Easy, healthy Zucchini Carrot Muffins made with oatmeal, honey and yogurt. Supremely moist, lightly spiced and delicious for healthy breakfasts and snacks!

Provided by Erin Clarke / Well Plated

Categories     Breakfast     Snack

Time 37m

Number Of Ingredients 15

1/2 cup raw walnut or pecan halves or ¼ cup dried fruit (such as golden raisins or cranberries)
3/4 cup grated zucchini (1 small zucchini will be more than enough; no need to peel it first)
1 1/4 cups white whole wheat flour
1 cup old-fashioned oats
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 ¼ teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
3/4 cup grated carrot (about 1 large carrot)
2 large eggs (at room temperature)
1/2 cup plain nonfat Greek yogurt (at room temperature)
1/3 cup honey or pure maple syrup
1/4 cup canola oil or light olive oil
2 teaspoons pure vanilla extract

Steps:

  • Heat your oven to 350 degrees F. Line 10 cups of a standard muffin pan with paper liners or lightly coat with nonstick spray. Set aside.
  • If using nuts for the mix-ins, toast them in the oven now: Spread the nuts into an even layer on an ungreased baking sheet. Bake at 350 degrees F for 8 to 12 minutes (for pecan or walnut halves), until they are lightly browned and fragrant. Transfer the nuts immediately to a cutting board; roughly chop and set aside.
  • Place the zucchini on a stack of paper towels. Pat dry and set aside.
  • In a large mixing bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Add the grated carrot and zucchini. Fold gently to combine.
  • In a separate, medium bowl, whisk together the eggs, Greek yogurt, honey, oil, and vanilla until smooth.
  • Add the wet ingredients to the dry ingredients, and stir gently until just combined. Do not overmix.
  • Fold in the nuts or any other mix-ins.
  • Divide the batter evenly among the 10 muffin cups. Bake for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Place the pan on a wire rack and let the muffins cool in the pan for 4 minutes. Gently transfer the muffins to the rack to finish cooling. Enjoy!

ZUCCHINI YOGURT MULTIGRAIN MUFFINS

Zucchini Yogurt Multigrain Muffins image

I tried finding a recipe to get my picky toddler to eat her vegetables. Since I couldn't find a healthy one, I came up with this. Using one cup carrots and one cup zucchini is a nice way to get both the yellow and green veggies into the diet! Any type of nuts, raisins, etc. may be used in the recipe -- whatever is on hand and toddler approved.

This healthy recipe is adapted from one on allrecipes.com. If you want, you can use sugar instead of splenda and substitute oil instead of some of the applesauce. Oats can be used instead of the bran. And you can use whatever percent fat yogurt you prefer.

ANYTIME YOGURT CARROT MUFFINS

Anytime Yogurt Carrot Muffins image

I don't bake. So these muffins had to be easy to understand, with no wonky ingredients. First you mix the dry ingredients. Then you mix the wet. Add the wet to the dry, yadda yadda yadda. About thirty minutes later, and look at those little crests and peaks! The raisins add little pockets of sweet here and there, the carrots add a delicious, delicate moisture and the yogurt adds this gorgeous subtle tang.

Time 45m

Yield 6 servings

Number Of Ingredients 10

1/4 cup canola oil, plus more for the tin
2 cups all-purpose flour
1/2 cup coconut sugar (granulated sugar is fine; see Cook's Note)
1 tablespoon baking powder
1 pinch kosher salt
1 cup plain full-fat Greek yogurt
1 cup grated carrots (from about 2 medium carrots)
1 large egg
Three 1-ounce boxes raisins
Unsalted butter, at room temperature, for serving

Steps:

  • Preheat the oven to 400 degrees F. Coat a 6-cup muffin tin with a little bit of canola oil or use muffin liners.
  • Mix together the flour, coconut sugar, baking powder and salt in a large bowl.
  • Stir together the Greek yogurt, carrots, eggs and oil in a separate large bowl until incorporated. Add the raisins and stir to combine. Pour the yogurt mixture into the bowl with the dry ingredients and stir, using a wooden spoon, until just incorporated. (But not TOO too much.)
  • Use an ice cream scoop to evenly pack the mixture among six muffin cups. Bake until the tops are puffed and golden brown, 20 to 30 minutes.
  • Let rest for a few minutes, then pop them out and eat as you want! Serve with butter if desired.
