2 pounds lard
2 1/2 pounds pork butt, trimmed and cut into 2-inch cubes
1/2 teaspoon freshly ground black pepper
1 cup Chile de Arbol Salsa, recipe follows
2 teaspoons salt
1/2 pound Italian Roma tomatoes
3/4 pound tomatillos, husked and washed
1 cup (30 to 40) Arbol chiles
1/2 bunch cilantro, leaves only, roughly chopped
1 medium white onion, chopped
2 cups water
4 garlic cloves, crushed
1 teaspoon salt

Steps:

  • In a large saucepan melt lard over moderate heat. Add pork, salt and pepper and simmer until tender. Cook about an hour, being careful not to crisp the meat. Remove pork and set aside until cool. Shred the meat by hand or with tines of a fork. Remove and discard any remaining fat. Transfer to a medium saucepan, add the Arbol salsa and cook over moderate heat, stirring frequently. Serve or assemble within a toasted corn tortilla to make taco. Carnitas can stay refrigerated for up to five days before assembling within a taco.
  • Preheat broiler. Place tomatoes and tomatillos on a baking sheet. Broil, turning occasionally until charred all over, 10 to 12 minutes. Transfer to a saucepan. Add the remaining ingredients. Bring to a boil and cook until onions are soft, 12 to 15 minutes. Transfer to a food processor or blender. Puree and then strain. Serve at room temperature or slightly chilled. Arbol salsa can be stored in the refrigerator 3 to 5 days, or frozen for weeks.

1 4-pound boneless pork butt or shoulder, trimmed, cut into 2-inch pieces
2 14 1/2-ounce cans chicken broth
3 cups (about) water
4 tablespoons butter
2 teaspoons chopped garlic
4 red bell peppers, cut into1/4-inch-thick strips
4 poblano chilies, seeded, cut into 1/4-inch-thick strips
12 green onions, cut into matchstick-size strips
1 1/2 cups grated Monterey Jack cheese
3/4 cup whipping cream
1/4 cup coarsely chopped cilantro
18 warm 6-inch flour or corn tortillas
Lime wedges

Steps:

  • Place pork in heavy large pot. Add broth. Add enough water to cover pork by 1/2 inch. Bring to boil. Reduce heat to medium. Cover partially; simmer until meat is very tender and liquid is absorbed, about 1 hour 45 minutes. Cool slightly. Shred meat. Season with salt. Cover; keep warm.
  • Meanwhile, melt butter in large skillet over medium heat. Add garlic; sauté 1 minute. Add bell peppers and poblanos; sauté until tender, about 12 minutes. Add green onions; sauté until tender, about 4 minutes. Add cheese and cream. Simmer until cheese melts and liquid thickens. Stir in cilantro. Season with salt and pepper.
  • Spoon some shredded meat onto half of each warm tortilla. Top with pepper mixture. Fold tortilla over filling. Serve with lime wedges to squeeze over.

Right after I moved to Arizona, I was a manager at a call center agency. An older hispanic gentleman that worked for me used to help me brush up on my spanish and talk to me about his family's traditional dishes. One time he told me how his wife made Shredded Pork with some secret and shocking ingredients....it kind of stuck in my head for years. Can you guess the "secret" ingredients? I tried the recipe and like to make it for Carnitas Tacos. The title only says "Redneck Girl"...well...because people sometimes joke about how I can make Mexican food so well and am from a small redneck town in Pennsylvania :)

1 (4 -5 lb) pork shoulder
1 (12 ounce) can cola
1 (10 ounce) can sweetened condensed milk
2 large cinnamon sticks, the big fresh ones
1 tablespoon cumin seed
2 tablespoons kosher salt
1 tablespoon peppercorn
1 large head garlic, cut in half through the middle and the top, no need to remove paper
2 corn tortillas, fresh and warm
1/4 cup pork, shredded, recipe above
1 tablespoon tomatoes, diced
1 tablespoon red onion, diced
1 tablespoon cilantro, roughly chopped
1 teaspoon serrano pepper, minced
1/4 lime, wedged
1 tablespoon sour cream
1 tablespoon cheese
2 tablespoons salsa, your favorite salsa or 2 tablespoons hot sauce

Steps:

  • The Meat - Carnitas:.
  • Place all of the ingredients in "The Meat" section into a large pot. Add enough water to cover the meat. Cover with a lid and bring to a boil on high heat. Lower heat to a simmer and cook until meat is falling apart.
  • Drain and discard any remaining garlic, cinnamon, peppercorns, and fat. Shred the pork and set aside.
  • You can use the meat for tacos or anything else that takes shredded pork. This recipe makes a lot of food!
  • The Tacos:.
  • Make as many as you like! The ingredients are sized for 2 tacos and not exact by any means, so multiply and mix up as necessary.
  • Place warm carnitas meat into a warmed fresh corn tortilla and add toppings.
  • The key here is a nice fresh warn corn tortilla, warm carnitas, and fresh cold toppings in the tomato, onion, pepper, cilantro, and sour cream.

There's nothing like carnitas. Cubes of fragrantly spiced pork are slowly cooked in lard until they're crispy on the outside while at the same time remaining soft and succulent inside. Bust some up on a warm tortilla, drizzle with braising liquid, top with a little salsa, onion, and cilantro, and you're probably enjoying the world's best taco.

3 pounds boneless pork butt (shoulder)
8 cloves garlic, peeled
¼ cup olive oil
1 orange, juiced, orange parts of peel removed and sliced into thin strips
1 tablespoon kosher salt
2 bay leaves, torn in half
1 teaspoon ground black pepper
1 teaspoon ground cumin
¾ teaspoon ground cinnamon
½ teaspoon Chinese 5-spice powder

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Remove fat from pork; cut pork meat into 2-inch cubes and roughly chop fat.
  • Mix pork, garlic, olive oil, orange peel, orange juice, salt, bay leaves, black pepper, cumin, cinnamon, and 5-spice powder together in a bowl until pork is coated completely. Transfer mixture to a 9x13-inch baking dish. Place baking dish on a baking sheet and cover baking dish tightly with heavy-duty aluminum foil.

4 1/2 lbs pork butt
6 cups water
7 slices orange zest
6 garlic cloves, minced
1 1/2 onions, diced
1 1/2 teaspoons crushed red pepper flakes
1 1/2 cinnamon sticks, preferably Mexican
2 bay leaves
1 1/2 teaspoons oregano leaves, crushed
1 1/2 teaspoons kosher salt
salt
1/4 teaspoon ground cloves
24 small corn tortillas, warmed
chopped fresh cilantro
finely chopped onion
fresh salsa verde or hot sauce

Steps:

  • Trim any thick fat from the outside of the pork butt. Cut the meat into 1-inch cubes. Discard any cubes that are pure fat, but don't try to trim all of the fat out of the meat.
  • Put the pork in a large pot. Add the water the strips of orange zest, garlic, onion, red pepper flakes, cinnamon, bay leaves, oregano, 1 1/2 teaspoons salt and cloves. Bring to a boil then reduce to a simmer. Skim off any scum that forms on the surface. Simmer for 1 1/2 hours, until the pork is very soft, adding more water if necessary to keep the meat submerged. Season with salt.
  • Bring to a gentle boil and cook until the water has evaporated about 30 minutes. Cook a little longer to fry the meat slightly. (Note: if you want extra-crispy carnitas, fry approximately 25 minutes.) Watch carefully to prevent burning.
  • Remove the bay leaves and cinnamon sticks. Put the meat in a fine strainer and push gently with a wooden spoon to remove any excess fat. Discard the fat.
  • Fold a few tablespoons of carnitas inside each tortilla and top each taco with cilantro, onion and salsa.
