- In a 2 1/2 quart microwave safe dish, combine the onion and oil.
- Cover and microwave on high for 3 minutes.
- Stir in green onions and celery.
- Cover and cook 2 minutes longer.
- Add Potatoes, salt, cajun seasoning and pepper.
- Cover and cook for 12 minutes until potatoes are nearly tender.
- Stir in the shrimp and bacon.
- Cover and cook on high for 5 minutes or until shrimp is pink and potatoes are tender.

Steps:
- Cook the potatoes in a large saucepan of lightly salted boiling water for 10 to 15 minutes or until tender, drain well.
- Heat the oil in a wok or large nonstick frying pan/skillet.
- Add the prawns, garlic, spring onions and Cajun seasoning and stir fry for 2 to 3 minutes or until the prawns are hot.
- Stir in the potatoes and cook for a further minute.
- Transfer to serving dishes and top with the avocado and the alfalfa sprouts and serve.

- Preheat the oven to 450 degrees. Scrub the potatoes and cut them lengthwise into sixths or eighths, depending on thickness. You want each plank to be a good hefty wedge of a potato.
- Toss the potato planks with the oil in a bowl, making sure each piece is coated. Spread the planks evenly on a lightly greased baking sheet.
- Combine the seasoning ingredients in a small bowl and sprinkle half of mix over potatoes. Bake for 20 minutes, until golden on top. Turn the planks over and sprinkle with remaining seasoning. Bake another 7 to 10 minutes, until bottoms are golden brown. Serve immediately -- cold planks tend to shrivel.

- Preheat oven to 375°F (190°C).
- In a small bowl, combine the Cajun spice mix ingredients and stir to combine.
- In a baking dish, combine potatoes, corn, 2 garlic cloves, 1 tablespoon of oil, and ½ tablespoon of the cajun spice mix.
- Mix until the vegetables are coated evenly with the spice mix. Place butter on top.
- Bake for 25 minutes.
