HOMEMADE MINT SAUCE
Steps:
- Gather the ingredients.
- Place washed mint leaves on a cutting board and sprinkle the leaves with the sugar.
- Chop the leaves rather finely.
- Transfer the chopped mint with the sugar to a bowl.
- In a small saucepan, heat the vinegar over low heat.
- Pour the vinegar over the mint.
- Taste and add more sugar if you think the sauce is too sharp.
- Serve hot or cold with roasted lamb or other meats.

MINT SAUCE
I grew up with this in the UK, and this is how everyone made it. I would be surprised if any pub had additional ingredients. Mint has a sweetness of its own, but a little sugar would be okay, if the diner had a desire for extra sweetness - no more that 1/2 teaspoon. Cider or malt vinegar can be used for the vinegar if you prefer. This sauce is traditionally served with lamb.

Steps:
- Place the vinegar in a small non-reactive saucepan and heat to a boil. Add the sugar, stirring until it has completely dissolved, then lower the heat to medium-low and let simmer for 5 minutes.
- Meanwhile, using a mortar and pestle or a bowl and the back of a spoon, pound or mash the garlic and salt to a smooth paste. Stir in the pepper flakes and blend well. Remove the vinegar mixture from the heat and stir in the garlic paste. Let cool to room temperature. Store sealed in a glass jar in the refrigerator for up to 2 days.

- In the top half of a double boiler, combine the 2 chocolates over simmering water.
- Meanwhile in another small saucepan, heat the water to boiling and pour it over the fresh mint leaves in another bowl. Let steep while the chocolate is melting.
- Using a sieve over a bowl, strain the mint water, reserving the water. Keep the water hot.
- Stir the chocolate occasionally until melted; then whisk in the corn syrup and mint infused hot water (don't remove the double boiler from the heat). Whisk until smooth and shiny. (The sauce can be made up to 24 hours in advance and refrigerated. To rewarm, stir over low heat or heat in a microwave.)
