CANDY BAR FUDGE
This fudge was included in my Christmas treats that I took to the teachers at school. It was the first to be gone, and I had lots of requests for the recipe!

Steps:
- Grease an 8x8 inch square baking pan.
- In a microwave-safe bowl, combine butter, cocoa powder, brown sugar and milk. Microwave until mixture boils. Stir in confectioners' sugar and vanilla extract. Pour into prepared pan.
- In a microwave-safe bowl, microwave caramels and water until caramels melt. Stir in peanuts. Spread mixture over chocolate layer.
- In a small microwave-safe bowl, combine semisweet and milk chocolate chips; microwave until melted. Spread over caramel layer. Chill for 2 hours, or until firm.

- In a microwave-safe bowl, combine the butter, cocoa, brown sugar and milk. Microwave on high until mixture boils, about 2 minutes. Stir in confectioners' sugar and vanilla. Pour into a greased 8-in. square dish. , In another microwave-safe bowl, heat caramels and water on high until melted, about 75 seconds. Stir in peanuts; spread over chocolate layer. Microwave chocolate chips on high until melted, about 30 seconds; spread over caramel layer. Chill until firm.

CHOCOLATE CANDY PIE
This versatile pie can morph to fit many moods. Freeze it for an icy delight, or just refrigerate instead if you're looking for something a little softer (or you run out of time). Or leave out the candy all together for something a little less rich. You decide.

- Whisk together the cocoa powder, cornstarch, sugar and salt in a medium saucepan. Gradually whisk in the milk in a slow stream. Whisk in the egg yolks.
- Place the mixture over medium heat and cook, whisking constantly, until it just begins to boil, 6 to 7 minutes. Reduce the heat to low and cook, whisking, until thick, about 1 minute. Remove from the heat and transfer to a large bowl. Whisk in the butter and vanilla. Cover with plastic wrap, pressing directly onto the surface of the pudding to prevent a skin from forming. Cool to room temperature, about 1 hour.
- Fold the chopped candy into the pudding. Whip 3/4 cup of the cream with an electric mixer just until stiff peaks form. Fold a third of the whipped cream into the pudding to lighten it, and then fold in the other two-thirds until no streaks remain. Transfer to the pie crust and freeze until firm but not frozen solid, about 3 hours.
- Whip the remaining 1/2 cup cream just until soft peaks form. Spread over the pie and garnish decoratively with sliced or chopped candy.

- Cut candy bars in half lengthwise, then into 1/4 inch pieces. Place candy pieces over bottom of pie crust.
- In a small bowl, combine sugar and cream cheese; beat until smooth. Add eggs one at a time, beating well after each addition. Add sour cream and peanut butter; beat until mixture is smooth. Pour filling over candy pieces.
- Bake at 325 degrees F (165 degrees C) for 30 to 40 minutes.
- In a small saucepan, heat whipping cream until very warm. Remove from heat, and stir in chocolate chips until smooth. Spread over top of pie. Refrigerate 2 to 3 hours before serving.

- Mix together the chocolate crumbs and the butter and pat onto the bottom of a 13X9X2 inch pan.
- Place in freezer to firm up while preparing filling.
- Remove Heath Bars from refrigerator and crush into smallish pieces.
- Soften ice cream and mix with the crushed candy bars.
- Carefully spread the ice cream over the crumb crust, cover with foil and freeze overnight.
- Sauce: In a double boiler, melt chocolate chips and butter, stirring often.
- Add sugar and evaporated milk and cook until thickened,stirring, about 8 minutes.
- Remove from heat and add vanilla.

- Combine fudge sauce and chocolate chips in small bow. Microwave on high until hot, about 45 seconds. Stir until smooth. Reserve 1/4 cup of the chocolate mixture.
