CAROL'S COOKIES

- Preheat the oven to 350 degrees F.
- Line two cookie sheets with parchment paper. I have a funny feeling there will still be a ton of parchment paper when the apocalypse happens. It's as underused as Rick's razor.
- Combine the applesauce, shortening, brown sugar, granulated sugar, mix until all the shortening is blended well.
- Now add the baking powder, baking soda, flour, salt and vanilla, and mix until everything is combined perfectly.
- Now allow the batter to stand for about 3 to 5 minutes on the counter. No need to cover, it's not going to be out long enough.
- Melt the chocolate in a double boiler, or in the microwave. I always prefer the double boiler method and use it more often than not.
- Once the chocolate is completed melted and smooth you can add it to the cookie batter. Mix thoroughly.
- Drop spoonfuls on the cookie sheets, about 2 inches apart because this cookie dough spreads quite a bit. You can make large cookies by using a large tablespoon full of cookie batter at a time. Or you can make smaller cookies by using a teaspoon full of cookie batter at a time. Repeat until cookie sheets are full.
- Place first cookie sheet in the preheated oven for about 11 to 13 minutes if making large cookies or 8 to 11 minutes if making small cookies.
- Remove cookies from the oven carefully and allow to cool. If you can resist the smell of warm cookies wafting through your house. I never can.
- Repeat with second cookie sheet.
- Serve with a big old "and you'll get cookies....lots of cookies" smile!

Healthy, easy to make, vegan cookies. Found this in Southwest's inflight magazine this summer. Really needs the extra light olive oil or can taste too "olivish". The author of the article credits her friend Carol Owens with this recipe.

Steps:
- Preheat oven to 375. Put oats into food processor and pulse until broken into small pieces.
- Add the flour and process.
- Next add walnuts, oil, maple syrup and salt and run food processor unil well mixed.
- Drop the batter onto cookie sheets using a generous tablespoon per cookie.
- Bake for 12 minutes.
- Remove and cool on a plate or rack.
- Leftovers freeze well. Makes about 1 dozen cookies.

- Preheat oven to 375°.
- Mix flour with baking soda in a bowl and set aside.
- In a large bowl, combine butter, sugars and pudding mix.
- Beat until smooth and creamy.
- Beat in eggs and vanilla; gradually add flour mixture.
- Stir in chips and nuts.
- Roll into balls and flatten slightly or drop by teaspoon full on a non greased cookie sheet.
- Bake at 375° for 8-10 minutes.

CAROLYNN'S CHOCOLATE-CHIP COOKIES

- In a large bowl, whisk together flour, salt, and baking soda; set aside. In a medium saucepan over medium heat, melt butter. Turn off heat and add both sugars; whisk until combined. Transfer mixture to a medium bowl, and let cool to room temperature.
- Whisk egg, egg yolk, and vanilla into butter mixture. Fold in reserved flour mixture until just combined. Fold in chips and nuts. Wrap dough in plastic; refrigerate until firm, about 30 minutes.
- Preheat oven to 325 degrees. Using two large spoons, place golf-ball-size mounds of dough 3 inches apart on baking sheets. Bake until cookies are golden brown and the tops no longer look wet, 12 to 14 minutes. Allow cookies to cool on baking sheet 5 minutes; transfer to a wire rack. Let cool completely before serving.
CAROL'S OATMEAL COOKIES
This recipe came from my step-grandmother. She was a very southern lady who used this recipe since 1930 from Pillsbury Flour Co. I've eaten lots of oatmeal cookies, but never tasted one quite like this. I think it is yummy. I'm not sure how many cookies this makes, but my guess is 2 - 3 dozen, depending on the size spoon used to drop the batter.

- Pre-heat oven to 350 degrees.
- Cream shortening (I use butter flavored Crisco) and sugar together.
- Add eggs and vanilla to mixture.
- dissolve baking soda in the milk and add to mixture.
- Sift together flour, salt, cinnamon and allspice. Add to sugar mixture.
- Add oatmeal, pecans and raisins.
- Drop by Tablespoons onto ungreased cookie sheet.

CAROL'S BROWNIE DROPS (CHOCOLATE COOKIES)
Expensive, decadent, and there's probably something in the Old Testatment banning them..... because they're so GOOD! This is my mother-in-law's favorite family cookie recipe. Best cookies I ever ate. Since all she does all day long is cook and take care of her home, I'd say that these babies rate right up there. Heck, make a double batch!

Steps:
- Melt chocolate and butter over hot water. Cool.
- Beat eggs in mixer until foamy, (using a Kitchen Aide, use the regulat mixer, not the whisk), then add the sugar, two tablespoons at a time (it's 12 tablespoons, converted).
- Beat in mixer until it thickens, about 5 minutes.
- Blend in chocolate.
- Add flour, baking powder, salt and cinnamon.
- Stir in vanilla and nuts.
- Using a regular cereal spoon (about 2/3 of a tablespoon in quantity), drop the mix balls on to a greased cookie sheet.
- Bake in a pre-heated oven at 350 degrees for 8-10 minutes. The cookies should feel "set" when done.
- Cool slightly on sheet before storing/eating.
