This is a simple, no frills biscotti. My friend at work gave this recipe to me. It's quick, easy and one of my favorite Italian cookie recipes.

½ cup vegetable oil
1 cup white sugar
3 ¼ cups all-purpose flour
3 eggs
1 tablespoon baking powder
1 tablespoon anise extract, or 3 drops anise oil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder, stir into the egg mixture to form a heavy dough. Divide dough into two pieces. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.
  • Bake for 25 to 30 minutes in the preheated oven, until golden brown. Remove from the baking sheet to cool on a wire rack. When The cookies are cool enough to handle, slice each one crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side. Slices should be lightly toasted.

Delicious biscotti with chocolate swirls. A light, relatively healthy treat. Adapted from Holly Clegg's Trim&Perfect Diabetic Cooking (trust me the recipe does not taste diabetic, no artificial anything)

1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3 eggs
1 egg white
2/3 cup sugar
1/4 cup canola oil
1/4 cup nonfat milk or 1/4 cup 1% low-fat milk
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl combine and stir the all purpose flour, whole wheat flour, baking powder and baking soda.
  • In a large bowl stir the eggs, egg white, sugar, canola oil, milk, and vanilla extract and an additional tsp of water.
  • Add the dry ingredients and combine (you may have to knead with your hands).
  • In a plastic or microwave safe bowl melt the chocolate chips. Start out with 30 seconds and continue in 5 second periods in the microwave until melted.
  • Quickly add to the dough and create a marbled effect.
  • Shape into 4 logs about 2 inches wide and 9 inches long.
  • Place logs on baking sheets lightly coated with nonstick spray.
  • Bake for 20 minutes until lightly browned.
  • Cut into pieces (18 per log).
  • Place back on baking sheet cut side down and bake for 15-20 minutes or until dry at 325°F.
  • ENJOY.

This was given to me by my very best friend; it's her mother's recipe, and a wonderful basic biscotti recipe. Very rarely do I make them the same way twice. You can add dried cherries, cranberries, walnuts, toasted almonds, chocolate, white chocolate or cinnamon chips, or nothing at all -- It's good enough to stand on its own. I also change the flavorings and use almond or vanilla extracts. These will keep for a couple of weeks (if you're lucky) in your cookie jar!

1 cup white sugar
¼ cup softened butter
3 eggs
1 egg yolk
1 ½ teaspoons vanilla extract
2 ½ cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment.
  • Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy; beat in eggs, egg yolk, and vanilla extract. Whisk flour and baking powder together in a bowl. Stir flour mixture into butter mixture to form a fairly sticky dough.
  • Divide dough in half; with wet hands, shape dough into two loaves, about 1-inch high at the center, on the prepared baking sheet.
  • Bake in the preheated oven until lightly browned, about 20 minutes; remove to cool completely on a wire rack, about 30 minutes.
  • Slice loaves into 1/2-inch slices with a serrated knife. Place cookie slices back onto lined baking sheet, cut sides up.
  • Increase oven temperature to 450 degrees F (230 degrees C).
  • Bake in the preheated oven until golden brown, turning once, 3 to 4 minutes per side.

  • In small bowl, combine water and instant coffee; stir until dissolved. Divide dough in half. To half of dough (about 1 1/2 cups), stir in coffee mixture and melted chocolate; mix well. To remaining half of dough, stir in almond extract and almonds; mix well. Cover with plastic wrap; refrigerate at least 2 hours for easier handling.
  • Heat oven to 325°F. Grease large cookie sheet. Divide each half of dough in half again; return half of almond dough and half of coffee dough to refrigerator. On well-floured surface with floured hands, pat almond dough into 8x4-inch rectangle. (Dough will be sticky.) Spoon chocolate dough over almond dough, spreading to edges and covering evenly.
  • Starting at short side of rectangle, roll up jelly-roll fashion. Roll back and forth on surface to form 14-inch roll. Place on 1 side of greased cookie sheet. Repeat with remaining dough, placing rolls 4 inches apart on cookie sheet.
