- Whisk soy sauce, vinegar, and cornstarch together in a small bowl.
- Heat 1 tablespoon oil in a wok over medium-high heat. Cook and stir tenderloin strips in hot oil until just browned, 2 to 4 minutes. Transfer pork to a plate and return wok to heat.
- Heat remaining oil in the same skillet over medium-high heat. Cook and stir red chile pepper and garlic in hot oil until sizzling, 15 to 30 seconds. Add onion and green pepper to skillet; cook and stir until onion starts to soften, 2 to 3 minutes. Stir chopped bok choy stalks into onion mixture; cook and stir until stems begin to soften, about 3 minutes.
- Stir broccoli into bok choy mixture; cook and stir until slightly softened, about 2 minutes. Add pork, chopped bok choy leaves, and soy sauce mixture; cook and stir until well-combined. Season pork mixture with ginger; cook and stir until bok choy starts to wilt and broccoli is tender, 5 to 7 minutes.

- In a large shallow bowl, combine the first 10 ingredients and, if desired, red food coloring. Cut pork roast lengthwise in half. Add pork; turn to coat. Cover and refrigerate at least 24 hours., Transfer pork and marinade to a 5-qt. slow cooker. Cook, covered, on low 3-4 hours or until a thermometer inserted in roast reads 145° and meat is tender. - Combine stem lettuce and pinch of salt in another bowl.
- Combine water and cornstarch in a small bowl; stir into a smooth paste.
- Transfer half of the cornstarch paste into a larger bowl. Add pork, rice wine, and 1/4 teaspoon salt. Mix well and let marinate, about 5 minutes.
- Whisk remaining cornstarch paste, chicken stock, soy sauce, black vinegar, and sugar in another bowl to make sauce.
- Heat oil in a wok or large skillet over high heat. Add pork with marinade; cook and stir until browned, 3 to 4 minutes. TOFU AND PORK STIR-FRY

- Cook the tofu: Heat a large heavy-bottomed skillet or wok over high heat. Add 3 tablespoons oil. When the oil begins to smoke, remove the skillet from the heat and quickly (and carefully!) add the tofu in a single layer. Return the skillet to high heat and cook, stirring from time to time, until the tofu is lightly browned, 2 to 3 minutes. Carefully remove the tofu to a plate. Add the coriander seeds and toast for 15 seconds. Add the ground pork in a single layer, then sprinkle with salt and the red pepper flakes and brown over medium-high heat until cooked through, 3 to 5 minutes. Remove from the heat and add the pork to the tofu.
- Cook the vegetables: Return the skillet to the heat and add the remaining tablespoon oil. Stir in the garlic and scallions and cook over medium heat for about 1 minute. Add the snow peas and peppers and cook until they become tender, 2 to 3 minutes. Stir in the soy sauce, honey, ginger and lemon zest and juice. Simmer for an additional minute. Taste for seasoning.
- Finish: Add the pork and tofu back to the skillet and gently stir to reheat and combine, 1 to 2 minutes. Transfer to a platter and add the vinegar and additional soy sauce to taste.
CANTONESE PORK STIR-FRY

PORK STIR-FRY WITH GINGER- QUICK AND EASY CANTONESE RECIPE
Pork stir-fry with ginger and spring onion is one dish that is regularly included in my dinner rotation, not only because it is tasty but also one of my quick and easy dinner recipes. The pork recipe is an extension of the more popular variation, beef stir-fry with ginger and spring onion.

- Slice the pork thinly by following the grain into thin slices. Marinate with ingredients A for at least fifteen minutes.
- Cut the spring onions into one-inch sections.
- Slice the ginger thinly with a sharp knife.
- Bash the garlic cloves and then coarsely chop.
- Add some peanut oil to the wok and bring it to medium heat.
- Then, saute the coarsely chopped garlic, followed by the thinly sliced ginger and spring onions until aromatic, then remove from the wok.
- Add more oil to the wok and pour in the marinated sliced pork, followed by quick flips and stirs to avoid them from sticking. Continue stir-frying the pork until cooked and both sides start to turn light brown.
- Return the sauteed garlic, ginger, and spring onion to the wok.
- Season with ingredients C except for the cornstarch. Mix well.
- Add the cornstarch slurry to thicken the sauce.
- Dish out and serve with cooked rice or noodles.

- Fill a saucecpan with water and bring to a boil.
- Add the pork and boil until it changes color.
- Drain the pork and pat dry.
- Set aside.
- Mix together the salt, pepper, 5 spice powder, sherry, egg and cornstarch.
- Add the pork and toss to coat well.
- Heat the oil to 350 degrees.
- Deep fry the pork until brown.
- Drain.
- Heat 2 T of oil in a Wok over high heat.
- Add the garlic, onion, peppers and stir fry for 2 minutes, stirring constantly.
- Reduce the heat to medium high and stir in the pineapple juice, vinegar, sugar and ketchup.
- Cook, stirring until thick.
- Add the pineapple and stir to heated through.
- Add the pork and serve hot with pineapple wedges for garnish.

SINGAPORE PORK AND ONION STIR-FRY (CHINESE)
A recipe from my mum, tweaked by me. I love this marinade - you can use it for chicken, and bee hoon (rice vermicelli). For the bee hoon, just prepare the pork first, then add in chopped veggies (cabbage, carrots). After soaking your bee hoon in hot water for 10 minutes, throw the lot in and fry. Add more oyster sauce (till the noodles are a light brown) and you're good to go! ***If you find the marinade too salty, just decrease all the sauce amounts. Proportions: [light soya sauce = oyster sauce] and [dark soya sauce = 2 x light soya sauce]

- Slice onions. Set aside.
- Slice pork against the grain into thin, matchbox-sized pieces.
- Place in large bowl. Marinate with sauces, sugar and sesame oil.
- Mix well. Leave for 15-60 minutes to marinate.

CANTONESE PORK AND NOODLE STIR-FRY

- Cook noodles according to package instructions until barely tender drain and toss with 1 tablespoonoil. Set aside. Slice meat into thin strips and set aside. Prepare mushrooms. Heat 2 tablespoons oil in heavy skillet or Chinese wok add garlic, ginger, onions, celery, peppers, carrot, and bamboo shoots. Sprinkle lightly with salt and pepper stir-fry over high heat 3 to 4 minutes. Mix cornstarch, soy sauce, sugar, and sherry add to vegetables and stir-fry for 3 minutes. Stir in shrimp to heat through. Remove all with slotted spoon and keep warm. Add remaining 2 tablespoons oil to skillet stir in noodles and gently turn over until heated through. Mound noodle mixture in heated bowl. Return meat and vegetables to skillet or wok and stir-fry until very hot. Serve from wok or skillet.
