Easy Chimichurri image

I took elements of several chimichurri recipes I found to come up with this combination, which has become a favorite. Can be stored for up to 2 weeks in the refrigerator.

1 cup tightly packed chopped parsley leaves
1 cup tightly packed chopped cilantro leaves
¼ cup red wine vinegar
½ onion, coarsely chopped
5 cloves garlic
1 teaspoon coarse salt
1 teaspoon dried oregano
1 teaspoon hot pepper flakes
1 teaspoon freshly ground black pepper
½ cup extra-virgin olive oil

Steps:

  • Combine parsley, cilantro, red wine vinegar, onion, garlic, salt, oregano, hot pepper flakes, and pepper in the bowl of a food processor; pulse a few times. Pour olive oil in slowly, while pulsing a few more times, until chimichurri is chopped, but not mushy.
  • Refrigerate until flavors have blended, about 2 hours.

Fish Skewers with Basil Chimichurri image

Number Of Ingredients 18

1/4 cup chopped white onion
1 clove garlic, minced
1/4 cup vegetable oil
2 tablespoons white wine vinegar
Juice of 1/2 a lemon (about 2 tablespoons)
Kosher salt and freshly ground black pepper
10 ounces firm white fish, such as cod, haddock or halibut,cut into 16 pieces (about 1 inch each)
3 small zucchini and/or yellow squash (about 1 1/4 pounds),cut into 1-inch pieces
1 1/4 cups fresh basil leaves, coarsely chopped
3/4 cup fresh parsley leaves, coarsely chopped
1 tablespoon finely chopped sweet onion
1 clove garlic, minced
1/3 cup olive oil
1 tablespoon white wine vinegar
Juice of 1/2 a lemon (about 2 tablespoons)
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
8 cherry tomatoes

Steps:

  • For the marinade: In a medium glass bowl, mix together the
  • onions, garlic, oil, vinegar, lemon juice and salt and pepper to taste.
  • Add the fish and squash and marinate at room temperature,
  • about 15 minutes.
  • For the chimichurri: Combine the basil, parsley, onions,
  • garlic, olive oil, vinegar, lemon juice, red pepper flakes and salt and pepper
  • to taste in a food processor bowl, and pulse until the ingredients are just
  • combined and chunky.
  • Preheat the grill on high. Oil the grates well.
  • For the fish skewers: Thread the marinated fish and squash
  • onto the soaked skewers, 2 pieces of fish per skewer. Place 1 cherry tomato on
  • the end of each skewer. Place on the grill and cook until lightly charred on
  • the outside and the fish is just cooked through, 3 to 4 minutes per side.
  • While the fish is still warm, drizzle with a little basil
  • chimichurri and serve more on the side for dipping.

Adapted from my local newspaper. Simple and easy to prepare. This should be made with all fresh ingredients, but substituting one or two herbs or spices shouldn't hurt too much.

1/2 cup basil
1/4 cup cilantro
1/4 cup olive oil
1 garlic clove, minced
1 tablespoon red wine vinegar
2 teaspoons lime juice
1/4 teaspoon ground cumin
3/4 teaspoon salt, divided
1/4 teaspoon fresh ground pepper
1 1/2 lbs catfish fillets
1/4 cup orange juice
1/2 teaspoon orange zest

Steps:

  • Preheat oven to 425 degrees F. Coat a baking dish with cooking spray or brush lightly with olive oil. Place catfish fillets in a single layer. Season with 1/2 teaspoon salt, 1/8 teaspoon pepper, and orange zest. Pour orange juice over all and bake about 12 minutes until fish is opaque.
  • Meanwhile combine parsley, basil, cilantro, olive oil, minced garlic, vinegar, lime juice, cumin, 1/4 teaspoon salt, 1/8 teaspoon pepper and process in a blender until smooth.
  • Serve with the sauce.
  • Alternatively, you can mince the herbs fine and skip processing in the blender, or a combination of both methods.
