Cereal Prawns is definitely one of our 'tze char' favourites. It is a quick and simple dish to prepare and everyone including the kids love this dish! You can also replace the prawns with chicken or fish meat or make it a vegetarian version by

500 grams Prawns
1/2 tsp Salt
1/2 tsp White Pepper
2 qty Eggs
4 tbsp Corn Flour
1/2 litre Oil
2 tbsp Butter
1 tbsp Oil
2 qty Chilli Padi
50 grams Curry Leaves
200 grams Nestum Cereal
1 tsp Sugar
1/4 tsp Pepper
1/4 tsp Salt

Steps:

  • Using a scissors, remove all the feelers and the legs and cut off the nose of the prawns but leave the head and all the shells intact. De-veining is optional.
  • Mix your batter of salt, pepper, eggs, and cornflour into a slurry.
  • In a wok on high, heat up the butter until melted and slightly bubbly.
  • Add in your oil to temper the butter, so it won't burn so easily. Add you curry leaves and let them fry until fragrant and the leaves should turn into a darker green.
  • Toss in your chillies and fry until fragrant.
  • When ready, add in sugar, and make sure its melted before adding the nestum cereal. At this point, reduce the heat to medium, and slowly stir the cereal to toast. Make sure you stir from the bottom.
  • When cereal is toasted, reduce the heat to low and load in your prawns, constantly stirring so that the toasted cereal will stick to the moist prawns.
  • Plate it up!

One of my favorite prawn dishes in the world! This Singaporean dish has buttery, milky notes with the unique taste and scent of curry leaves and a bit of kick from the chili. Serves 5 to 6

Number Of Ingredients 12

16 to 18 pieces medium to large sized prawns
2 medium eggs
2 tablespoons all-purpose flour or self-raising flour
2 tablespoons cornstarch
Cooking oil for deep frying
45 grams butter
6 bird's eye red chilli (chopped)
5 sprigs of curry leaves (leaves detached and cleaned)
50 grams Nestum Cereal Original Flavor
1 tablespoon milk powder
1 tablespoon sugar
1 teaspoon chicken powder

Steps:

  • 1. In a bowl, mix together the egg, flour, and cornstarch to make the batter. Stir until the texture is smooth. In a separate bowl, combine the Nestum cereal, milk powder, sugar, and chicken powder.
  • 2. Heat up some cooking oil for frying the prawns. With the batter prepared earlier, coat the prawns, shaking off the excess. Fry in the hot oil until the coating becomes slightly golden and the prawns are red and cooked through. Drain and set aside.
  • 3. In a separate wok or frying pan, melt the butter. Add the chopped chili and curry leaves. Stir fry until the butter is fragrant. Add the cooked prawns and stir gently, making sure each piece is coated with the butter.
  • 4. Pour in the prepared cereal seasoning mixture, then stir once again to ensure all the prawns are coated. Stir fry for 2 to 3 minutes more until the cereals start to get toasted and become golden brown. Dish and serve hot.

500 g large or medium size prawns. (Cleaned and dry thoroughly)
¾ cup cereal (I used Nestum)
0.5 tsp salt
1 egg, beaten
1½ tbsp rice flour
A fat pinch of black pepper
Vegetable oil for frying
2 tbsp butter

Steps:

  • Sprinkle prawns with salt. Add egg and mix thoroughly. Sprinkle with flour and mix till coated.
  • In a frying pan, heat butter and oil till hot.
  • Fry prawns over moderately high heat. till just cooked. Drain.
  • In another pan, heat butter till melted. Add curry leaves, garlic and chilli.
  • Fry over medium heat till fragrant and the curry leaves should crisp up.
  • Add cereal and season with salt.
  • Add prawns and toss till well mixed, turning off heat as cereal turns fully golden brown.

1 egg
1 tablespoon flour
1 tablespoon cornstarch
½ cup original flavour instant cereal drink
1 teaspoon chicken powder
1 tablespoon sugar
1 tablespoon milk powder
½ cup butter
1 teaspoon salt
1 teaspoon pepper
5 bird-eye chillis, sliced
40 curry leaves

Steps:

  • Remove the outer shells and legs from prawns, devein, then set aside in a bowl.
  • Cover the prawns with beaten egg, flour, and cornstarch, then stir using a set of chopsticks ensuring to coat each prawn.
  • Heat oil in a wok over medium heat, then once it comes up to temperature fry prawns in batches of five for two minutes. Repeat until all prawns are cooked, then set aside.
  • In a bowl, add original flavour instant cereal drink, chicken powder, sugar and milk powder, then stir to combine.
  • In a large frying pan, melt butter then add chilli and curry leaves, frying until butter starts to bubble.
  • Add the prawns to the pan and give a quick stir to coat in butter, then quickly add the dry cereal ingredients and continue to stir until the prawns are fully coated.
  • Serve prawns on a plate with all the cereal crumbs.
  • Enjoy!
