CHARRED LEMON-SHALLOT CHUTNEY
The smoky-tart flavors of this sauce pair well with the inherent sweetness of seared scallops or roasted pork tenderloin.

- Preheat broiler. Line a rimmed baking sheet with foil. Toss lemon, shallots, sugar, and 1/4 cup oil in a large bowl to coat. Season with salt and pepper. Spread mixture out evenly on prepared sheet; set bowl aside.
- Broil lemon-shallot mixture until beginning to char in spots, 8-10 minutes. Turn lemon rounds and shallot slices over and broil until almost completely charred, 6 minutes, watching closely (once they begin to char, they can darken very quickly; discard any burnt lemon or shallot). Let cool.
- Coarsely chop mixture. Place in reserved bowl and stir in vinegar, chives, Dijon mustard, and remaining 1/2 cup oil. Season with salt and pepper. DO AHEAD: Chutney can be made 5 days ahead. Cover and chill. Bring to room temperature before serving.
CHARRED SHALLOTS WITH LABNEH AND PITA
The flavor of roasted caramelized onions is a universal favorite that add sweetness and depth to countless recipes. When grilled, the onions - and in this case shallots - take on a smoky char as well. Here, they are served on top of thick labneh (strained Middle Eastern yogurt) to be eaten as a side or an unusual dip with grilled pita. This recipe calls for grilling the shallots slowly over indirect heat, giving them plenty of time to soften, brown and absorb the smoke. Or you can use the oven instead if need be, but you won't get that smoky flavor.

- Peel shallots and halve lengthwise through root end. Peel onion and cut into 2-inch chunks. Thread shallots and onion chunks onto metal or pre-soaked bamboo skewers. Thread garlic cloves onto a separate skewer. (If you're using the oven, skip skewering and see note on how to prepare the vegetables.)
- Light or heat one side of grill. Leave the other side bare for indirect grilling. (If using a charcoal grill, mound coals to one side.) Lightly brush skewers with 1 tablespoon of the olive oil and place over bare side of the grill for indirect heat. Cover and cook, turning occasionally, until the garlic is soft, 30 to 35 minutes.
- When the garlic is soft, remove from grill or oven. Transfer onion and shallot to the hottest part of the grill (add more coals if necessary) and continue cooking, turning occasionally, until onions are almost tender and well charred in spots, 15 to 20 minutes more.
- When cool enough to handle, coarsely chop onion and shallot and place in a large bowl. Mash garlic and add to bowl. Toss in remaining 4 tablespoons oil, the chopped parsley and mint, the preserved lemon, the lemon juice and the salt and pepper. Taste and add more salt, olive oil and/or lemon juice as needed. This mixture should be highly seasoned.
- Spread labneh or yogurt on a large platter. Spoon onion mixture over surface. Drizzle with additional oil, and tear mint and parsley leaves and scatter over top. Sprinkle with sumac. Serve with grilled pita.

- Preheat grill to medium.
- Season the pork chops with salt, pepper and smoked paprika, to taste. Drizzle with olive oil and put on the hot grill. Grill for 4 to 5 minutes on each side achieving slight char. Transfer to a platter, top with Lemon Shallot Chutney and serve.
- In a small bowl, mix together the lemon sections, shallots, tarragon, chives, olive oil, sugar, and salt and pepper, to taste. Set aside.
CHARRED BROCCOLI WITH LEMON AND CHILE FLAKES

- Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. When the oil is heated, add the broccoli, flat sides down, in an even layer, and sprinkle with 1/2 teaspoon salt. Let the broccoli cook undisturbed for 2 minutes. Flip the broccoli and continue cooking until the broccoli is tender-crisp, an additional 2 to 3 minutes. Remove the broccoli to a plate and set aside.
- Turn the heat down to low and add 1/2 tablespoon olive oil. Add the garlic, shallot and chile flakes and cook, stirring frequently, until tender, 2 to 3 minutes. Turn off the heat and add the lemon zest and juice and stir to combine.
- Spoon the lemon-shallot mixture over the broccoli and serve.
