I feel this recipe represents our region because it contains dairy products. My husband and I farmed for almost 25 years.

Number Of Ingredients 12

2-1/2 pounds potatoes (about 9 medium), peeled and sliced
5 medium carrots, cut into 1/4-inch slices
1-1/2 cups sliced onions
2 cups boiling water
1 teaspoon salt
CHEESE SAUCE:
3 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups whole milk
1-1/2 cups shredded cheddar cheese, divided

Steps:

  • In a large Dutch oven, combine potatoes, carrots, onions, water and salt. Bring to a boil. Reduce heat; cover and cook for 10 minutes., Meanwhile, in a saucepan, melt butter. Remove from the heat; stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes. Stir in 1 cup cheese. Reduce heat; stir until cheese is melted. Drain the vegetables; layer half in a greased 13-in. x 9-in. baking dish. Top with half of the cheese sauce. Repeat layers. Sprinkle with remaining cheese. Cover and bake at 375° for 20 minutes. Uncover and bake 10 minutes longer or until potatoes are tender.

4 cups heavy cream
2 cups smooth goat cheese
1/2 cup chives, finely chopped
2 pounds Yukon Gold potatoes, finely sliced
2 large onions, thinly sliced
2 garlic cloves, minced
2 tablespoons olive oil
2 tablespoons butter, cubed
Salt and pepper

Steps:

  • Chuck Hughes' rich and creamy scalloped potatoes are easy to make and taste absolutely heavenly.
  • In a bowl, mix together the goat cheese with the cream. Season with salt and pepper. Add in the chives. Keep aside.
  • Preheat the oven to 350 degrees F. Slice the potatoes into 1/8-inch thick slices by using a mandoline or a very sharp knife. Rinse and keep in cold water.
  • In a large skillet, saute the onions with garlic for about 10 minutes in olive oil. Season with salt and pepper.
  • Drain and pat dry the potatoes. In an ovenproof dish, nicely layer the potato slices. Cover with some caramelized onions, and 1/4 of the goat cheese mixture. Repeat the layers and finish with the goat cheese mixture. Season each layer with salt and pepper. Pour the rest of the cream mixture over the potatoes and the butter. Cook in the oven for 1 hour until golden brown.

1 package Idahoan® Scalloped Homestyle Casserole
1½ cups boiling water
¾ cup milk
1½ Tbsp margarine or butter
¼ cup prepared pesto sauce
1 Tbsp sun-dried tomatoes, finely chopped
optional: ½ cup artichoke hearts, drained and chopped
½ cup Romano cheese, shredded

Steps:

  • Preheat oven to 450°F.
  • Combine potatoes and sauce mix in 1½ quart baking dish.
  • Stir in boiling water, milk, and margarine or butter with whisk.
  • Mix in pesto, tomatoes and artichoke hearts, if using.
  • Bake uncovered for 20 minutes. Top with cheese and bake 5 more minutes, or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling).
  • Remove from oven and let stand a few minutes before serving.

2 tablespoons salted butter
6 to 7 medium Yukon gold potatoes, sliced thin
1 medium onion, sliced thin
3 cloves garlic, sliced
Kosher salt and freshly ground black pepper
1 cup heavy cream
3 ounces sliced ham
2 cups shredded mild Cheddar
Sour cream, for serving
Sliced green onions, for garnish

Steps:

  • Heat the butter in a large skillet over medium heat. When the butter has melted, add the potatoes, onion and garlic. Stir and cook until the potatoes and onions begin to soften, 6 to 7 minutes. Season with a good pinch of salt and pepper. Add the cream, then bring to a low simmer and cover. Cook until the potatoes are cooked through, another 6 to 8 minutes.
  • Meanwhile, set the oven to broil and move the rack to the center.
  • Remove the lid from the skillet and sprinkle the ham over the top followed by the cheese. Place the skillet under the broiler and watch until the cheese is melted and brown, about 5 minutes.
  • Garnish with the sour cream and green onions.

I took the old Betty Crocker recipe and made some major ingredient changes. My husband said they had great taste and I think this recipe is both tastier and healthier.

6 cups sliced potatoes
3 tablespoons butter or 3 tablespoons margarine
1 cup heavy whipping cream
1 1/2 cups plain yogurt
3 teaspoons garlic and herb seasoning
1/2-1 cup chopped onion
3 tablespoons flour

Steps:

  • Preheat oven to 350°F.
  • Peel potatoes and slice. Layer in lightly greased glass baking dish.
  • Heat 3 Tbsp butter or margarine in saucepan over low heat until melted. Blend in flour and seasoning. Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat. Stir in yogurt and whipping cream. Heat to boiling for one minute, stirring constantly. Stir in onions.
  • Pour mixture over potatoes. Lightly stir the mixture and potatoes together, making sure the potato mixture is spread out evenly in baking dish.
  • Cover and cook in 350°F oven for 30 minutes. Uncover and cook until potatoes are tender, about 60-70 minutes longer. Let stand 5-10 minutes before serving.

3-1/2 teaspoons butter, divided
1 tablespoon all-purpose flour
1/4 teaspoon salt
Dash pepper
3/4 cup milk
1 cup sliced peeled potatoes
1 tablespoon finely chopped onion

Steps:

  • In a saucepan over medium heat, melt 3 teaspoons of butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Place half of the potatoes in a greased 2-cup baking dish; top with the onion and half of the sauce. Layer with remaining potatoes and sauce. Dot with remaining butter. Cover and bake at 350° for 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.

Impress guests with these deliciously creamy scalloped potatoes flavoured with garlic and parmesan. They're a great side dish for many dinners

50g unsalted butter, plus extra for the dish
1 onion, thinly sliced
2 garlic cloves, chopped
50g plain flour
500ml whole milk
250ml chicken or vegetable stock
1kg Maris Piper potatoes, thinly sliced (use a mandoline for the best results)
75g parmesan, finely grated

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and butter a deep 20 x 30cm baking dish. Melt the butter in a pan over a medium heat and cook the onion and garlic with a pinch of salt for 8-10 mins until the onion has softened slightly. Tip in the flour, stir well, then cook for a few minutes more. Mix the milk and stock together, then gradually pour this in, whisking well between additions until everything is incorporated and you have a smooth sauce. Simmer for a few minutes, then season well.
  • Lay half the sliced potatoes in a single layer in the buttered dish, slightly overlapping them if needed. Pour over half the sauce, then scatter over half the parmesan. Arrange the remaining potatoes on top, then pour over the remaining sauce and scatter with the remaining parmesan. Cover with foil and bake for 1 hr, then remove the foil and bake for another 30 mins until golden on top.

I always make these to go along with my glazed ham,it has become quite a favourite. I have passed this recipe(along with my glaze recipe) to both my mother & my sister who both now make them as well. I got it from one of those Kraft What's Cooking magazines quite a few years ago.

2 cups water
6 potatoes, thinly sliced
2 medium onions, thinly sliced
4 medium carrots, diagonally sliced
3 tablespoons margarine
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1 dash cayenne
1 1/2 cups milk
1 1/2 cups aged cheddar cheese, graded (I like cracker barrel)

Steps:

  • Heat oven to 375.
  • Bring water to a boil in a large frying pan, add potatoes, onions,& carrots.
  • Cover and cook 10 minutes.
  • or until tender, drain.
  • In a medium saucepan, melt margarine, remove from heat and stir in flour, salt, pepper& cayenne.
  • Add milk, blending well.
  • Bring to a boil over medium heat, stirring until thickened and smooth.
  • Stir in cheese, cook over low heat, stirring constantly until cheese melts.
  • In a lightly greased 9x13 inch baking dish, layer half the potato, onion& carrot mixture;Top with half of the cheese sauce.
  • Repeat.
  • (I like to sprinkle the top with some parsley.) Bake, covered for 30 minutes.
