CARROT CHEESE DIP

Steps:
- Add the piquillo peppers to a food processor and puree.
- In a stand mixer, combine the cream cheese, smoked Gouda and piquillo peppers. Taste and season. If the mixture feels too loose to mold, refrigerate for 30 minutes.
- Roll the mixture into 2 balls. Divide the bunch of parsley into 2 parts and place on separate serving plates. Place each cheese ball on top of the parsley sprigs so that the parsley looks like carrot stems. Shape each ball of cheese into a carrot shape and top with some of the Cheddar, pushing the cheese in slightly so it stays.
- Refrigerate or serve immediately with crudite or chips.
SPICY CASHEW DIP
Steps:
- Combine all ingredients, except lime juice and cilantro, in a 4-quart slow cooker.
- Cover and cook on low setting for 2 to 3 hours, stirring occasionally.
- Stir in lime juice and serve hot garnished with cilantro, if using.
CARROT CASHEW QUICHE
One of my mom's favorites for buffets or brunches and afternoon lunches. Served with a nice salad, this is a nice light meal.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat. Stir in the carrots and cashews, and cook until carrots are tender and cashews are golden brown. Mix in the honey.
- In a bowl, beat together the eggs, heavy cream, nutmeg, and salt.
- Evenly spread the cheese in the bottom of the pie crust. Layer the carrot mixture over the cheese, and top with the egg mixture.
- Bake 40 minutes in the preheated oven, until a toothpick inserted in the center comes out clean.

- Put carrots, garlic cloves and ginger into a medium saucepan and cover with water by 1/4-inch.
- Bring to a boil over high heat, reduce heat and simmer until carrots are soft and water is nearly gone.
- Turn the carrots, garlic, ginger and 2 tablespoons of the cooking water into a blender or food processor fitted with a steel blade. Add the cashews and process until smooth. Season with salt and pepper to taste.

- Peel the carrots and grate in a food processor. Peel the onion and cut in small dices. Peel the ginger and chop finely.
- In a hot pan sweat the onion and cook until they turn translucent. Add the carrots and ginger and continue cooking for about two more minutes.
- Reduce the heat to a low flame and add the cashew nuts, cumin and coriander powder. Season with salt and pepper.
- Cook for about 5 more minutes and add the sour cream. Check the doneness of the carrots, by now they should have cooked well through.
