PERUVIAN CEVICHE

During my time in New York I got to visit all sorts of wonderful and fascinating places, and on one occasion I was lucky enough to be taken to an illegal Peruvian restaurant - it was great fun. This ceviche was on the menu that night. Ceviche is a lovely little appetizer of fresh fish marinated in citrus juices. As long as you've got mega fresh fish it's an absolute dream and delight to make and eat.

1 red or yellow pepper
2 spring onions
400 g skinless sea bass, lemon sole or snapper, pinboned, from sustainable sources
juice of 3 lemons
1-2 fresh red chillies
8 sprigs of fresh mint
8 sprigs of fresh coriander
1 punnet of mustard cress
a few fennel tops, (optional)
extra virgin olive oil

Steps:

  • Deseed and very finely chop the pepper, and trim and finely slice the spring onions, then add to a bowl.
  • Slice the fish into 1cm cubes, add to the bowl, then cover and place in the fridge until needed.
  • Squeeze the lemon juice into a jam jar, add 1 teaspoon of sea salt, then seseed, finely chop and add the chilli.
  • Pop the lid on and place in the fridge to chill - this may seem like a lot of salt but most of it gets drained away. Pick the herbs and cress, and place in the fridge.
  • You can assemble the ceviche just before your guests are ready to eat, but it's important that you don't leave the fish marinating for too long - you don't want the acids in the juices to cook the fish. Pour the lemon dressing over the fish mixture and immediately mix it up. Leave it to sit for about 2½ minutes while you lay out the plates.
  • Throw most of the herb mixture into the bowl with the fish and very quickly toss it together - no more than 10 seconds.
  • Divide the ceviche between 4 plates, gently spoon over a little of the dressing (discarding the rest) and sprinkle with the remaining herbs.
  • Drizzle over a little oil from a height, sprinkle with freshly ground black pepper, and enjoy.

1 pound bay scallops
8 limes, juiced
2 tomatoes, diced
5 green onions, minced
2 stalks celery, sliced
½ green bell pepper, minced
½ cup chopped fresh parsley
freshly ground black pepper
1 ½ tablespoons olive oil
⅛ cup chopped fresh cilantro

Steps:

  • Rinse scallops and place in a medium sized bowl. Pour lime juice over the scallops. The scallops should be completely immersed in the lime juice. Chill the lime juice and scallops all day or overnight until scallops are opaque (you cannot see through them).
  • Empty 1/2 of the lime juice from the bowl. Add tomatoes, green onions, celery, green bell pepper, parsley, black pepper, olive oil, and cilantro to the scallop mixture. Stir gently. Serve this dish in fancy glasses with a slice of lime hanging over the rim for effect.

50 littleneck clams, scrubbed clean
25 Blue Point oysters, cleaned
3/4 cup lemon juice
2/3 cup lime juice
2 pounds large shrimp, peeled, deveined, tails removed
1 cup diced cucumber, seeds removed
1 cup diced red onion
Corn tortilla chips, for serving
1/3 cup chopped fresh cilantro
1/3 cup chopped Italian flat-leaf parsley
1/4 cup diced tomato, seeds removed
1 habanero chile, finely diced
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Scatter the clams and oysters on a baking sheet and roast in the oven just until they begin to open up, 5 to 7 minutes. This will make the shucking process easier.
  • In a large bowl, combine the lemon juice and lime juice. Stir to combine.
  • Shuck the oysters and clams, with their natural juices, into the bowl. Chop the shrimp and add to the bowl. Stir gently to combine the seafood with the citrus juice. Cover and allow to sit for 2 hours in the refrigerator.
  • Add the cucumbers, red onions, cilantro, parsley, tomatoes and chile to the seafood and mix well. Add the olive oil and salt and pepper to taste. Mix again and allow to sit in the refrigerator for an additional 1 1/2 hours before serving.
  • Serve chilled, with corn tortilla chips.

1/4 cup fresh lemon juice, plus
2 tablespoons fresh lemon juice (please don't use anything from the bottle!)
3 tablespoons fresh orange juice
3 tablespoons fresh lime juice
2 teaspoons grated lime zest
2 teaspoons grated fresh ginger
2 teaspoons minced serrano chilies
1 1/4 lbs large scallops, sliced horizontally 1/4 inch thick
4 scallions, finely chopped
1 red bell pepper, finely diced
1/4 cup finely chopped cilantro
3 tablespoons pure olive oil
1 large garlic clove, minced
1 avocado, finely diced
1 small tomatoes (peeled, seeded and finely diced)
1 tablespoon minced red onion
1 tablespoon finely chopped cilantro
1 serrano chili, seeded and minced (optional)
1 small garlic clove, minced
1 1/2 tablespoons fresh lime juice
1 1/2 tablespoons extra virgin olive oil
salt & freshly ground black pepper

Steps:

  • PREPARE THE SCALLOP SEVICHE:.
  • In a large glass baking dish, combine the lemon, orange and lime juices with the lime zest, ginger and chili.
  • Add the sliced sea scallops in a single layer and turn them to coat.
  • Cover the dish and refrigerate until the scallops turn white, about 1 hour.
  • Add the scallions, red bell pepper, cilantro, olive oil and garlic and refrigerate for at least 1 hour or for up to 3 hours for firmer scallops.
  • MAKE THE AVOCADO DRESSING:.
  • In a medium bowl, combine the avocado with the tomato, red onion, cilantro, chili and garlic.
  • Fold in the lime juice and olive oil and season with salt and pepper.
  • Using a slotted spoon, divide the scallops, scallions and red bell pepper evenly among 6 shallow soup plates.
  • Spoon the avocado dressing on the ceviche and pour a little of the marinade all around.
  • Serve immediately.
  • **Though beer is the obvious choice with ceviche, the sweet scallops and sharp citrus flavors will find echoes in a crisp lime-scented Australian Riesling from the Clare Valley. Look for the 1998 Pikes or the 1998 Petaluma. Search for easy-to-find bright, citrusy Riesling.

Steps:
