Grilled Caprese Sandwich image

Grilled caprese sandwich stuffed with fresh mozzarella, tomatoes and basil pesto! Takes 10 minutes or less and requires just 5 simple ingredients!

2 slices sourdough bread
1-2 Tablespoons butter
1-2 Tablespoons basil pesto
1 tomato (, sliced)
2 slices mozzarella cheese (, about 1/4 inch thick)

Steps:

  • Warm a skillet or frying pan over medium-heat. Butter both sides of your bread and then grill one side.
  • Once it has lightly browned, flip bread over to brown other side. Turn the heat to low. Then spread the pesto on the grilled side and the cheese on top.
  • Allow cheese to melt a little, then place tomatoes on top of the cheese followed by the top piece of bread. Turn the heat off if browning too fast and allow sandwich to sit in the skillet until melted.

Caprese Grilled New York Strip Sandwich with Balsamic Glaze image

Pair a perfectly grilled New York Strip with ripe tomatoes and fresh basil and enjoy summer in a sandwich.

2 Aspen Ridge® Natural New York Strip steaks
Salt
Cracked black pepper
2 Ciabatta rolls
4 slices of fresh tomato
4 slices of fresh mozzarella
1/3 Cup basil, torn
Extra virgin olive oil
Balsamic glaze

Steps:

  • Preheat grill to medium-high heat.
  • Season all sides of steaks with salt and pepper.
  • Place steaks on grill and cook for 3-4 minutes.
  • Turn steaks over and grill until an internal temperature of 135°F, about 5-6 minutes.
  • Remove steaks from grill and let rest.
  • Slice steak against the grain and layer on bottom half of the ciabatta roll.
  • Layer two tomato slices, two slices of fresh mozzarella, and fresh basil on top of steak.
  • Drizzle with olive oil and balsamic glaze and add top of ciabatta roll. Enjoy!

6 tablespoons wasabi mayonnaise or plain mayonnaise
8 slices sourdough bread (1/2-inch thick), toasted
2 large heirloom tomatoes, sliced
1/2 teaspoon sea salt
1/2 teaspoon coarsely ground pepper
1/2 large sweet onion, thinly sliced
8 ounces fresh mozzarella cheese, sliced
1/2 cup fresh basil leaves

Steps:

  • Spread mayonnaise on 1 side of each slice of toast. Top half the toast slices with tomatoes, salt and pepper. Add onion, mozzarella and basil; top with remaining bread slices.

  • Preheat the oven to 400 degrees Fahrenheit. Slice the bread in half lengthwise, then stack it back together and slice it down the middle to form two large sandwiches, or again to make 4 small. Place the sliced bread on a baking sheet with the cut sides facing up. Bake for 5 minutes, or until warmed through and turning lightly golden around the edges.
  • In the meantime, prepare the creamy basil sauce*: In a food processor, blitz the roughly chopped garlic to chop it more finely. Scrape down the sides, then add the mayo, basil, salt and pepper. Blend until smooth, then set aside.
  • To assemble the sandwiches, lightly drizzle balsamic and olive oil over half of the cut sides of bread. Layer some arugula on top, then weigh it down with rounds of mozzarella. Top with the sliced tomato, then sprinkle the tomato lightly with flaky salt.
  • Spread the basil sauce generously over the cut side of the remaining slices of bread. Place them face down over the tomatoes. Enjoy.
