CARAMEL POPCORN WITH MARSHMALLOW



Caramel Popcorn with Marshmallow image

Marshmallows make this caramel popcorn stay soft and grand! Leftover caramel can be refrigerated and used later if warmed in the microwave.

23 large marshmallows
2 cups brown sugar
¼ cup light corn syrup (such as Karo®)
1 cup butter
1 teaspoon vanilla extract
2 (3.5 ounce) packages microwave popcorn, popped

Steps:

  • Cook and stir the marshmallows, brown sugar, corn syrup, butter, and vanilla extract together in a pot over medium-low heat until the marshmallows are completely melted, 5 to 7 minutes.
  • Put the popcorn in a large bowl; pour the marshmallow mixture over the popcorn and gently stir with a big spoon to coat.

This dreamy recipe is perfect for family movie night (and New Year's Eve"in")! Caramel Marshmallow Popcorn Snack.

10 cups Popped Popcorn
1/2 cup Butter
1 cup Brown Sugar (packed)
2 tablespoons Corn Syrup
1 bag Marshmallows (10 ounce bag)
1 teaspoon Vanilla

Steps:

  • Prepare a baking sheet with a sheet of aluminum foil then spray the foil with non-stick cooking spray and set the baking sheet aside.
  • Pour popped popcorn into a large mixing bowl then set it aside.
  • Add butter to a large sized sauce pan and melt the butter over medium heat.
  • After the butter has melted add the brown sugar and corn syrup to the saucepan and continue to heat over medium heat while stirring the mixture until it is well combine.
  • Add marshmallows to the pan; then continue to stir all of the ingredients until the marshmallows are melted.
  • Remove the pan from the heat and add vanilla, stir until well combined then pour the mixture over the popcorn and gently stir the popcorn snack until the popcorn is covered.
  • Pour the Popcorn Snack onto your prepared baking sheet then allow the treat to cool completely.
