Cassata Cake image

Cassata cake is like a cannoli but more gooey. You need 2 - 9 inch sponge cake layers for this recipe. The instructions are given for to make them, or you can use your own recipe.

1 ½ cups cake flour
½ teaspoon baking powder
¼ teaspoon salt
5 eggs
½ cup cold water
1 ¼ cups white sugar
1 teaspoon vanilla extract
½ teaspoon cream of tartar
2 pounds whole milk ricotta cheese
2 ¼ cups confectioners' sugar
½ teaspoon ground cinnamon
1 ½ teaspoons vanilla extract
2 (1 ounce) squares semi-sweet chocolate
½ cup candied lemon peel
⅓ cup white sugar
¼ cup water
2 tablespoons light rum
6 (1 ounce) squares bittersweet chocolate, chopped
⅓ cup heavy whipping cream
3 tablespoons unsalted butter, cubed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and line with parchment paper 2 nine inch round layer pans.
  • Sift the flour, baking powder, and salt together.
  • Separate the eggs and set the egg whites aside. Beat the egg yolks together on medium-high speed until very thick, about 4 minutes. Gradually add the cold water. Add 1- 1/4 cups of the white sugar, slowly, and beat well for about 3 more minutes. Add 1 teaspoon of the vanilla. Sift the flour mixture over the egg yolk mixture and fold in.
  • Beat the egg whites and cream of tartar together until stiff peaks form. Fold this into the yolk mixture. Divide batter between the pans.
  • Bake at 325 degrees F (165 degrees C) for 25 minutes. Cool on rack for 10 minutes and then invert and cool completely.
  • Cut each cake layer in half. Place one of the 4 halves on a cake board or plate and sprinkle with a little of the Rum Syrup. Spread about 1-1/2 cups of the Filling over this layer. Add a second layer of cake and repeat this procedure. Top the cake with the last layer of cake. Chill at least 4 hours. Spread Chocolate Glaze over top of cake.
  • To Make Ricotta Cheese Filling: Beat the ricotta cheese well and add the confectioner's sugar and cinnamon. Add 1-1/2 teaspoons of the vanilla and grate 2 ounces of the chocolate in using the coarse side of a grater. Stir in the candied lemon peel and mix. Chill until ready to use.
  • To Make The Rum Syrup: Place 1/3 cup of the sugar and the water in a small saucepan. Bring to a boil over medium heat, stirring to dissolve sugar. Boil 1 minute and then remove from heat and add the rum. Cool to room temperature.
  • To Make The Chocolate Glaze: Melt 6 ounces of the chocolate and the cream in the microwave, whisk smooth. Add the butter and whisk until dissolved. Cool mixture until spreadable. Spread over the top of the cake.

1 ½ cups vegetable oil
1 ½ cups chopped pecans
3 cups all-purpose flour
2 bananas, peeled and diced
3 eggs
1 (20 ounce) can crushed pineapple with juice
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon baking soda

Steps:

  • Mix together sugar, vegetable oil, pecans, flour, and bananas in a 13 x 9 inch pan. Stir in the eggs, pineapple (with juice), vanilla, salt and baking soda. Mix well. Do not mash the bananas.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until cake tests done.

2 lbs grated cassava
1 (14 ounce) can sweetened condensed milk (Reserve 1/3 cup for Topping)
1 (12 ounce) can evaporated milk
1 (14 ounce) can coconut milk (Reserve 1/3 cup for Topping)
1 (13 ounce) can coconut cream (Reserve 1/3 cup for Topping)
2/3 cup sugar
3 eggs, plus
3 egg whites
1 cup grated coconut
3 egg yolks

Steps:

  • Preheat oven to 325° f.
  • In large mixing bowl combine cake ingredients.
  • Mix well.
  • Pour equally into two large greased rectangular pans.
  • Bake until top is no longer liquid (approximately 30 minutes).
  • Mix topping ingredients well and spread evenly on the two cakes.
  • Bake an additional 20 to 30 minutes.
  • Cool cakes completely.
  • Slice each cake into 24 equal squares.

1-1/2 cups sugar
3 eggs, lightly beaten
2 cups flour, sifted
1-1/2 teaspoon ground cardamon
1/4 teaspoon salt
2 teaspoons baking soda
1 cup sour cream
Confectioner's sugar

Steps:

  • Set the oven at 325 degrees. Grease and flour a 10-inch bundt pan. In the bowl of an electric mixer, cream the butter until soft and light. Add the sugar gradually, beating well. Beat in the eggs a little at a time, beating thoroughly. Sift together the flour, cardamon, salt, and baking soda. Beat the flour mixture into the batter, alternating with the sour cream, beginning and ending with flour. Pour the batter into the prepared pan, smooth the top with a rubber spatula, and transfer the cake to the heated oven. Bake the cake for 45-50 minutes or until it pulls away from the sides of the pan and a skewer inserted into the center of the cake comes out clean. Leave the cake in the pan to cool for 5 minutes, then turn it out onto a rack to cool completely. Leave to mellow for several hours before sprinkling with confectioner's sugar.

3 pounds grated cassava root
2 (13.5 ounce) cans coconut milk
1 (14 ounce) can sweetened condensed milk, divided
1 (12 ounce) jar macapuno (coconut sport)
½ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine cassava, coconut milk, 1/2 the sweetened condensed milk, macapuno, and sugar in a large saucepan over medium heat. Bring to a boil, stirring constantly. Transfer to a 9x13-inch glass baking dish.
  • Bake in the preheated oven until almost set, about 40 minutes. Remove from the oven; spread remaining sweetened condensed milk on top. Continue baking until top is browned, about 20 minutes.
  • Cool to room temperature or refrigerate before serving, about 1 hour.

  • Put the sugar and egg whites in a mixer bowl or another large heatproof bowl, fit the bowl over a pan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 5 minutes. The sugar should be dissolved, and the mixture will look like shiny marshmallow cream. Remove the bowl from the heat.
  • Using a sharp serrated knife and a gentle sawing motion, slice the domed tops off of each cake layer. Place first layer cut side up on a cardboard cake round or a cake plate protected by strips of wax or parchment paper.
