Cauliflower cheese image

Pop this classic side dish in the oven when you take your roast chicken out to rest, so there's no hot shelf juggling

Provided by Sarah Cook

Categories     Side dish

Time 45m

Number Of Ingredients 6

1 large cauliflower (leaves cut off), broken into pieces
500ml milk
4 tbsp flour
50g butter
100g strong cheddar, grated
2-3 tbsp breadcrumbs, if you have them

  • Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
  • Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
  • Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
  • Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
  • Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
  • Put in the oven and bake for 20 mins until bubbling.

Cauliflower cheese pasta bake image

Cross cauliflower cheese with a pasta bake for a hearty vegetarian dinner that kids and grown-ups will love. It also delivers two of your 5-a-day

Provided by Rosie Birkett

Categories     Dinner, Main course, Pasta, Supper

Time 1h20m

Number Of Ingredients 16

1 cauliflower , broken down into florets, core sliced, leaves removed and reserved, thick stems sliced
2 tbsp olive oil
6 shallots , sliced
1 tsp caster sugar
1 thyme sprig
2 tbsp white wine
100g large pasta shapes, such as conchiglioni
20g butter
1 bay leaf
2 tbsp plain flour
600ml milk
100g mature cheddar
50g parmesan (or vegetarian alternative), plus extra to top
nutmeg , grated
50g gruyère or comté
1 tsp white wine vinegar or lemon juice

  • Heat oven to 220C/200 fan/gas 9. Toss the cauliflower florets, leaves and sliced core with 1 tbsp olive oil in a roasting tin and season. Roast in the oven for 30-40 mins, or until the cauliflower is turning golden and smelling nutty. While it's roasting, heat 1 tbsp of olive oil in a non-stick frying pan and add the shallots, sugar and thyme. Cook for 10-15 mins until soft, sweet and caramelised. Add the wine and cook for a few more mins until evaporated. Meanwhile, cook the pasta in salty boiling water until just cooked. Drain and set aside.
  • For the cheese sauce, melt the butter in a non-stick saucepan over a medium heat with the bay leaf. Add the flour and cook, stirring, for 2 mins or so, until the roux is starting to bubble. Pour in the milk, little by little, stirring with a whisk, until fully incorporated and you have a smooth, lump-free sauce. Cook for about 10 mins until thickened, and then season with nutmeg and black pepper. Next, add the cheese and stir over the heat until it's melted and smooth. Taste the sauce and adjust the seasoning, adding the vinegar or lemon juice to taste.
  • Tip the pasta and shallots into the cauliflower roasting dish, then pour over the cheese sauce and stir so everything is well coated. Sprinkle over the remaining parmesan, reduce the oven to 180C/160C fan/gas 4 and bake for 20 mins, or until golden. Remove from the oven and allow to settle for about 10 mins, then serve with a crisp chicory salad.

  • Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.
  • Meanwhile, in the same bowl, whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. • To make the sauce, blitz the butter and the cream cheese in bursts in the microwave until soft (or on the stove top in a small sauce pan). It will only take a couple of minutes. Blend together with a whisk until smooth, slowly adding the cream until combined.
  • Stir in half of the grated cheese. Blitz again in the microwave in bursts of about 60 seconds (or continue cooking on the stove top) until the sauce thickens, whisking well in between. This will take about 3-4 minutes in the microwave. Don't be concerned if there are a few lumps in the sauce.
  • Season the white sauce with salt and pepper and allow to sit and thicken for a few minutes while you prepare the cauliflower.
  • Cook the cauliflower until just tender but still firm, either in the microwave, parboil or steam it. This can take about 5 minutes in the microwave but can vary. Take care pulling the cling wrap off the cauliflower if you use the microwave method, as steam can build up.

  • Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart casserole dish, such as an 9x13, with nonstick spray. Line a rimmed baking sheet with foil.
  • In a large bowl, toss the cauliflower florets with the olive oil, garlic powder, salt, pepper, and nutmeg. Transfer the cauliflower to the prepared casserole dish and spread into an even layer. Keep the bowl handy. Bake the cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
  • Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes. Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time. Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
  • In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup gruyere cheese, 2 tablespoons Parmesan cheese, and half of the chopped bacon.
