ALMOST-FAMOUS CHEDDAR BISCUITS

- Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.
- Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.
- Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.
- Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.
SUMMER CHEESECAKE MOUSSE
Your favorite sweet and tangy dessert just got scoopable. We layered this creamy mousse with crushed graham crackers and berry jam in glass jars. As an alternative, spread the mousse on graham crackers and top with fresh berries or your favorite berry jam.

- Beat together the cream cheese and confectioners' sugar, in a large bowl, with an electric mixer on medium speed until well combined, about 2 minutes. Add in the sour cream, vanilla bean seeds and a pinch of salt and beat on medium-high speed until well combined, about 3 minutes.
- Dissolve 1 teaspoon gelatin in 1 tablespoon hot water and beat into the cream cheese mixture.
- Mix the crushed graham crackers, butter and granulated sugar in a small bowl until moist.
- Spoon the graham cracker mixture into the bottom of four 6-ounce glass mason jars (don't press it down). Top with 1/4 cup of the cream cheese mixture, then 2 tablespoons of jam, spreading it all the way to the side of the jar, then another 1/4 cup cream cheese mixture. Refrigerate until set, about 2 hours. Garnish with fresh berries and mint.

- In a large bowl, beat cream cheese, confectioners' sugar, vanilla and lemon zest until fluffy. Fold in whipped cream. Divide among 12 dessert dishes. Cover and refrigerate at least 2 hours., Meanwhile, preheat oven to 375°. Combine cracker crumbs and sugar in a small bowl; add butter and mix well. Press to a 1/4-in. thickness on an ungreased baking sheet. Bake until lightly browned, 10-12 minutes. Cool completely. , Just before serving, crumble graham cracker mixture; sprinkle over mousse. Top with strawberries if desired.

CHEDDAR CHEESE MOUSSE
This recipe is from "A Treasury of White House Cooking" by Chef Francois Rysavy. It was served as the cheese course to a April 29, 1969 formal dinner hosted by President Nixon to honour Duke Ellington. Prepare this mousse the day before serving.

- Mix the half-and-half and cheese in an electric blender, adding about 1/2 a cup of cheese at a time.
- Place this mixture in the top of a double boiler over hot, but not rapidly boiling water. Heat and stir until the mixture is smooth and all of the cheese is melted. Remove from heat, and cool at least 10 minutes.
- In the mean time whip the heavy cream until stiff and season it with the Worcestershire sauce and Kirsch. Fold the seasoned whipped cream lightly into the cheese mixture. Pour into a mold or a bowl that has been rinsed in cold water and chill until firm (best overnight).
- Unmold and serve.

BLUE CHEESE MOUSSE
For this excellent hor d'oeuvre, use either a good blue cheese, or blue cheese, already crumbled, with no added flavors. Make sure to make as specified, and chill overnight, or several hours, before serving. Have all ingredients at room temperature, before creaming.

- Soften the gelatin in the Marsala, set aside.
- Beat together the blue cheese, egg, cream cheese and butter till smooth.
- Add the seasoning, stirring well.
- Put the softened gelatin mixture into a 4-cup saucepan with the cream, shallots, and salt. Stir until warm to the finger, set aside five minutes.
- Beat into the blue cheese mixture till smooth.
- Spray a 2-3 cup mold and line with plastic wrap. Fill with the mixture, cover, and chill until firm enough to unmold.
- Serve with a selection of sliced vegetables, and buttered crostini.
