SALTED CARAMEL APPLE CINNAMON ROLLS RECIPE BY TASTY
Consider these cinnamon rolls fall-ified. We stuffed our classic cinnamon rolls with thinly sliced Granny Smith apples and drizzled them with homemade salted caramel sauce. It's ooey, gooey goodness in every bite. Enjoy for breakfast or dessert!

- Prepare the cinnamon roll dough and filling according to the recipe instructions.
- Add the apples and lemon juice to a medium microwave-safe bowl. Microwave in 20-second increments, until the apples are softened and limp.
- Preheat the oven to 350°F (180°C). Grease a 9 x 13-inch (22x33 cm) baking dish with butter.
- Roll the dough into a large rectangle about ½-inch (1.24 cm) thick. Straighten the corners with a bench scraper to make sure they are sharp and even.
- Spread the filling evenly over the dough, then arrange the apple slices on top, leaving about ¼ inch (6 mm) between each slice. Try to keep your slices in straight rows, it's okay if the tips of the apple slices touch or overlap.
- Starting from a short end, roll the dough into a log and pinch the seam closed. Place the log seam-side down and trim off the uneven ends. Using unflavored dental floss or a sharp knife, cut the log into even pieces, each about 1½ inches (3 ½ cm) thick. Place the rolls in the prepared baking dish, cover with a kitchen towel, and set in a warm place for 35-45 minutes, until expanded in volume by about 50%. If not baking immediately, skip this step, cover with plastic wrap and freeze for up to 3 months.
- Bake the cinnamon rolls for 25-30 minutes, or until golden brown. Remove from the oven and let cool for at least 10 minutes.
- While the cinnamon rolls bake, make the salted caramel sauce: Add the sugar to a small saucepan and cook over medium heat, swirling the pan occasionally but not stirring, until it starts to turn amber brown, 5-6 minutes.
- Add the butter and stir in until incorporated, 1-2 minutes..
- Slowly drizzle in the cream and whisk to combine. Boil for 1 minute, then remove from the heat and stir in the vanilla and flaky salt. Let cool and thicken slightly before using.
- Pour the salted caramel sauce over the cinnamon rolls, then serve.

- In a small bowl, combine brown sugar and cream until sugar is dissolved. Spread into a greased 8-in. square baking dish. Sprinkle with walnuts. , On a lightly floured surface, unroll breadstick dough (do not separate). Combine sugar and cinnamon; sprinkle over dough. Reroll, starting with a short end. Cut into six slices. Place cut side down in prepared pan. , Bake at 350° for 25-30 minutes or until golden brown. Cool for 1 minute before inverting onto a serving plate. Serve warm.

Remove from freezer and allow to thaw and rise; continue the baking and icing process. ** Freeze the rolls baked, but unfrosted. Thaw and warm for just a few minutes in the oven. Ice while warm. *** OR freeze the rolls completely baked and iced. Cool first, then cover with plastic wrap and foil before freezing.

- DOUGH:.
- To make the dough, combine the milk, vegetable oil and sugar in a large saucepan or small pot. Heat it until just about to boil, but don't allow it to boil. Turn off the heat and let it cool until warm (110° - 115°).
- Add 4 cups of the flour and the yeast; stir to combine. The dough will be very sticky at this point. Cover the pot and let it rise for an hour.
- Add the remaining flour, the baking soda, the baking powder and the salt. Stir to combine. Then you can proceed with the rolls OR refrigerate the dough, covered, until you need it.
- FILLING:.
- To make the filling, saute the apples in a large skillet over medium-high heat for 3 to 4 minutes. Remove them to a plate; set aside.
- In the same skillet over medium heat, add a stick of butter and a cup of brown sugar. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture and let it thicken for another 1 to 2 minutes. Spoon it into a bowl to cool.
- ROLLS:.
- When ready to make the rolls, preheat the oven to 375°. Roll out the dough on a floured surface to a rectangle about 10 x 30 inches. Spoon the caramel apples all over the dough and spread it out evenly. Roll the dough toward you into a long, tight roll. Pinch the seam when you get to the end, then turn the roll over so that it's seam side down.
- Slice the dough into rolls 1/2 inch to 3/4 inch thick and place them into disposable roil cake pans with a little melted butter spread into the bottom of each pan (the rolls will fill about 3 to 4 pans.) Set the rolls aside and let them rise for 20 to 25 minutes. Place in preheated oven and bake for 15 to 18 minutes, or until they're golden.
- ICING:.
- While the rolls are rising or baking, make the icing: Melt the butter and brown sugar in a saucepan over medium heat. Add the brown sugar and let it dissolve and start to bubble. Add the cream, then cook for 2 minutes, whisking constantly. Turn off the heat and add the powdered sugar and whisk together. Add up to 2 more cups of powdered sugar to get to the consistency you want.
- Remove the rolls from the oven and immediately frost with the icing and spread to coat all the rolls generously.
- Serve warm.

- To make the dough: In a small saucepan (or using the microwave), heat milk and butter until melted and lukewarm to the touch (110F-115F, no more).
- Place flour, sugar, and yeast in the bowl of a standing mixer and mix to combine, then stir in salt. Add egg and milk-butter mixture. Attach dough hook and mix on low speed for 3 minutes, until dough starts to come together. If dough is too sticky and looks more like batter than dough, add a bit more flour, 2 tablespoons at a time (but don’t be tempted to add a lot, the dough should be rather soft). Increase mixer speed to medium-low and mix for another 10 minutes, until dough pulls away from the sides of the bowl (it’s ok if it sticks to the bottom). Stop periodically to scrape down the sides and bottom of the bowl. Cover dough with plastic wrap and let rest in a warm place for 1.5-2 hours, until doubled in size. Alternatively, you can refrigerate the dough overnight; it will rise slowly and be ready for the next step by morning.
- Meanwhile, make the apple filling: In a medium bowl, toss together apples and lemon juice. In another bowl, mix together sugar, flour, salt, and cinnamon, then add it to the apples and toss to combine. Add vanilla, and mix again.
- In a large heavy skillet over medium heat, melt butter. Add apple mixture and cook, stirring occasionally, until the apples are tender but not mushy and coated with a caramel-like sauce, about 8 minutes. Stir in raisins and remove from heat. Transfer to a large bowl and let cool to room temperature, about 30 minutes (or, you can prepare it a day before and keep it in the fridge).
