A must for all brownie lovers! These moist brownies are the perfect way to use extra zucchini.

2 cups all-purpose flour
1 teaspoon salt
1 ½ teaspoons baking soda
⅓ cup unsweetened cocoa powder
1 cup white sugar
2 eggs
2 cups grated zucchini
½ cup vegetable oil
1 teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a large mixing bowl, sift together flour, salt, soda, cocoa, and sugar. Combine eggs, zucchini, oil, and vanilla; blend into dry ingredients. Stir in walnuts.
  • Bake for 20 minutes in preheated oven. Cool in the pan, and then cut into bars.

1/2 cup margarine
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon cinnamon
1 teaspoon baking soda
2 tablespoons cocoa
2 1/4 cups shredded zucchini
1 cup chocolate chips

Steps:

  • Cream sugar & margarine. Add eggs and vanilla.
  • Add remaining ingredients. Stir in shredded zucchini last.
  • Spread in a 13 x 9 greased pan. Sprinkle 1 cup chocolate chips on top along with 1 Tbls sugar.
  • Bake @ 350 for 25 to 30 minutes.
