- Coat cupcake pan with non stick cooking spray. Preheat oven to 350 degrees. Cream butter and sugars together for 5-7 minutes, until light and fluffy. Add the egg and vanilla and beat until well combined. Add the dry ingredients to the wet ingredients and mix until smooth. Dough will be thick. Makes balls of about 2 tbsp of dough. Press cookie dough in bottom and about 1/3-1/2 way up the sides of each cupcake cup, forming a cup shape. Bake for 10-12 minutes. Remove from oven and allow to cool for about 5 minutes, then remove to cooling rack to finish cooling. If the centers aren't cupped enough to add filling, use the end of a wooden spoon or the bottom of a tablespoon to press the center down a bit. Make caramel sauce according to instructions. Allow to cool for 2-3 minutes, then pour into cookie cups, leaving enough space to add apples on top. I poured it into a measuring cup with a spout to make pouring easier. Set cookie cups aside to allow caramel to cool while you make the cinnamon apples. Combine apples, nutmeg, cinnamon and brown sugar in a medium pan and toss to coat. Add butter and cook apples for about 10-15 minutes, or until at preferred softness. Top cookie cups with apples. Cookie cups can be stored in the fridge or at room temperature for 2-3 days. Best served warm. After they've cooled, they can be warmed up in microwave for 5-10 seconds. CARAMEL SAUCE: Melt butter in a saucepan. Add brown sugar and heavy cream and whisk constantly over medium heat until sugar is dissolved. Bring to a boil and allow to boil for 3 minutes, no more. Remove from heat and allow to cool. Store in refrigerator.

- In medium bowl, mix flour, baking soda and salt with whisk; stir in oats. In large bowl, beat butter and brown sugar with electric mixer on medium speed until creamy. Add egg, milk and vanilla; beat 2 minutes or until light and fluffy. On low speed, beat in flour mixture until blended. Stir in apples.
- Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
- Bake 14 minutes or until golden. Remove from cookie sheets to cooling racks; cool completely.
- In 1-quart saucepan, cook caramels and water over low heat 7 minutes, stirring until smooth. Drizzle warm glaze over cookies. Let stand 15 minutes or until set. Store tightly covered up to 5 days.

- Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. - Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
- In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Stir in the rolled oats. Finally, stir in dried apple and caramel bits.
- Drop by rounded spoonfuls onto the prepared cookie sheets.

- Set a wire rack over a baking sheet and grease both with nonstick spray.
- Add the water and sugar to a medium saucepan. Cook over high heat, without stirring (so the mixture doesn't crystallize), for about 10 minutes, until the mixture begins to turn golden brown. Note: Use a larger pan than you think you need; the caramel will bubble up when you add the cream.
- Reduce the heat to low. Slowly pour in a little bit of the heavy cream. The mixture will bubble. When it begins to recede, carefully whisk to incorporate the cream. Continue adding the cream in increments, stirring to incorporate.
- Once the cream is incorporated, stir in the salt. Increase the heat to medium-high and cook for 10-12 minutes more, until the caramel reaches 250°F (120°C) on an instant read thermometer. Remove the pot from the heat and let the caramel cool for about 5 minutes. Carefully transfer to a heatproof liquid measuring cup or bowl.
- Stick a popsicle stick though the top of each apple, about ⅔ of the way through.
- Dip an apple into the caramel until completely coated. Lift the apple from the caramel and spin the stick for 20-30 seconds to remove excess caramel. Set upright on the wire rack. Repeat with the remaining apples. Refrigerate until the caramel is set, about 20 minutes.
- Melt the white chocolate chips in the microwave on medium power in 30-second increments, stirring between, until smooth.
- Dip each caramel apple into the melted white chocolate, coating about ¾ way up the sides. Immediately roll the white chocolate-covered apple in the crushed chocolate sandwich cookies and place on the prepared baking sheet.
- Let set in the refrigerator for 30 minutes. Leftover caramel apples will keep, loosely covered, in the refrigerator for 2-3 days.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch glass baking pan.
- Place condensed milk and caramels in the top of a double boiler over simmering water on low heat. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until melted, about 5 minutes.

- Heat oven to 400°F. In large bowl, beat sugar, butter and shortening with electric mixer on medium speed, or mix with spoon. Stir in vanilla and egg. Stir in flour, baking soda, salt and soft drink mix (dry).
- On lightly floured cloth-covered surface, roll dough 1/4 inch thick. Cut with 3-inch round or apple-shaped cookie cutter. On ungreased cookie sheet, place cutouts 2 inches apart. Carefully insert 1 inch of wooden stick into side of each cookie.
- Bake 6 to 8 minutes or until edges are light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.

- Spread top third of each cookie (opposite wooden stick) with caramel glaze. Hold cookie upright to allow glaze to drizzle down cookie. Sprinkle with candy sprinkles.
