THAI SWEET POTATO AND LEEK SOUP
This is a quick, easy and heart warming soup; simple to make. Makes a warm, thick creamy soup in 22 minutes.

Steps:
- Put chopped onion into a pot and stir until soft.
- Add the chopped red chili (with or without seed).
- Add 2 chopped leeks.
- Add chopped garlic.
- Fill with vegetable stock.
- Bring to the boil.
- Add the chopped sweet potatoes.
- Salt/pepper to taste.
- Simmer for 20 minutes.
- Take off the heat.
- Add coconut cream or milk.
- Blend until smooth.
- Enjoy with chunky fresh bread.

LEEK & SWEET POTATO SOUP
Simple & easy to make soup with basic ingredients

Steps:
- Saute the leeks for 4 minutes in the butter. Add the stock and sweet potato and bring to the boil. Simmer for 15 minutes, or until the sweet potato is cooked.
- Season the mixture with black pepper, remove from the heat and allow to cool.
- Place the cooled soup into a food processor, and liquidise until smooth.
- Return the soup to the pan and bring back to the boil, adding any extra water as necessary to thin the soup to the required consistency.
- If desired, grill the bacon until crispy, and cut into bite sized pieces.
- Place the soup into the serving bowls and sprinkle the bacon pieces over the top.

Steps:
- Combine chicken stock, sweet potatoes, ham, celery, and onion in a stockpot; bring to a boil. Reduce heat to medium and cook until sweet potatoes are tender, 10 to 15 minutes. Stir green bell pepper, carrot, corn, garlic, basil, parsley flakes, black pepper, and salt into soup and simmer until vegetables are softened, 5 to 10 minutes.
- Melt butter in a saucepan over medium-low heat; whisk flour into butter using a fork. Cook and stir mixture until thickened, about 1 minute. Slowly stir milk into butter-flour mixture until completely smooth; continue cooking and stirring over medium-low heat until thickened, 4 to 5 more minutes. Stir Cheddar cheese into milk mixture until melted and smooth.
- Stir milk-Cheddar cheese mixture into soup; cook until thickened and heated through, about 5 minutes.

- Bring chicken broth to a boil in a large Dutch oven. Add Yukon gold and sweet potatoes, bring back to a boil, and turn heat to medium-low. Simmer until tender, 10 to 20 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Add ham; cook and stir for 2 minutes. Add leeks; cook and stir until leeks are soft, about 5-10 minutes. Do not allow the leeks to brown.
- Stir leek and ham mixture into potatoes and broth. Add half-and-half; season to taste with salt and ground black pepper.

Steps:
- Heat oil in large saucepan. Add leek and potatoes. Cook for 2 minutes.
- Add combined vegetable stock powder and water to pan and bring to the boil. Reduce heat and simmer for 20 minutes.
- Place mixtrure in food processor, and process until smooth.
- Return soup to pan and bring to the boil. Stir in evaporated milk and add ham. Simmer for 1 minute. Season with freshly ground black pepper. Stir in parsley before serving.

Place a clean towel over opening in blender lid (to avoid splatters). Process until smooth. Pour puree into a large bowl. Repeat procedure with remaining mixture. Return pureed mixture to pan. Stir in 3/4 cup reserved ham. Ladle soup into bowls; top servings evenly with 1/4 cup reserved ham. Garnish with sliced leek and onions, if desired.
