CAULIFLOWER GRILLED CHEESE SANDWICHES
A low carb, gluten free and keto friendly grilled cheese sandwich made with cauliflower bread. The end result is a flavorful and tasty grilled cheese that looks a lot like regular grilled cheese.

Steps:
- Warm a nonstick skillet over the stove. Lightly toast both sides of your bread slices.
- Sprinkle one bread slice generously with shredded cheese. Cover the cheese with the other bread slice. Place a small lid (one that is smaller than your skillet and just fits over the bread) on top to weigh down the bread and to increase the heat surrounding the bread. Cook and flip a few times until cheese is melted and both sides of the sandwich is evenly toasted.

CAULIFLOWER BREAD GRILLED CHEESE SANDWICH (GLUTEN FREE)
Steps:
- Preheat oven to 425 degrees. Put parchment paper on large baking sheet and generously grease parchment paper.
- Break cauliflower into florets and pulse in food processor or use box grater(yield about 3 1/2 cups riced cauliflower).
- Place riced cauliflower on several sheets of paper towels or use clean kitchen towel.
- Squeeze out as much liquid as possible and place in mixing bowl.
- Add rest of ingredients reserving the additional cheese for sandwich and olive oil for greasing parchment paper. Mix well and divide into four sections in bowl as to try and get sandwich slices equal.
- Spoon the mixture in the four sections onto the greased parchment paper. Press into shape of bread slices. Bake in preheated oven about 10 minutes. Remove from oven and turn bread over. Then bake an additional 5-6 minutes.
- Remove from oven and allow to sit a few minutes.
- Add butter to skillet over medium heat.
- Then assemble the grilled cheese with cheese of choice and put into buttered pan and cook till cheese is thoroughly melted turning sandwich over once while cooking. You could also melt cheese in oven if your prefer.

Steps:
- Add cauliflower florets to a food processor and blend until it reaches a rice consistency.
- Transfer cauliflower rice to a microwave safe bowl and microwave 5 minutes at a time 4 times, stirring in between. This will help to draw out the moisture. Allow the microwaved rice to cool for about 30 minutes, until cool to the touch.
- Combine cauliflower rice with egg, parmesan and garlic powder.
- Divide mixture into 4 portions.
- Flatten out each portion into a ¼-1/2" square "bread" shape on a baking sheet lined with parchment.
- Bake at 450 Fahrenheit for 15-20 minutes, until golden brown. Allow to cool for 15 minutes before removing pieces from the pan.
- Use a spatula to remove the cauliflower bread and assemble sandwiches. Place 1-2 slices of cheese in between two slices of cauliflower bread.
- Place in a toaster oven for 5-10 minutes on broil until the cheese is melted and bread is toasty.
