Steps:

  • Into an old fashioned glass over ice cubes, pour vodka and cranberry juice. Squeeze lime wedge into drink, and then drop the wedge into the drink. Serve.

2 cups flour
1 cup powdered sugar
1/4 cup brown sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 drops butter pecan flavoring, I didn't have it (optional)
3/4 cup butter
1 cup chopped pecans or 1 cup walnuts
2 cups frozen cranberries
1 1/2 cups peeled peeled cored and chopped apples
1 cup raspberries
1/2 cup sugar
2 tablespoons flour
2 tablespoons melted butter
powdered sugar, for dusting

Steps:

  • Preheat oven to 350. Lightly grease a 9 X 13 or 11 X 11 pan.
  • For crust, in a medium bowl, whisk together flour, sugars, and salt. Add the flavorings, then use your fingers, a pastry blender, or a mixer to cut in the butter, mixing until everything is crumbly. Stir in the nuts. Set aside about 1 1/2 cups of crumbs, then press the remaining crumbs into the bottom of the prepared pan. Bake the crust for 15 minutes.
  • To make the filling, in a food processor, combine the cranberries, apples, raspberries and sugar and pulse a few times to chop the cranberries. Add the flour and melted butter, pulsing briefly to combine.
  • Spread the filling over the crust. Crumble the reserved crust mixture over the filling. Bake for 35 to 40 minutes, until the mixture bubbles and the crumbs on top are golden. Remove from oven and cool completely. Dust with powdered sugar and cut into bars.

These cocktail meatballs are perfect for a Christmas, New Year's Eve, or any party that you want to impress. They are the first appetizer to go, and everyone wants the recipe. The recipe originated in Cape Cod (cranberry country). Bon appetit!

2 pounds ground beef
1 cup bread crumbs
¼ cup chopped fresh parsley
2 eggs
2 tablespoons grated onion
2 tablespoons soy sauce
¼ teaspoon garlic powder
1 (16 ounce) can jellied cranberry sauce (such as Ocean Spray®)
1 ½ cups ketchup
2 ½ tablespoons packed brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ground beef, bread crumbs, parsley, eggs, grated onion, soy sauce, and garlic powder in a bowl until thoroughly combined. Pinch off about 2 teaspoons of meat mixture per meatball and roll into small meatballs. Arrange meatballs in a large, deep baking dish.
  • Bake in the preheated oven until meatballs are browned, about 25 minutes. Drain excess grease.
  • Combine jellied cranberry sauce, ketchup, brown sugar, and lemon juice in a saucepan and place over medium heat. Stir the sauce until cranberry sauce has melted and brown sugar has dissolved.
  • Pour the sauce over meatballs and bake until sauce forms a glaze and meatballs are no longer pink inside, 25 to 30 more minutes.

TOPPING:
1 stick butter
1 c. sugar
2 eggs
1 tsp. baking powder
1 tsp. baking soda
2 c. flour
1 c. sour cream
1 tsp. almond flavoring
1/2 tsp. salt
1 (16 oz.) can whole cranberry sauce
1 c. chopped walnuts
1/2 c. confectioners' sugar
1/2 tsp. almond flavoring
1 tbsp. warm water

Steps:

  • Cream butter; add sugar gradually and beat well. Add eggs, one at a time and beat well after each addition. Mix dry ingredients together. Add to butter mixture alternately with sour cream, beginning and ending with dry ingredients. Add almond flavoring and 1/2 cup of nuts. Grease and flour tube or bundt pan. Pour 1/2 of batter in pan. Add 1/2 can of cranberries and spread evenly over batter. Add remaining batter, then remaining sauce and sprinkle with 1/2 cup nuts. Bake in 325 degree oven for 55 minutes or until cake tests done. Cool 5 minutes and remove from pan. Mix together topping ingredients and drizzle over warm cake. Note on cranberry sauce: cranberry sauce should be removed from can and placed in a small bowl and allowed to set while mixing cake. Stir sauce well before using.
