ROASTED CAULIFLOWER STEAKS

You might've tried boiling, mashing, and even turning cauliflower into 'rice'. For a different take on cauliflower, try these oven-roasted cauliflower steaks seasoned with a simple lemon-garlic sauce. Serve the steaks with chimichurri sauce or topped with roasted cherry tomatoes, sliced green olives and crumbled feta cheese.

Number Of Ingredients 6

1 large head cauliflower, sliced lengthwise through the core into 4 'steaks'
¼ cup olive oil
1 tablespoon fresh lemon juice
2 cloves garlic, minced
1 pinch red pepper flakes, or to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place cauliflower steaks on the prepared baking sheet.
  • Whisk olive oil, lemon juice, garlic, red pepper flakes, salt, and black pepper together in a bowl. Brush 1/2 of the olive oil mixture over the tops of the cauliflower steaks.
  • Roast cauliflower steaks in the preheated oven for 15 minutes. Gently turn over each steak and brush with remaining olive oil mixture. Continue roasting until tender and golden, 15 to 20 minutes more.

These Cauliflower Steaks are a creative and delicious side that can go with any meal. You'll love their crisp texture and how each one is packed with flavor.

2 heads of cauliflower
3 tbsp. olive oil
4 tbsp. ground flax seeds (or breadcrumbs)
3 tbsp. za'atar spice
1 tbsp. onion powder
1 tsp. sea salt

Steps:

  • Remove the cauliflower stems and leaves. Cut each cauliflower head down the middle. Then, move the knife about 1 1/2 - 2 inches to the left, and cut the steak. Do the same on the right. (each head makes 2 steaks). Reserve the remaining cauliflower for future use.
  • Lay the steaks on a baking sheet and drizzle them with olive oil. Then, sprinkle on the spices. Make sure all of the spices stick to the steaks, so they can bake in and give the cauliflower the best flavor.
  • Bake for 15 minutes at 375 degrees Fahrenheit, flip carefully, and then bake for another 5-10 minutes, depending on the thickness of the steaks. In addition, you can broil them for about 2 minutes, in order to get a beautiful golden crust.
  • Serve as a side to any dish. It tastes great with Creamy Tahini Sauce

Cauliflower Steaks are lightly seasoned with spices then roasted until tender with a beautiful golden, caramelized exterior.

2 heads cauliflower
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/4 cup olive oil
Chopped fresh parsley

Steps:

  • Adjust oven rack to the lower third position and one in the middle.
  • Preheat to oven to 500ºF.
  • Remove the outer green leaves from the head of cauliflower and discard. Trim the stem.
  • Cut the cauliflower in half lengthwise through the center and cut 1 ½-inch thick steaks from each half.
  • Repeat the process with the other head of cauliflower.
  • Place cauliflower steaks on a lightly oiled rimmed baking sheet.
  • In a small bowl mix together salt, pepper, garlic powder, onion powder, oregano, and paprika.
  • Drizzle olive oil on both sides of each cauliflower steak and evenly sprinkle with the seasoning mixture on both sides.
  • Tightly cover the baking sheet with foil and bake for 5 minutes.
  • Remove the foil from the cauliflower and roast for another 10 minutes.
  • Carefully flip the cauliflower steak and roast until a golden-brown on both sides, about 8 more minutes.
  • Transfer to a serving platter and garnish with parsley, lemon wedges and dipping sauce.

2 heads cauliflower, cut into 1/2-inch slices
Kosher salt and freshly ground black pepper, to taste
1/4 cup freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. In a small bowl, combine olive oil, garlic, oregano, thyme, rosemary and parsley. Place cauliflower slices in a single layer onto the prepared baking sheet. Brush each slice with the olive oil mixture on both sides; season with salt and pepper, to taste. Place into oven and bake until golden brown, about 20-25 minutes, flipping halfway. Serve immediately, sprinkled with Parmesan.

Steps:

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Remove the green leaves from the cauliflower stem with a knife.
  • Place the cauliflower core-down on a cutting board and trim 2 sides so they become flat.
  • Cut the cauliflower in half and then cut each half in two to get 4 "steaks".
  • Rinse and dry the cauliflower steaks.
  • In a small bowl, combine the olive oil, lemon juice, basil, oregano, thyme, rosemary, onion, and garlic, plus salt and pepper to taste. Mix well.
  • Place the cauliflower steaks on the baking sheet and brush generously with the oil mixture.
  • Bake for about 25 minutes, flipping halfway, until tender.
  • Serve as desired, such as on a sandwich with pesto and red pepper, or with barbecue sauce and roasted potatoes, or with vegan mushroom gravy and lentils.

Steps:

  • Cut cauliflower into 1 1/2" thick steaks.
  • Mix spices together in a small bowl.
  • Place parchment paper on the baking sheet.
  • Rub both sides of the cauliflower steaks with olive oil and spices.
  • Place into the oven at 400* F for 30 minutes, without flipping.
  • Top with your favorite sauce - ours is Chimichurri!
  • Combined all ingredients into a food processor except for the olive oil. Pulse approximately 5 times. Then add the olive oil in and pulse until your desired consistency. Stop periodically to scrape down the sides of the processor.

  • Remove the green leaves from the head of cauliflower and cut off any excess stem. Slice off one side of the cauliflower, right at the edge of the stem in the center. (Reserve the extra cauliflower scraps for another use.)
