SHRIMP COCKTAIL WITH DIPPING SAUCES

Steps:
- For the shrimp cocktail: Add the parsley stems, peppercorns, garlic, lemon, shallot, 2 teaspoons salt and 3 quarts water to a large stockpot and stir to combine. Bring to a boil over high heat. Prepare an ice water bath.
- Add the shrimp to the boiling water and cook just until opaque, 1 to 2 minutes. Remove the shrimp and shock in the ice water bath for 5 minutes. Drain the shrimp and refrigerate until ready to serve. Reserve the parsley leaves for the peppercorn remoulade sauce.
- For the peppercorn remoulade sauce: Combine the mayonnaise, green peppercorns, brine and sugar in a small bowl. Chop the reserved parsley leaves and stir into the remoulade. Store in an airtight container in the refrigerator until ready to serve.
- For the "bloody" cocktail sauce: Combine the ketchup, horseradish, celery seed and Worcestershire sauce in a small bowl. Store in an airtight container in the refrigerator until ready to serve. This can be prepared up to 2 weeks in advance.
- Serve the chilled shrimp over crushed ice with the dipping sauces alongside.
SMOKED SHRIMP WITH CHILE-LIME DIPPING SAUCE
Set out these Thai smoked shrimp on a paper-lined picnic table, set a bowl of sauce in the middle, and go to town. A great shrimp recipe for a bbq.

- In a large bowl, mix the shrimp with the salt and pepper, coating them evenly. Cover and refrigerate for 3 hours.
- Meanwhile, start the sauce: In a blender, combine the chiles, garlic, lime juice, and salt and blend until the bits are the size of a match head. Transfer to a small bowl, cover, and keep at room temperature.
- Heat a smoker to 225°F. Rinse the seasoning off the shrimp and pat dry with paper towels. Place the shrimp in the smoker and smoke until they turn dark coral, 20 to 25 minutes.
- While the shrimp are smoking, stir the sugar and fish sauce into the sauce, then taste and adjust the seasoning with more fish sauce if needed. Aim for sour and hot first, then salty and just a tad bit of sweetness. Stir in the cilantro.
- Serve the shrimp with the sauce.
CAROLYN'S BREAKFAST SKILLET
Simple one-pan meal. Tired of the same old kielbasa flavor. I had 1/2 of a kielbasa left over and I just went through the pantry looking for something new to cook with it. This is what I came up with. It was a hit with my family so I thought I would share. Serve with toast.

- Combine potatoes, kielbasa, and onion in a skillet. Pour corn and diced tomatoes with liquids on top and stir to combine.
- Cover and bring to a boil over medium-high heat. Reduce heat and simmer until potatoes are tender, about 20 minutes. Add stuffing mix and stir well. Cover, remove from heat, and let stand for 5 minutes.
- Meanwhile, spray a large skillet with cooking spray; warm over medium-high heat. Whisk eggs together in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes.
- Add scrambled eggs to skillet and serve.

- Dipping Sauce:.
- Add all the sipping sauce ingredients to a pot on a low temperature. Heat for 10 minutes, making sure you stir ingredients every few minutes.
- In a large, heavy pot, heat 2-inches of the peanut oil to 325degrees f. Or use a deep fryer.
- Meanwhile in a large bowl, whisk together the flour, salt, and baking powder. Add the water and whisk until smooth. Let the batter stand for 15 minutes.
- In a wide shallow bowl, toss the coconut and bread crumbs together.
- Put the shrimp into the batter. Remove the shrimp, 1 at a time, and dredge in the coconut mixture, pressing to help the cocnut adhere.
- Fry the shrimp in batches in the hot oil for 1 to 2 minutes or until brown. Use a slotted spoon to transfer the shrimp to a baking sheet lined with paper towels.
- Serve the shrimp with the dipping sauce.

- Preheat an oven to 350 degrees F (175 degrees C).
- Season the sea bass with salt and pepper; arrange in a baking dish and set aside.
- Melt the butter with the olive oil in a skillet over medium-low heat. Cook the shallots, garlic, and parsley in the melted butter and olive oil until softened, about 5 minutes. Add the flour and stir continually until completely incorporated into the mixture and the liquid is smooth. Pour the half-and-half into the mixture while stirring; cook and stir until thickened. Season with the white pepper. Gently fold the crawfish tails and crabmeat into the mixture, taking care to not break the crabmeat too much; cook another 1 minute. Spoon the mixture over the sea bass fillets.
- Bake in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes. Serve immediately.

- Aioli: puree garlic and salt then add 1 egg, process and add the egg yolk and process. Add the oil slowly with the processor on. When it has formed a mayo like thickness pulse in the lime zest and lime juice. Pulse or stir in the peppers. makes 1 1/2 cups Relish: toast the almonds.Process the almonds and cilantro until it forms a paste. Process in the garlic, pepper, lime juice. Then process in the sourcream and mayo and blend until creamy. The relish will have some texture to it. makes 1 cup Serve with chilled shrimp!
