CARAMEL WALNUT BARS
I cut this recipe out of the Sunday coupons 5+ years ago. I make them every Christmas for gift giving.

Steps:
- Preheat oven to 350°F.
- Mix flour, sugar and egg.
- Cut in ½ cup margarine until crumbly.
- Stir in walnuts.
- Reserve 2 cups of crumb mixture.
- Press remaining crumb mixture firmly into a greased and floured 13x9 in pan.
- Bake 15 minutes.
- In a saucepan over low heat melt caramels with sweetened-condensed milk and remaining ¼ cup margarine.
- Pour over prepared crust and top with reserved crumb mixture.
- Bake 20 minutes or until bubbly.
- Cool and cut into bars.
- Store at room temperature.

PRALINE CRUMB CARAMEL CHEESECAKE BARS

- Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. Place cookie mix in bowl; cut in butter using pastry blender or fork until mixture is crumbly. Reserve 1 1/2 cups mixture for topping. Press remaining mixture in bottom of pan. Bake 10 minutes.
- Meanwhile, in large bowl, beat cream cheese, sugar, flour, 1/4 cup of the caramel topping, vanilla and egg with electric mixer on medium speed until smooth.
- Spread cream cheese mixture evenly over partially baked cookie base. Sprinkle with reserved crumb topping, pecans and toffee bits.
- Bake 35 to 40 minutes or until light golden brown. Cool 30 minutes. Refrigerate about 2 hours or until chilled. Drizzle with remaining 1/4 cup caramel topping. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

WALNUT PRALINE (CANDIED WALNUTS)
This walnut praline is a combination of walnuts and caramelised sugar, resulting in crunchy candied walnuts. Eat them whole or coated in chocolate or use them crush up for topping ice cream or dressing up cakes and cupcakes.

- Preheat the oven to 180C / 350F / 160C fan-forced. Line a large baking tray with baking paper.
- Spread the walnuts out in a single layer on the prepared baking tray and bake for 10 minutes. Set aside to cool.
- Tip the sugar into a small-medium stainless steel saucepan and give it a shake to level it out. Slowly drizzle the water all around the sugar. Let it sit for a minute to soak.
- You can do this step while the sugar is boiling in the next step. Sprinkle the baking soda over the cooled walnuts.
- Turn the heat on very low and let the sugar come to a boil without touching or moving it. Let it continue boiling until it's amber in colour. Remove from heat.
- Grab the sides of the baking paper and tip the walnuts and baking soda into the toffee. Stir it through immediately.
- Place the baking paper back on the tray, then tip the praline out onto the tray. Spread out with your spoon and let it cool completely to set.

- Combine sugar, butter, and water in medium saucepan, and cook over low heat stirring constantly.
- Remove, immediately add 1 cup chocolate chips and stir until melted.
- Beat in eggs and vanilla until well-blended.

- Preheat oven to 350 degrees. Butter a 15-by-10-inch rimmed baking sheet, and line with parchment paper, leaving a 1-inch overhang on long sides; set aside. Spread nuts on another rimmed baking sheet. Toast until nuts are fragrant and lightly golden around the edges, about 10 minutes. Transfer nuts to a clean surface; spread evenly, and let cool completely. Coarsely chop, and set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat 2 sticks of butter with the brown sugar on medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl as needed. With mixer on low speed, add flour and a pinch of salt; mix until just combined.
- Transfer dough to prepared baking sheet, and cover with parchment paper. Using a wine bottle or small rolling pin, roll along the length of pan to smooth dough. (Alternatively, press the dough into the pan with the back of a large spoon.) Bake until lightly golden, 10 to 12 minutes. Transfer to a wire rack to cool completely.
- Combine granulated sugar, cream of tartar, remaining 2 1/2 teaspoons salt, and 1 cupwater in a wide, heavy-bottom saucepan. Cook over high heat, without stirring, until some sugar begins to melt and turn golden, 5 to 7 minutes. Reduce heat to medium; continue to cook, stirring occasionally with a wooden spoon, until sugar is completely melted, mixture is deep golden, and a candy thermometer registers 300 degrees (hard-crack stage). Stirring constantly, carefully pour cream slowly down the side of the pan (it will spatter) until fully combined. Remove from heat; add remaining 1/4 stick butter and stirto combine.Transfer caramel to a heatproof bowl to cool for 10 minutes.
- Stir in nuts; spread caramel mixture over cooled crust. Bake until caramel is set, about 10 minutes. Transfer to a wire rack to cool. Cut into 3-by-2-inch bars. Bars can be kept in an airtight container at room temperature for up to 1 week.
