2 tablespoons butter
1 garlic clove, chopped
1/2 cup quick-cooking hominy grits (3 ounces)
3/4 cup whipping cream
1/2 cup diced drained sun-dried tomato packed in oil (2 1/2 ounces)
1 teaspoon chopped fresh thyme
1 cup crumbled soft fresh goat cheese (about 4 ounces)
salt
pepper
chopped fresh chives (optional)

Steps:

  • Preheat oven to 350°F
  • Generously butter 8x8x2-inch glass baking dish.
  • Bring broth, 2 tablespoons butter, and garlic to boil in heavy medium saucepan.
  • Gradually whisk in grits and return mixture to boil, whisking occasionally.
  • Reduce heat to medium-low, cover, and simmer until grits are thick and almost all broth is absorbed, whisking frequently, about 8 minutes.
  • Whisk in 1/2 cup cream and simmer 5 minutes, whisking occasionally.
  • Whisk in remaining 1/4 cup cream and simmer until very thick, stirring often, about 5 minutes longer.
  • Stir in tomatoes and thyme.
  • Season to taste with salt and pepper.
  • Pour into prepared dish.
  • Sprinkle goat cheese over.
  • Bake until cheese softens, about 15 minutes.
  • Garnish with chives, if desired, and serve immediately.

This weeknight dinner is the perfect homey and rustic dish. Quick-cooking grits become extra flavorful because they are simmered in vegetable stock and get a creamy bite from the combination of milk and sharp Cheddar that's stirred in once the grits are tender. Using both collard greens and Swiss chard lends more interesting and varied tastes and textures. Because the leaves are cooked just until wilted, apple cider vinegar is added at the end to help balance out any bitterness. A little hot sauce splashed on just before serving helps tie the entire dish together, awakening the flavors in both the greens and grits.

2 cups vegetable stock
1 cup quick-cooking grits
1/4 teaspoon ground black pepper
1/2 cup whole milk
1/2 cup shredded sharp Cheddar (3 ounces)
Salt
2 tablespoons extra-virgin olive oil
1 shallot, minced
2 garlic cloves, sliced
Pinch of red-pepper flakes
1 bunch collard greens (12 ½ ounces), stems removed, leaves cut into 1-inch pieces
1 bunch Swiss chard (10 ounces), leaves and stems cut into 1-inch pieces
Salt and black pepper
1 cup vegetable stock
2 tablespoons apple cider vinegar
Hot sauce, to serve

Steps:

  • Make the grits: In a medium saucepan, heat the vegetable stock and 2 cups water over medium-high until boiling. Once boiling, slowly pour in the grits while whisking to reduce lumps. Once the grits come to a boil, reduce the heat to maintain a simmer and cook, whisking frequently, until thickened, 5 to 8 minutes.
  • Remove the pan from the stove. Season the grits with the pepper, then stir in the milk and cheese until the cheese melts. Season to taste with salt. Set aside and cover to keep warm.
  • Meanwhile, make the greens: Heat the oil in a large Dutch oven or heavy-bottomed pot over medium-high. Add the shallot and garlic, and cook, stirring often, until softened, 2 to 3 minutes. Add the red-pepper flakes, collards and chard. Toss to combine until wilted, 3 to 5 minutes. Season with salt, add the vegetable stock and bring to a simmer.
  • Reduce the heat to maintain a simmer, and cook, stirring occasionally, until the greens are very tender, 10 to 15 minutes. Stir in the vinegar, and season again to taste with salt and pepper. Divide the grits among plates and top with the greens and a dash of hot sauce.

¼ cup butter

  • Spray a skillet with cooking spray. Add corn kernels and cook over medium heat until browned, about 5 minutes.

The grits, a.k.a. shorts, brokens, or middlins, are a by-product of milling Carolina Gold rice, the fragile long-grain rice that's been cultivated in the Low Country for centuries. The broken pieces of rice take on a creamy, risotto-like texture when boiled, making them the perfect canvas for a rich sauce. "I'm really taken with them," Christensen says. "I like keeping them really simple and velvety, where you get the nuttiness and natural sweetness of the rice." Read how to make your own rice grits below. 1 cup finely grated parmesan cheese (I think you could make a reasonable substitution-asiago, fontina, romano, etc.)
1/4 cup unsalted butter (*real* butter!)
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil

fresh herb (I minced fresh basil and Italian flat leaf parsley together)

  • HOW TO MAKE YOUR OWN RICE GRITS: Although you can order Carolina Gold Rice Grits online you can also make your own. "To do so, freeze your favorite good-quality long-grain rice (I bought organic standard long grain white rice) for 30 minutes to make it brittle. Then, working in batches, grind it a few times in a spice mill until the grains are very coarsely ground into rough, uneven pieces about a third of the original grain's size. Transfer the mixture to a medium strainer set over a bowl to sift out the "dust," then use the remaining pieces in any recipe that calls for rice grits." CG says ^^this step was easier said than done. My version was much easier: after removing the rice from the freezer I ground the rice to the same consistency as regular (corn) grits that they were virtually identical in appearance except for those little black specks in corn grits. If you don't know what traditional grits look like, go to Google and search for an image to guide you. I skipped the strainer part, too. (Uh, CG -- I must ask -- Isn't this in essence Cream of Rice™? Yes, but it's glorified Cream of Rice™, I answer!).
  • Mix tomatoes and shallot in a small bowl. Season with salt and pepper to taste; set aside.
  • Bring 12 cups water to a boil in a large saucepan.
  • Stir in grits and season with salt. Reduce heat to medium; simmer grits until almost tender, about 15 minutes.
  • Drain, reserving 2 cups cooking liquid; return liquid and grits to saucepan. Another Note: because of the manner in which I ground the rice there was no liquid left to drain. I cooked the rice as indicated in Step # above, then another 5-6 minutes as directed in the following Step.
  • Stir over medium heat until creamy, 5-6 minutes.
  • Add cheese and butter; stir to melt. Stir in lemon juice; season with salt and pepper.
  • Transfer to a large wide bowl, forming a well in center.
  • Stir olive oil into tomato mixture; pour into well.

6 slices bacon
1 medium red onion, chopped
8 cups chicken broth, divided
2 cups half-and-half
2 cups regular grits
1 (12 ounce) package chopped turnip greens
2 cups shredded Monterey Jack cheese
1 cup grated Parmesan cheese
1 cup salted butter, cubed
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve some grease in the skillet. Let bacon cool enough to handle, about 5 minutes; chop and set aside.
  • Heat reserved grease in the skillet over medium heat. Add onion and saute until golden, 7 to 10 minutes. Set aside.
  • Combine 6 cups chicken broth and half-and-half in a large pot; bring to a boil. Stir in grits, return to a boil, and cover. Reduce heat to a simmer and cook, stirring often, until grits are tender, 25 to 30 minutes.
  • While grits are cooking, bring remaining 2 cups chicken broth to a boil in another pot. Add greens, reduce heat, and cook until tender, about 10 minutes. Drain and squeeze out all liquid.
  • Stir bacon, onions, Monterey Jack and Parmesan cheeses, butter, salt, and pepper into grits. When butter is melted, stir in greens. Transfer mixture to a 9x13-inch baking dish.
  • Bake in the preheated oven until starting to brown on top, about 15 minutes.

This shrimp and tomato recipe makes a hearty lunch or supper, offering a piquant alternative to grits served with gravy, eggs, and bacon, the traditional breakfast fare.

3 tablespoons butter
2 teaspoons salt, plus more to taste
1 cup grits
1 medium onion, coarsely chopped
3 cloves garlic, finely chopped
1/4 cup white wine
4 bay leaves
1 can (28 ounces) whole tomatoes, seeded and coarsely chopped, juices reserved
Pinch of cayenne pepper
16 large shrimp, shells removed
Freshly ground black pepper
1/4 cup heavy cream
2 tablespoons freshly grated Parmigiano-Reggiano cheese, plus a bit more shaved for garnish
1/4 cup loosely packed fresh herbs, such as parsley, oregano, and thyme coarsely chopped

Steps:

  • For the grits: Heat 2 cups water, milk, 1 tablespoon butter, and salt to a gentle boil in a medium saucepan. Sprinkle in the grits. Reduce the heat to simmer, and cook, stirring often with a wooden spoon, until the mixture is smooth, thick, and falls easily from a spoon, 15 to 20 minutes.
  • Meanwhile, prepare tomatoes: Add 1 tablespoon butter to the skillet. Saute onion and garlic until soft and translucent, 2 to 3 minutes. Pour in white wine, and cook until dry, 2 to 3 minutes. Add bay leaves, and stir in tomatoes and reserved juice. Season with cayenne pepper. Reduce the heat, and simmer until slightly thickened and the tomatoes have broken down, about 10 minutes.
  • For the shrimp: Heat the remaining tablespoon butter in a large skillet over medium-high heat to sizzling. Add shrimp, season with salt and black pepper, and saute to sear on both sides, about 2 minutes per side.
  • When grits are thickened, stir in heavy cream and grated Parmigiano-Reggiano cheese. Keep covered with a tight-fitting lid until ready to serve. When tomatoes are ready, remove the skillet from the heat, and stir in the chopped herbs. Cover, and keep warm until shrimp are cooked.
  • To serve, put a heaping spoonful of grits onto a soup plate. Top with the tomatoes, and arrange the shrimp around the plate. Garnish with freshly shaved Parmigiano-Reggiano cheese.
