Make extra baked potatoes just so you can make these Cajun-spiced home fries for breakfast or a side dish the next day!

3 large russet potatoes, scrubbed
2 tablespoons olive oil
1 small onion, diced
½ medium red bell pepper, diced
½ medium green bell pepper, diced
1 clove garlic, chopped
3 tablespoons salted butter
1 tablespoon chopped fresh thyme
1 teaspoon Cajun seasoning, or to taste
2 tablespoons chopped fresh flat-leaf parsley
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Pierce potatoes with a fork and place on a baking sheet.
  • Bake in the preheated oven until tender, about 1 hour. Let cool completely, 15 to 20 minutes. Dice potatoes, leaving the skin on.
  • Heat a large cast iron frying pan or nonstick skillet over medium heat. Add olive oil. When hot, add onion, bell peppers, and garlic. Saute until veggies have softened, 3 to 5 minutes. Add potatoes, butter, thyme, Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown, 10 to 12 minutes. Top with parsley.

4 medium thin-skinned white potatoes
3 to 4 tablespoons extra-virgin olive oil
2 tablespoons cayenne pepper sauce
1 teaspoon (1/3 handful) ground thyme or poultry seasoning
1 teaspoon (1/3 handful) sweet paprika
1 teaspoon (1/3 handful) ground cumin
Coarse salt and black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a nonstick cookie sheet. Season wedges with salt and pepper and roast for 20 minutes, turning once.

Nonstick cooking spray
1/2 cup all-purpose flour
1 tablespoon Cajun seasoning
Kosher salt
2 large eggs, beaten
1 1/2 cups stone-ground cornmeal
1 cup panko breadcrumbs (see Cook's Note)
1 pound zucchini (2 to 3 small to medium zucchini) cut into 3-inch-by-1/4-inch sticks
1/4 cup mayonnaise
1 tablespoon Creole or whole-grain mustard
1/2 small dill pickle spear, finely chopped
1/2 to 1 teaspoon Louisiana-style hot sauce, such as Tabasco

Steps:

  • Adjust two oven racks to the top and bottom third of an oven and preheat oven to 425 F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour and Cajun seasoning in a large re-sealable plastic bag. Combine the eggs and 1/2 teaspoon salt in another large plastic bag; combine the cornmeal, breadcrumbs and 1/2 teaspoon salt in a third large plastic bag.
  • Add about half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumbs and repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes.
  • Meanwhile, stir together the mayonnaise, mustard, pickle and hot sauce in a small bowl. Serve with the zucchini fries.

1/8 teaspoon cayenne pepper
1 3/4 teaspoons salt, divided
1 (7 -8 ounce) russet potatoes
1 pinch garlic powder
olive oil flavored cooking spray
1/2 tablespoon flour
1/2 teaspoon paprika
1 tablespoon egg substitute

Steps:

  • Bring a large pot of water to a boil over high heat. Add 1 teaspoon salt.
  • Preheat the oven to 400 degrees. Lightly mist a large nonstick baking sheet with oil spray. Set aside.
  • Place the potato on a cutting board. Make straight cuts on the 4 long sides of the potato to remove some of the peel. Discard the trimmed pieces. Some skin will remain on the sides and the ends. With a knife, cut the potato lengthwise into 1/3"thick sticks. These can vary in length. On a scale, weigh 5 1/4 ounces of potatoes or measure 1 1/2 cups. Transfer the potato strips to the boiling water. Cook for exactly 3 minutes but no longer or they will break.Drain in a colander. Set aside for about 5 minutes to cool.
  • Meanwhile, in a mixing bowl, combine the egg substitute, flour, paprika, black pepper, cayenne, garlic powder, and the remaining 3/4 teaspoon salt. With a fork, beat to mix. Add the potato strips. With hands, toss to coat well. Allow any excess egg-substitute mixture to drip off. Transfer to the reserved baking sheet. Arrange, not touching, in a single layer.
  • Bake for 20 minutes, turning about every 5 minutes, or until crispy and golden.

Steps:

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
