- In a Dutch oven or large soup kettle, cook the turkey and onions over medium heat until meat is no longer pink; drain. Add oregano and cumin; cook and stir 1 minute longer. Stir in tomatoes, broth, tomato sauce, chili powder, cocoa, bay leaves, salt and cinnamon. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add beans; heat through. Discard bay leaves.

TURKEY AND WHITE BEAN CHILI

- In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
- In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
- Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
- Combine all ingredients thoroughly.
QUICK WHITE BEAN TURKEY CHILI
My husband came home from a sales trip to the East Coast raving about white bean chili. This is our version.

- Cut turkey tenderloin lengthwise into quarters. In a skillet, cook the turkey, onion and garlic in butter until turkey is no longer pink and vegetables are crisp-tender. Remove turkey and let stand until cool enough to handle. Cut into cubes. Transfer vegetables to a saucepan. Add the turkey, broth, beans, tomatoes, salsa, parsley and cayenne. Bring to a boil. Reduce heat; simmer, uncovered, for 12-16 minutes or until slightly thickened. Top each serving with cheese or sour cream if desired.

TURKEY SAUSAGE AND WHITE BEAN CHILI
I came up with this recipe by trying to mix ingrediants together that were not only tasty and good for you but easy to make for my family after work. My husband and four year old LOVE it! I serve it with garlic and cheese Bisquick drop bisquits. I don't add any salt to this chili because the broth and sausage are salty enough.

Steps:
- Heat olive oil in large soup pot.
- Cook onions until translucent.
- Add sausage and brown well.
- Add garlic, sage, parsely and celery.
- Deglaze pot with chicken broth until all sausage pieces are scraped from bottom of pot.
- Add remaining chicken broth and simmer.
- Add 1 can of northern beans and 1 can of cannelini beans. (Strained slightly in can. Leave some of the juice.).
- Take the remaining can of cannelini beans, strained slightly and pour into bowl. Use your hands and "mash the beans." It's messy but adds a some starchy thickness to the chili.
- Add smashed beans to the pot and stir well.
- Chop just the florets of the brocolli into small pieces and add to the pot.
- Simmer until ready to serve. (About 20 minutes.)
- You can substitute chopped spinich for the brocolli and/or add cheese when serving.

A family favorite vamp of chili from Grandma Cheryl! You MUST use a large cast-iron pan, or chili will not thicken as fast or as much! Can sub chicken breast for turkey cutlets. Jalapenos and hot sausage are optional, but add the most flavor if you're not scared of a little spice!

- Preheat oven to 350 degrees F (175 degrees C).
- Wrap the sausages in foil, place them on a baking sheet, and bake for 30 minutes.
- Heat olive oil in a large cast-iron pan over medium-high heat. Cook and stir turkey in hot oil until evenly browned, about 5 minutes.
- Season turkey with 1 tablespoon cumin, 1 1/2 teaspoons garlic powder, salt, and black pepper. Add onions and garlic to the turkey; continue to cook and stir until onion is softened, 5 to 7 minutes.
- Pour in the white kidney beans and chicken broth. Season with 1 tablespoon cumin and 1 1/2 teaspoons garlic powder. Simmer over medium heat, stirring occasionally, for 30 minutes.
- Mix in the chopped jalapeno and the whole jalapeno peppers, if desired. Remove the sausages from the oven and cut them into bite-sized pieces. Stir the sausage into the chili.
- Cook the chili until the whole jalapeno peppers are tender and chili is thick, about 15 minutes more.

TURKEY CHILI
Rather than browning the meat first, which doesn't do much for lean ground turkey and can actually make it tough, this recipe prioritizes cooking down the vegetables first. Onions and canned tomatoes fried in olive oil provide an umami-rich flavor base for turkey's blank canvas, and the adobo sauce from canned chipotle peppers does a lot of this dish's heavy lifting. Optional toppings like shredded cheese and sour cream help cool down the spice. One of the best ways to enjoy this simple but powerful chili is over French fries with melted cheese, or tossed with some cooked spaghetti. It's so great on its own, as well.

- In a large pot or Dutch oven, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally with a wooden spoon, until translucent and starting to brown at the edges, 5 to 7 minutes.
- Use a fork to fish the tomatoes out of the can and add them to the pot, leaving behind the juice for now. Season with salt and cook the tomatoes, breaking them up with the wooden spoon and stirring occasionally, until jammy and their liquid has reduced significantly, 5 to 7 minutes.
- Stir in the chili powder and cook until fragrant, just a few seconds. Add the ground turkey, season with salt and stir to combine, breaking up the meat with the spoon. (Don't worry about browning or cooking it through here, as it will do so when it simmers.) Stir in the reserved liquid from the tomato can.
- Use the fork to fish out as many chipotle peppers from the can as you would like, starting with two or three, and add to the pot, breaking them up with the wooden spoon, along with all of the adobo sauce. The more peppers you use, the spicier your final chili will be; if you like spice, just add the entire can. (Store any peppers you don't use in an airtight container in the refrigerator for up to a week and in the freezer for up to 2 months.) Fill the empty chipotle can with cold tap water, swish it around and add to the pot. Stir to combine.
- Bring the chili to a simmer over medium-high heat - you should see occasional small bubbles breaking the surface of the mixture - then cover the pot and reduce the heat to continue simmering over medium-low, stirring occasionally, until the liquid has reduced and the tomatoes have broken down, about 20 minutes. The chili should look thick and shiny, but not too thick that you couldn't ladle it into a bowl. (If it's too watery, then simmer with the lid off for another 5 minutes, stirring occasionally.) Taste and add more salt if desired. Serve with cheese, sour cream and cilantro, if using.
TURKEY SAUSAGE WHITE CHILI
A long time ago I ate some Chicken White Chili...that I thought was wonderful. Since that time I have been unable to find a recipe which would match those ingredients. I needed to make something with chicken or turkey for a meeting I'm going to tonight. Because of food allergies of some of the attendees, I decided to use a Turkey sausage for more flavor and to create my own recipe since those listed here didn't contain the ingredients I wanted to use.

- Put the olive oil in a large medium hot pan and saute' the onion until soft.
- Add the mince garlic and carmelize them together being careful not to burn the garlic.
- Add the turkey sausage, salt and pepper and cook until the juices run clear.
- Add the carrots, celery, pimento, bay leaf, bens, and the 3 1/2 cup of broth to the pan.
- Simmer until the vegetables are tender.
- Mix the 1/2 cup chicken broth with the 2 Tablespoons of cornstarch and then add to the simmering soup, stirring until it thickens slightly.
- Add more salt and pepper to taste if needed.
- If the soup seems too thick add additional chicken broth.
- Bring back to the boiling stage and then serve.
- Serve along side a bottle of hot sauce for those who like more 'heat'.

- Heat the olive oil over medium heat in large pot or Dutch oven. Add the turkey sausage, breaking up with wooden spoon, stirring occasionally until cooked through, about 5 minutes. Remove from the pan with a slotted spoon and place in a bowl. Set aside.
- Add the red onion to the pan, cooking until softened, about 5 minutes, adding more oil if the pan becomes dry. Add the garlic, bell peppers, and jalapeños, and sauté for 2 minutes or until slightly softened. Add the butternut squash and spices, and sauté for 1 minute.
- Stir in the tomato paste, then add 1 3/4 cups of the chicken stock. Mix the remaining 1/4 cup chicken stock in a bowl with half of the beans, and mash. Stir this into the pot and bring the liquid to a boil. Reduce the heat and simmer on low heat until the butternut squash is tender, about 10 minutes. Add the turkey sausage and remaining beans, and simmer another 10- 15 minutes more.
- Remove from heat and stir in the chopped cilantro and lime juice. Season with salt and pepper to taste, and enjoy!
