4 cups prepared strawberries (buy about 2 qt. fully ripe strawberries)
7 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine (optional)
1 pouch CERTO Fruit Pectin

Steps:

  • Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 4 cups crushed strawberries into 6- or 8-quart saucepot.
  • Add sugar; stir. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

2 cups blueberries
2 cups raspberries
2 cups strawberries
2 cups blackberries
3 cups sugar
1 lemon, juice of
2 teaspoons lemon rind, grated

Steps:

  • In a large pan, combine berries with sugar.
  • Crush berries with a potato masher.
  • Add lemon juice and lemon rind.
  • Bring to a boil, skimming off any foam that forms.
  • Cook at a full boil until jam thickens, approximately 30 minutes (jelling point is 221F).
  • While the berries are cooking, sterilize your jars and heat the seals in a pan of hot water.
  • Pour jam into hot jars; wipe rims, place seals and screw on bands fingertip-tight.
  • Process in a boiling water bath for five minutes; remove to a protected countertop and let cool, undisturbed for 24 hours.
  • If any of the lids have not sealed, either re-process or store in the refrigerator and use those jars first.

4 cups fresh or frozen blueberries
2-1/2 cups fresh or frozen red raspberries
2-1/2 cups fresh or frozen strawberries
1/4 cup lemon juice
2 packages (1-3/4 ounces each) powdered fruit pectin
11 cups sugar

Steps:

  • Combine the berries and lemon juice in a stockpot; crush fruit slightly. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil 1 minute, stirring constantly. , Remove from the heat; skim off any foam. Carefully ladle hot mixture into hot pint jars, leaving 1/4-in. headspace. 4 1/2 cups saskatoon berries, crushed
4 tablespoons lemon juice
1 (1 3/4 ounce) package powdered fruit pectin
6 cups sugar, white
2 tablespoons Grand Marnier

Steps:

  • Prepare canner, jars, lids.
  • In a large stainless steel saucepan combine the crushed saskatoons and lemon juice.
  • Whisk in pectin until dissolved.
  • Bring to a boil over high heat, stirring constantly.
  • Add sugar all at once, return to a full, rolling boil while stirring constantly.
  • Boil hard for 1 minute.
  • Immediately stir in Grand Marnier.
  • Remove from heat.
  • Skim off foam if needed.
  • Ladle hot jam into hot jars leaving 1/4 inch head space.
  • Remove air bubbles, wipe rims, adjust caps and screw rings to finger tip tight.
  • Process for 10 minutes in a boiling water bath.
  • Remove canner lid and let stand 5 additional minutes.
  • Remove jars, cool and store.

3 pounds fresh berries
1 ½ pounds (3 1/3 cups) cups sugar
4 1/2 teaspoons lemon juice (from 1/2 of a lemon)
Pinch of coarse salt

Steps:

  • Place a few small plates in the freezer. Stir berries, sugar, lemon juice, and salt in a large, heavy stockpot. Bring to a boil, stirring to dissolve sugar and mashing lightly with a potato masher. Skim foam from surface. Cook, stirring more frequently as jam thickens, until it has the consistency of very loose jelly, 8 to 9 minutes. Remove from heat.
  • Remove a plate from freezer; drop a spoonful of jam on it. Return to freezer for 1 to 2 minutes; nudge edge of jam with a finger. It should hold its shape. If jam is too thin and spreads, return it to a boil, testing every minute, until done.
  • Strain about half of the jam; discard seeds. Return strained jam to pot. Return to a boil. Remove from heat. Spoon hot jam into hot sterilized jars; cover immediately with sterilized lids.
