  • Combine the creme de cacao, blood orange liqueur, vodka and blood orange juice in a shaker with ice and shake vigorously until chilled. Strain into a coupe glass and garnish with an orange peel.

3 blood oranges, juiced
2 fluid ounces vodka
½ fluid ounce orange-flavored liqueur (such as Cointreau®), or to taste
1 teaspoon orange juice, or to taste
1 lime wedge

Steps:

  • Place ice cubes in a cocktail shaker; top with blood orange juice, vodka, and orange-flavored liqueur. Cover shaker and shake; strain drink into a martini glass. Top drink with orange juice and garnish with lime wedge.

3 Cara Cara oranges, peel and pith removed from 2
1/4 cup honey
1/4 teaspoon kosher salt
2 egg whites, room temperature
1 vanilla bean, seeds scraped, or 1 teaspoon pure vanilla extract

Steps:

  • Preheat boiler. Slice peeled oranges into crosswise rounds. Zest and juice remaining orange into 2 separate small bowls and set aside. Whisk honey, salt, and egg whites in the bowl of an electric mixer set over a pot of simmering water until honey is dissolved and mixture is hot to the touch. Remove from heat and whisk in electric mixer on high speed until shiny, stiff peaks form, about 7 minutes. Add vanilla and whisk until just combined.
  • Divide meringue among 6 shallow oven-proof dishes, fashioning dollops with a spoon. Transfer dishes to a rimmed baking sheet and broil until meringue is just toasted, about 1 minute. Remove and set alongside citrus rounds, drizzling with juice and sprinkling with zest. Serve immediately.

3 Cara Cara oranges
3 blood oranges, plus juice of 1 more blood orange
4 cups mixed salad greens, such as arugula and mizuna
6 ounces ricotta salata, crumbled
1/4 cup extra-virgin olive oil
Freshly ground black pepper

Steps:

  • To peel oranges, using a sharp knife, cut a thin slice off both ends of fruit to reveal flesh and stand fruit upright. Then, following curve of fruit, cut downward to remove peel and white pith, rotating fruit as you work, until all of peel and pith is cut away.
  • Reserve peels for another use. Thinly slice oranges crosswise.
  • Arrange orange slices in a shallow serving bowl. Top with salad greens and sprinkle with ricotta salata.
  • In a small bowl, whisk together blood-orange juice and oil until blended, then drizzle over salad. Sprinkle with pepper, toss gently, and serve immediately.
