroughly and evenly coated. Transfer to a baking rack set over a parchment-lined sheet pan. Sprinkle a little more spice rub over each wing and let sit for 15 minutes.
- Preheat the oven to 425 degrees F (220 degrees C).
- Prepare remoulade sauce by crushing capers in a mixing bowl with the back of a fork. Add mayonnaise, Dijon, Worcestershire sauce, hot sauce, cayenne, paprika, garlic, green onion, parsley, and lemon juice; whisk to combine. Taste and add salt if needed. Cover and refrigerate until needed.
- Bake wings in the center of the preheated oven for 20 minutes. Flip and continue to bake until beautifully browned, no longer pink at the bone, and the juices run clear, 20 to 25 minutes longer. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Serve with remoulade sauce.

- Rinse the wings thoroughly under cold running water and pat dry with paper towels.
- In a 9-inch pie plate, stir together the salt, chili powder, cracked pepper, garlic powder and flour. Pour milk in medium bowl.
- Dip each of the chicken pieces in the milk then dredge in the flour mixture turning to coat thickly. Tap off the excess flour and set aside on a plate.
- Heat the oven to 325°F.
- In a deep heavy pot or high-sided skillet, heat the oil over medium-high until it begins to shimmer and reaches 375-degrees. Working in batches, fry the chicken wings, turning once when the coating is sealed and begins to brown, about 3 to 5 minutes. Then turn again to cook the pieces through, another 7 to 9 minutes. Place the cooked pieces on a baking sheet and put in the oven while you cook the remaining pieces. Check the chicken for doneness, the juices should run clear.
