2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup butter
1 cup brown sugar
2 large eggs
3 medium bananas
1 tablespoon rum extract
1 cup shredded coconut
½ cup chopped dried pineapple

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare 12 muffin cups with paper liners.
  • Sift the flour, baking soda, baking powder, and salt into a bowl; set aside. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition, then beat in the bananas and rum extract. Stir in the flour mixture. Fold in the shredded coconut and pineapple; mixing just enough to evenly distribute. Evenly divide the batter among the prepared muffin cups.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

2 bananas
2 tablespoons sunflower oil
1/4 cup sugar
1/2 cup white rum
Juice from 1 lime
Vanilla ice cream, optional, for serving

Steps:

  • Gather the ingredients.
  • Peel and halve each banana lengthwise.
  • Heat the oil in a frying pan over medium heat.
  • Brown the bananas 5 minutes on each side.
  • Add the sugar and pour in the rum.
  • Cook for 2 minutes.
  • Flambé.
  • Sprinkle with lime juice and serve at once with vanilla ice cream, if desired.

4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)

Steps:

  • Preheat oven to 450 degrees F.
  • Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
  • Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
  • Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
  • Remove from oven. Sprinkle with the rum before serving.
  • Serve as-is, or with a scoop of vanilla or coconut ice cream.

1 cup sugar
1 large egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 cup banana, mashed (ripe)
1/2 cup skim milk
1 teaspoon vanilla
2 tablespoons dark rum (or 1/4 teaspoon rum extract)
1/4 cup pecans, toasted and chopped
1/4 cup sweetened flaked coconut
1/4 cup brown sugar, packed
2 teaspoons butter
2 teaspoons lime juice
2 teaspoons dark rum (or 1/8 teaspoon rum extract)
2 tablespoons pecans, toasted and chopped

Steps:

3 cups bananas chunks
3 teaspoons egg replacer, 4 tb water
1/3 cup brown sugar
3 tablespoons pineapple juice
1 cup milk soy
1 cup bread crumbs
2 tablespoons margarine soy, melted & cooked

Steps:

  • Preheat oven to 300F. Oil a 1 1/2 quart mould. Combine peels & juices with banana & set aside. Place egg replacer, sugar & pineapple juice in a food processor & pulse till blended. Add soy milk & bread crumbs & pulse a few more times. Spoon mixture over banana mixture. Add margarine, mix well & pour into prepared mould. Place mould in a large pan & pour in enough boiling water to reach halfway up the sides of the mould. Bake 1 hour 20 minutes, a knife inserted should come out clean. You may have to add more boiling water during the cooking time. Cool 20 to 30 minutes & then remove from the mould. Refrigerate 2 hours before serving.
