¼ cup butter, melted
3 cups croutons
2 cups grated Cheddar cheese
6 eggs
1 ¾ cups milk
1 bell pepper (any color), diced
1 tablespoon prepared mustard
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
  • Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
  • Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

8 ounces mushrooms, sliced
1 tablespoon prepared mustard
salt and pepper

Steps:

  • Place bacon in a large, deep skillet.
  • Cook over medium high heat until evenly brown.
  • Drain, crumble and set aside.
  • Saute the pepper and mushrooms in a bit of the bacon grease until tender.
  • Preheat oven to 325 degrees F.
  • Melt butter in the microwave, or in a small pan on the stove over low heat.
  • Spray a 9x12 inch baking dish with vegetable spray.
  • Place croutons in the bottom of the dish, and drizzle with melted butter.
  • Beat the eggs in a bowl and add milk, crumbled bacon, peppers, onion, mushrooms, salt, and pepper, and mix until well-combined.
  • Pour over the croutons and cheese and top with remaining cheese.
  • Bake for 40 minutes to an hour, until the eggs are done.
  • Allow to stand 10 minutes before serving.

1 pound sliced bacon, diced
1 medium sweet onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded cheddar cheese
1-1/2 cups 4% cottage cheese
1-1/4 cups shredded Swiss cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.
