When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

Nonstick cooking spray
2 cups sugar
1/2 cup heavy cream
6 Granny Smith or Red Delicious apples
1 cup toasted pecans (optional), coarsely chopped

Steps:

  • Line a baking sheet with waxed paper and coat with cooking spray. In a medium saucepan, bring sugar and 1/2 cup water to a boil over high. Reduce to medium-high and simmer, undisturbed, until caramel is golden brown, 8 minutes. Remove from heat and carefully stir in cream (mixture will sputter). Transfer to a small bowl and let cool 5 minutes.
  • With a paring knife, make a small slit in top of each apple. Insert an ice-pop stick 1 inch deep into each slit. Dip apples into caramel, swirling to coat. Sprinkle with nuts (if using) and transfer to sheet.

2 small red apples, cut into total of 12 wedges
2 tablespoons orange juice
1/4 cup caramel topping
1/4 cup chopped nuts, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan).
  • Make cake as directed on box for 13x9-inch pan; cool 15 minutes. Poke holes halfway into cake every 2 inches, using handle of wooden spoon; evenly pour 3/4 cup caramel topping over holes. Cool completely, about 1 hour. Spread frosting evenly over cake.
  • Dip cut edges of apple wedges into orange juice to prevent browning; slightly pat dry. Dip uncut edges into 1/4 cup caramel topping; roll in nuts. Cover and refrigerate. Just before serving, place an apple wedge on each serving of cake. Store cake loosely covered; cover and refrigerate any remaining apple wedges.

Cooking spray
4 cups sugar
1/4 cup corn syrup
10 tablespoons unsalted butter, cut into pieces
2 cups heavy cream, at room temperature
Crushed chocolate cookies, for coating

Steps:

  • Insert a wooden stick into the stem end of each apple. Coat a baking sheet with cooking spray.
  • Make the caramel: Melt the sugar and corn syrup in a large pot over medium-high heat, stirring with a wooden spoon until combined. Don't stress if it starts to clump: It will eventually even out. Cook, swirling the pan but not stirring, until dark amber in color and a candy thermometer registers 245 degrees F, 8 to 12 minutes.
  • Add the butter all at once, stirring until incorporated. Turn down the heat to medium and pour in the heavy cream (the mixture will foam up); whisk until smooth.
  • Increase the heat to medium high and bring the caramel up to 250 degrees F, 8 to 10 minutes. Turn off the heat and let cool for 5 to 10 minutes. Dip the apples in the caramel and roll in crushed cookies; place on the baking sheet to set, 5 to 10 minutes.

6 to 8 small apples (Granny Smith work best)
1/2 cup heavy cream
2 cups sugar
1 tablespoon light corn syrup
1/4 teaspoon kosher salt
Toppings: Mini chocolate chips, chopped salted peanuts, crushed pretzels, flaky salt, and sprinkles

Steps:

  • Line a baking sheet with parchment. Wash and dry the apples well, insert a chopstick into the stem end of each one, and stand on the prepared baking sheet. Place the baking sheet and cream next to the stove.
  • Put the sugar, corn syrup and 1/2 cup water in a medium saucepan with high sides and heat over medium-high heat, stirring occasionally, until the sugar dissolves, about 5 minutes.
  • Raise the heat to high and cook without stirring until the mixture is honey colored, about 10 minutes. If you have a thermometer, it should read 330 degrees F. (If the flames reach up around the sides of the pot, keep the heat at medium high). Remove from the heat and immediately and carefully whisk in the cream (the mixture will darken as you do). Because the mixture will bubble up, use a whisk with a longer handle so the steam doesn't burn your hand.
  • Let the mixture cool for 3 1/2 minutes, then carefully dip an apple into the caramel mixture, roll in a topping and set on the prepared baking sheet; repeat with the remaining apples. If the caramel cools while dipping, reheat it briefly over low heat, swirling occasionally; do not stir.

Doesn't get much easier than this! A perfectly decadent treat for a hot summer day. Amounts are estimates, they will depend on the size of your popsicle moulds. If you don't have any moulds, you can use wooden sticks and disposable paper/plastic cups (just allow to freeze partially before inserting stick). I recommend refrigerating your caramel first so it's firmer and a little easier to work with. Freezing time is not included.

Steps:

  • Pour applesauce into your popsicle moulds until 2/3 full (keep in mind they will expand once frozen).
  • Drop some dulce de leche into the centre and lightly push down into the applesauce. If your moulds are tall and slim, drop smaller quantities and repeat a few times so there is caramel all along the pop.
