ORANGE GINGER CHICKEN THIGHS



Orange Ginger Chicken Thighs image

These grilled orange chicken thighs are flavourful, tangy and juicy, and easy to make in the oven or bbq. All you have to do is prepare the marinade ahead of time, and then grill.

Number Of Ingredients 12

1 can CAMPBELL'S® Condensed No Salt Added Cream of Chicken Soup
1 lb 454 g skinless, boneless chicken thigh (or drumsticks or wings)
1 tbsp 15 mL orange zest
1/2 cup 125 mL freshly squeezed orange juice
2 tbsp 30 mL soy sauce
2 tbsp 30 mL rice vinegar
2 tbsp 30 mL freshly grated ginger root
1 tbsp 15 mL minced garlic
1 tbsp 15 mL brown sugar
1 tbsp 15 mL Sriracha or other hot sauce
Toasted sesame seeds
Thinly sliced green onion

Steps:

  • In a bowl, whisk together condensed cream of chicken soup, orange zest and juice, soy sauce, rice vinegar, ginger, minced garlic cloves, brown sugar, and Sriracha until well blended.
  • Pour marinade into a resealable bag. Add chicken thighs and seal. Marinate the chicken thighs for at least 2 hours and up to 2 days to get the best flavour.
  • If cooking in the oven, preheat oven to 400F.
  • Arrange marinated and glazed chicken thighs spaced apart on a foil lined baking sheet. Cook in a high heat of 400F oven until golden and crisp, about 20 minutes, basting once with marinade.
  • For grilling on the bbq, cook on one side until golden and crisp, then do the same with the other side.

4 boneless skinless chicken breasts
4 thin slices prosciutto
4 slices mozzarella cheese
1 tablespoon olive oil
1 can cream of chicken dijon soup
3/4 cup fresh orange juice
1 tablespoon fresh sage, chopped or 1 teaspoon dried sage
1/2 cup canned mandarin orange segments, drained
salt and pepper

Steps:

  • Cut a lengthwise pocket in each chicken breast and stuff in a slice of cheesese and a slice of prosciutto Put oil in a skellet and brown the breasts on both sides.
  • Add soup, orange juice,& sage, heat to a boil.
  • cover and cook for apprs 5 minutes or until the chicken is done Add orange segments, heat through& serve.

4 (about 1 lb/500 g) skinless, boneless chicken breast halves
1 tbsp 15 mL oil
1 can (10 oz/284 ml) CAMPBELL'S® Condensed Low Fat Cream of Chicken Soup
1/2 cup 125 mL water
3 tbsp 45 mL Dijon-style mustard
1 tbsp 15 mL honey

Steps:

  • Brown 4 chicken breast halves in 1 tbsp (15 ml) hot oil, in skillet.
  • Add 1 can of soup mixed with 1/2 cup (125 ml) water, 3 tbsp (45 ml) Dijon-style mustard and 1 tbsp (15 ml) honey. Cover and simmer until chicken is cooked through.
