This recipe is adapted from one in Vincent and Mary Price's "A Treasury of Great Recipes." Although it appears amongst those from the Rivoli Restaurant in Mexico City, it doesn't appear to be from the restaurant itself. "This hearty soup, a sort of Mexican minestrone, is made with both [corn and chiles], as you might expect, but it is the unexpected ingredients that make it so good." Let me tell you... this soup is OUTSTANDING. I've made a lot of soups, and this is one of my favorites. I'll be making it often in years to come!

1 tablespoon vegetable oil
1/4 lb lean pork, in small cubes
1/2 cup chopped onion (1/2 medium onion)
1 cup corn, freshly scraped from ear is preferred (1 ear fresh corn)
1 poblano chile, seeded and thinly sliced (for spicier use greener poblanos, for sweeter use red-ish poblanos)
1 cup thinly sliced zucchini (1 small zucchini)
3 tablespoons tomato puree
1 quart chicken stock
1 ripe avocado, peeled, seeded, and diced
1/4 cup grated parmesan cheese
salt, to taste
fresh cilantro stem, for garnish

Steps:

  • In a large saucepan, heat the oil, then add the pork and sauté over medium heat, stirring frequently, until browned, about 7 minutes.
  • Add the chopped onion, corn, poblano chile, zucchini, tomato puree, and the chicken stock.
  • Simmer until vegetables are tender, about 20 minutes.
  • Add the avocado and Parmesan cheese, stir to incorporate, then season with salt to taste, and garnish with cilantro springs and serve immediately.

This recipe uses roasted poblano chiles. They are fairly spicy and very flavorful.

6 poblano peppers
2 cups chicken broth
salt and pepper to taste
½ teaspoon ground nutmeg
2 cups milk
3 tablespoons margarine
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to broil. Place poblano chile peppers on a cookie sheet and place in oven. Allow skin to blacken and blister, turning the chile peppers until all sides are done. (Note: Do not overcook.) When they are done, place them in a paper bag and seal. In about 15 to 20 minutes, take them out of the bag and peel the skin off each one under running water. Remove the stems and seeds.
  • In a blender, combine the chile peppers, broth, salt and pepper to taste and nutmeg. Blend until smooth. In a small saucepan over medium heat, warm the milk and set aside. In another saucepan over medium heat, melt the butter or margarine, add the flour and stir well. Add the warmed milk and stir until well blended. Add the chile pepper mixture and mix well. Reduce heat to low and simmer for 30 minutes.

Most recipes I've found online from Mr. Price have been from his best-known cookbook, "A Treasury of Great Recipes." This one, however, is based on one from the rare British paperback cookbook, "Cooking Price-Wise," which was a companion to a cooking show in the early 1970s of the same name, hosted by Vincent Price.

12 ounces cooked leg of lamb or 12 ounces lamb shoulder, in 1/2 inch cubes
2 teaspoons orange liqueur (optional)
3 oranges, peeled
2 celery ribs, finely chopped
2 ounces desiccated coconut
1 teaspoon of your favorite curry powder
4 tablespoons mayonnaise
salt & freshly ground black pepper, to taste
1 large head romaine lettuce, washed and leaves separated (original recipe did not specify type of lettuce)

Steps:

  • Trim the lamb of fat and cut into 1/2 inch cubes.
  • In a bowl, sprinkle meat with the orange liqueur and toss to coat well; set aside.
  • Pull 4 attractive-looking orange sections from the peeled oranges; set aside for garnish.
  • Chop the remaining peeled oranges into 1/4 to 1/2 inch sized pieces, then add to the lamb; add the chopped celery and stir.
  • In a separate bowl, stir together the coconut, curry powder, mayonnaise, and salt and pepper to taste to make the dressing.
  • Add the dressing to the lamb mixture, stir well to coat.
  • Arrange the romaine lettuce attractively on a serving platter, then pile the lamb salad on top.
  • Garnish salad with the reserved orange sections and serve.

2 tablespoons butter
2 tablespoons olive oil
1 1/2 cups finely chopped onions
3 slices lean bacon, in small pieces
1 carrot, chopped
1 celery rib, chopped
1/2 lb coarsely ground beef
2 chicken livers, minced
2 tablespoons tomato paste
1/2 cup dry white wine
1 cup beef stock
1 bay leaf
1 strip lemon peel
salt & freshly ground black pepper, to taste
1 garlic clove, crushed
3 quarts water
1 lb uncooked spaghetti
1/2 cup cream or 1/2 cup half-and-half
4 tablespoons butter
4 tablespoons freshly grated parmesan cheese
additional freshly grated parmesan cheese, for garnish

Steps:

  • In a heavy skillet heat together the butter and oil, then add the onion and cook until soft, about 5 minutes.
  • Add the pieces of bacon, chopped carrot, and celery, and saute over medium heat until lightly browned, about 5 to 7 minutes.
  • Add the coarsely ground beef and stir until the meat is coated with fat, then add the minced chicken livers, stir, and cook until the meat browns evenly, about 5 to 7 minutes.
  • Add the tomato paste, wine, beef stock, bay leaf, and lemon peel, then season with salt and freshly ground pepper and the crushed garlic.
  • Cover and simmer for 40 minutes, stirring occasionally.
  • Remove the bay leaf and lemon peel, then allow to simmer uncovered until the sauce slightly thickens.
  • During the last minutes of the sauce simmering, cook the spaghetti according to package directions, about 7 to 10 minutes; drain well.
  • Just before you serve the sauce, add the cream or half and half, stir well, and heat through.
  • Place the cooked spaghetti on a warm platter and dot with the 4 tablespoons butter and sprinkle with the 4 tablespoons freshly grated Parmesan.
  • Serve the pasta either with the meat sauce on the side or in the center of the platter with the pasta around it.
  • Pass with additional freshly grated Parmesan, and enjoy!

The style of recipe format is rather different from what we're used to these days, so I'm translating for a more modern audience. Posted by request. Times do not include overnight chilling, but do include chilling for the lettuce.

2 heads romaine lettuce
1 clove garlic, peeled and crushed
1 cup olive oil
4 slices stale French bread
1 dash cayenne pepper
1 dash Tabasco sauce
1/2 teaspoon sugar
6 anchovy fillets, diced and mashed (optional)
1 teaspoon fresh ground pepper
1/2 teaspoon salt
1 egg
3 tablespoons lemon juice (freshly squeezed preferred)
3/8 cup grated parmesan cheese

Steps:

  • Night before serving (or 8 hours before): crush the garlic and add into the olive oil, then chill overnight in glass container in refrigerator.
  • About an hour before serving: tear the leaves from the lettuce, wash well, and dry thoroughly (a salad spinner works well); chill in refrigerator.
  • When ready to make salad: strain and remove the garlic from the infused chilled olive oil.
  • Trim the crusts from the stale bread, cut into cubes, and brown them by sautéing over medium heat in 1/4 cup of the garlic-infused olive oil, turning them to brown on all sides; drain on paper towels and set aside.
  • Pour the remaining infused oil into a jar and add the cayenne, Tabasco, sugar, and anchovies (which Mr Vincent says are optional, but you shouldn't try to make real Caesar dressing without them), cover with lid, and shake well to mix.
  • Break the chilled lettuce leaves into pieces and place in a large bowl; sprinkle the lettuce with the pepper and salt, then pour the olive oil mixture over and mix to thoroughly coat the leaves.
  • Put water in a pot and bring to a full boil, then take the egg and boil it for 1 minute; remove, crack the shell, and drop it into the salad.
  • Sprinkle the lemon juice over the egg in the salad and then gently stir the egg into the leaves- it will come to have a creamy appearance.
  • Presentation: when ready to serve the salad, sprinkle the Parmesan cheese over it and then the croutons, then toss lightly to mix and serve immediately.
  • Great with garlic bread!

Mr. Vincent Price was an excellent chef and produced several wonderful cookbooks, including "A Treasury of Great Recipes" by himself and his then-wife Mary Price, which was published in 1965. This extravagant recipe was very typical of the times, but is delicious none the less, came from that collection, and translated for a modern audience.

11 ounces mixed dried fruit
boiling water
1 3/4 lbs canned pineapple chunks, drained and liquid reserved
1 cup golden raisin
1/2 cup chopped pecans
8 lbs pre-cooked boneless ham
30 whole cloves
1 cup light brown sugar
1 cup sherry wine
1 cup orange juice
1 cup pineapple juice (use the juice from the canned chunks)
1 cup water
8 slices pineapple rings (canned is fine)
8 canned apricot halves
8 candied cherries
1/2 cup honey
1/2 cup red currant jelly
1/2 cup port wine

Steps:

  • In a saucepan, combine the mixed dried fruit and boiling water to cover; simmer for 10 minutes then let cool, drain, and chop.
  • Preheat oven to 400 degrees F.
  • In a bowl mix the reconstituted fruit with the pineapple chunks (don't throw that juice away), white raisins, and chopped pecans.
  • With a long, sharp, thin knife, cut an "x" about 1 1/2 to 2 inches across into the ham lengthwise so that it goes all the way through both ends of the meat.
  • Stuff the fruit mixture into the cavity you've created in the ham, then fasten the ham tight with skewers or twine.
  • Stud the ham with the whole cloves (make a small slice in the meat for each clove) then rub with the brown sugar, patting it onto the ham to adhere.
  • Place the ham in a roasting pan, then carefully pour over (try not to dislodge the brown sugar too much): the sherry, orange juice, the reserved pineapple juice, and the 1 cup water.
  • Cover the roaster with the lid or foil and bake at 400 degrees F for 45 minutes.
  • Remove the ham from the oven, reduce the temperature to 325 degrees F., and decorate the ham with the pineapple slices, canned apricot halves, and candied cherries, fastening them with wooden picks, then spread or drizzle ham with the honey and return to oven.
  • Bake for an additional 75 minutes, basting frequently.
  • Transfer the ham to a serving platter.
  • Skim the fat from the liquid in the roasting pan, then place pan on stove burner on medium low and stir in the currant jelly and the port.
  • Bring to a boil then strain the mixture into a sauce dish.
  • Serve ham and sauce, and enjoy!
  • Note: the ham can be refrigerated after it has been prepared and garnished and then reheated later or the next day if necessary - bring it to serving temperature by baking it at 350 degrees F for 1 1/4 hour (but don't forget to prepare the sauce from the roasting pan juices ahead, too).
