2 cups vegetable oil
2 tablespoons Cajun seasoning
2 tablespoons dried Italian-style seasoning
garlic powder to taste
2 tablespoons lemon pepper
10 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

Steps:

  • In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
  • Preheat the grill for high heat.
  • Lightly oil the grill grate. Drain chicken, and discard marinade. Place chicken on hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

2 tablespoons Cajun seasoning (see the homemade blend, below)
1/4 teaspoon freshly ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt (only if the Cajun seasoning is unsalted)
2 tablespoons vegetable oil

Steps:

  • Serve with your favorite sides and enjoy! *A serving of chicken is about the size of a deck of playing cards or about 3 to 4 ounces. Unless chicken breasts are sliced to "portion size," they might weigh as much as 10 to 12 ounces.

The closer to barely done it is, while still cooked through, the juicier and more tender it will be. It seems 99% of all restaurants grossly over cook their chicken breasts!

2 skinless, boneless chicken breasts
1 cup Italian-style salad dressing
1 (18 ounce) bottle barbecue sauce

Steps:

  • Place frozen chicken breasts in a resealable plastic bag and cover with salad dressing. Seal bag and place in refrigerator and marinate until chicken is thawed (marinating frozen breasts until thawed permeates the meat with the dressing flavors).
  • Lightly oil grill and preheat to high heat.
  • Remove chicken breasts from marinade and grill 5 to 7 minutes each side, until they are barely done. Coat with barbecue sauce and cook just a few minutes more. Don't overcook, but check to make sure that the chicken is cooked through and juices run clear.

1 ½ Tbsp Cajun spice
1 cup Mexican cheese blend cheese, shredded and divided
2 Tbsp fresh parsley leaves, finely chopped
4 boneless, skinless chicken breast halves (about 4-oz/125 g each)
¼ cup fresh bread crumbs

Steps:

  • Preheat oven to 425°F (220°C).

3/4 cup low-fat buttermilk
1 1/4 cups corn flake crumbs
1 tablespoon sweet Hungarian paprika
2 teaspoons cajun seasoning

Steps:

  • Preheat oven to 425°F.
  • Place chicken in a shallow nonmetal dish and pour the buttermilk over the pieces, turning to coat. Cover and refrigerate several hours or overnight. (If you forget to plan ahead, you can skip this step, just dip the chicken in buttermilk before coating with the crumb mixture.).
  • Combine cornflake crumbs, paprika and Cajun seasoning in a gallon size plastic bag. Close the bag and shake well to mix. Take one piece of chicken at a time out of the buttermilk, place in coating bag and shake to coat evenly. Place on a baking sheet or stoneware pan. repeat with remaining chicken. 1/2 teaspoon celery salt

  • Preheat oven to 375°F.
  • In a small mixing bowl, mix thyme, garlic powder, cajun seasoning, onion powder, black pepper, and bread crumbs.
