1 lb frozen broccoli (Or about 2 medium bunches fresh broccoli, trimmed and chopped)
1 medium onion, diced
1 garlic clove, minced
1 (4 1/2 ounce) jar sliced mushrooms, drained
1 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/4 teaspoon red pepper flakes
1/4 teaspoon ground pepper
1 (10 1/2 ounce) can Healthy Request cream of celery soup
3 ounces fat-free cheddar cheese, shredded (3/4 cup)
1/2 cup light mayonnaise
1/2 cup fat-free mayonnaise
1/2 cup egg substitute
1 1/2 ounces French-fried onions, divided (half a small can)

Steps:

  • Preheat oven to 350 degrees and spray casserole dish with cooking spray.
  • Steam broccoli until crisp-tender, then place in prepared casserole dish when finished.
  • While broccoli is steaming. Spray skillet with cooking spray. Over medium-high heat add onion and saute until translucent.
  • Add garlic and saute for additional 30 seconds.
  • Add the next 9 ingredients (through fat-free mayonnaise) and cook until warm and bubbly. Remove from heat and stir in egg beaters. Pour mixture over broccoli.
  • Bake for 15 minutes, then add French-fried onions and bake an additional 10 minutes.

1/2 pound sliced fresh mushrooms
3 cups chopped fresh broccoli
1 small onion, chopped
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
3/4 cup shredded Swiss cheese
1/2 cup reduced-fat mayonnaise
2 large egg whites
1 large egg
1 teaspoon ground mustard
1/4 teaspoon pepper
1-1/4 cups shredded reduced-fat cheddar cheese, divided
1 cup crushed baked potato chips

Steps:

  • In a large saucepan, combine the water, mushrooms, broccoli and onion. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes or until vegetables are crisp-tender., Meanwhile, in a large bowl, combine the soup, Swiss cheese, mayonnaise, egg whites, egg, mustard, pepper and 3/4 cup cheddar cheese. Drain vegetables; stir into soup mixture. , Transfer to an 11x7-in. baking dish coated with cooking spray. Sprinkle with potato chips and remaining cheddar cheese. Bake, uncovered, at 350° for 35-40 minutes or until a thermometer reads 160°.

Florets from 2 heads of broccoli
1 Tbs plus 2 tsp extra-virgin olive oil
1 medium yellow onion, cut in half and thinly sliced
sea salt
4 oz sliced shiitake mushroom caps
10 oz sliced white button mushrooms
¼ cup hemp seeds
¼ tsp dried hot red pepper flakes
1 can of full-fat coconut milk (use all of the solid cream on the top and ¼ cup of the liquid

Steps:

  • Preheat the oven to 350 degrees Convection setting or 400 degrees regular bake setting.
  • Bring a large pot of salted water to a boil.
  • Add the broccoli to the water for 1 minute. Drain.
  • Heat 1 Tbs of the olive oil in a medium skillet. Add the onions and saute them, over medium-low heat, stirring occasionally, until they begin to caramelize, about 25 minutes.
  • In a large bowl, combine the blanched broccoli, all of the mushrooms, the caramelized onion, hemp seeds, and hot red pepper flakes.
  • Grease a large baking dish with about 2-tsp olive oil.
  • Pour the broccoli mixture into the baking dish.
  • Stir the coconut cream together with ¼ cup of the coconut liquid and pour this mixture evenly over the broccoli mixture.
  • Bake about 15 minutes, or until hot and bubbly.

3 (10 ounce) bags frozen broccoli florets
2 tablespoons olive oil
8 tablespoons unsalted butter, divided
8 ounces white mushrooms, thinly sliced
1 1/2 cups panko breadcrumbs
2 teaspoons dried sage
salt & pepper, to taste
3 garlic cloves, finely chopped
1 yellow onion, finely chopped
3 tablespoons flour
2 cups milk
2 teaspoons mustard powder
1/4 teaspoon nutmeg
3 ounces cream cheese, softened
2 cups shredded cheddar cheese, divided
1/2 cup mayonnaise (I use the light kind- works fine)
2 eggs, lightly beaten

Steps:

  • Cook the broccoli according to your package's directions (I usually just microwave it in a bowl with a few tablespoons of water until it's done). Drain and transfer to a 9" x 13" baking dish and set aside.
  • Heat oil and 2 tablespoons butter in a 10" skillet over medium-high heat. Add mushrooms, and cook, stirring, until browned, about 5 minutes; transfer to a bowl and set aside.
  • Add 3 tablespoons butter to skillet and melt. Remove from heat add bread crumbs and sage; season with salt and pepper and set aside.
  • Heat remaining butter in a 2-qt. saucepan over medium-high heat. Add garlic and onion, and cook until soft, about 4 minutes. Add flour, and cook, stirring, for 2 minutes. Add milk, mustard, and nutmeg, and bring to a boil. Reduce heat to medium and cook, stirring often, until sauce is slightly thickened, about 3 minutes. Remove from heat and stir in cream cheese, 1 cup cheddar, mayonnaise, and eggs until smooth; season with salt and pepper and set sauce aside.
  • Heat broiler to high. Pour sauce evenly over the top of the broccoli; sprinkle with mushrooms, bread crumbs and remaining cheddar. Broil until cheese is melted and lightly browned, about 2 minutes.

1/2 pound shiitake or baby bella mushrooms, sliced
1/4 cup onions, chopped
2 cloves garlic, finely chopped
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 1/2 cups heavy cream
1/2 cup chicken stock
1 (10-ounce) box frozen chopped broccoli, thawed and drained
2 cups shredded Cheddar-Monterey blend
3 cups cooked rice
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 tablespoons butter
12 button mushrooms, brushed off with damp towel and chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup whole milk or cream
1/8 teaspoon nutmeg, freshly grated or ground
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 shallot, thinly sliced
2 portobello mushroom caps, halved and thinly sliced
1/2 pound fresh mixed wild mushrooms, shitakes, oyster, woodear, your pick, stems trimmed and caps thinly sliced
1 tablespoon fresh thyme, 4 sprigs, finely chopped
Salt and pepper
1/3 cup dry white wine, eyeball it or, more stock
1 pound extra-wide egg noodles
Butter
3/4 pound Gruyere or Swiss Emmentaler cheese, shredded
3 tablespoons chives, 12 to 15 blades, chopped

Steps:

  • Bring a large pot of water to a boil for the egg noodles.
  • Heat a medium sauce pot over medium heat. Add extra-virgin olive oil, 1 turn of the pan, about 1 tablespoon, and 2 tablespoons butter. When butter melts, add in chopped button mushrooms and cook 5 minutes, until just tender. Sprinkle in a couple of tablespoons flour and cook 1 minute. Whisk in chicken stock and bring to a bubble then stir in the whole milk or cream. Reduce heat to low and gently simmer. Season the sauce with nutmeg, salt and pepper.
  • Heat a nonstick skillet over medium-high heat. Add 2 tablespoons extra-virgin olive oil, 2 turns of the pan then the shallots and mushrooms. Cook the mushrooms 8 minutes, until tender. Season with thyme, salt and pepper and deglaze the pan with 1/3 cup dry white wine or a little stock. Reduce heat to medium low and let the liquid cook off.
  • Preheat broiler to high.
  • While the mushrooms cook, drop egg noodles in water, salt the water and cook noodles to al dente, with a bite to them. Drain noodles and return to hot pot. Add the sauce to the pot and toss noodles to coat in sauce.
  • Lightly cover a flameproof casserole dish with softened butter then transfer cream of mushroom noodles to the casserole dish and top with wild mushroom ragout and the shredded cheese. Place the casserole under the broiler and melt and bubble the cheese until brown at edges. Garnish with chives.

2 tablespoons butter
¼ teaspoon salt

2 cups milk
1 (8 ounce) package cream cheese, cubed
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 4 to 6 minutes; drain.
  • Melt butter in a large saucepan over medium heat. Stir in salt, flour, and milk. Cook, stirring constantly, until thick and bubbly. Stir in cream cheese until melted. Remove from heat, and stir in broccoli.
