2 cups 2% milk, divided
1/2 cup yellow cornmeal
1 cup shredded sharp cheddar cheese
1/3 cup butter
1 tablespoon sugar
1 teaspoon salt
2 large eggs, well beaten

Steps:

  • Scald 1-1/2 cups milk (heat to 180°). Mix cornmeal with remaining 1/2 cup cold milk and add to hot milk. Cook, stirring constantly, over low heat until thickened, approximately 5 minutes. Add cheese, butter, sugar and salt; stir until melted. Remove from heat until thickened, approximately 5 minutes. Add cheese, butter, sugar and salt; stir until melted. Remove from heat; stir in eggs. Pour into 1-qt. greased baking dish; bake at 350° for about 35 minutes or until lightly browned and set. Serve immediately.

2 cups shredded cheddar cheese
4 tablespoons unsalted butter, room temperature
1 teaspoon salt
1 cup all-purpose flour
2 tablespoons ice water

Steps:

  • Preheat the oven to 325˚F (160˚C).
  • Using an electric hand mixer or stand mixer, beat the cheese, butter, and salt in a large bowl.
  • Once combined, mix in the flour and add the ice water one tablespoon at a time. The dough should hold together when pressed but crumble apart if you break it up in your hand. If it seems too dry, add a little more ice water.
  • Divide the dough in half and pack together into 2 discs. Wrap in parchment paper and chill in the refrigerator for 30 minutes.
  • Roll out the dough to ¼ inch (6 mm) thick, pinching together the cracks on the edges.
  • Trace and cut out 6 spoon shapes from each disc of dough.
  • Place the cut-out cheese spoons on top of greased, upside-down spoons on a parchment paper-lined baking sheet. Lightly press down to mold the dough to each spoon's shape.
  • Bake for 25 minutes, or until golden brown.
  • Serve with layered taco dip, if desired.

This recipe is still a family favorite as a side dish with pork and fresh vegetables. Add 1/2 cup of sugar or honey to turn it into a wonderful, old-fashioned dessert.

2 cups whole milk
6 tablespoons butter
1 cup cornmeal
1 teaspoon salt
3 large eggs, room temperature, separated

Steps:

  • Scald milk (do not boil); stir in the butter, cornmeal and salt. Cook, stirring constantly, until cornmeal comes away from sides of pan and thickens. Set aside to cool until lukewarm. , Add beaten egg yolks; mix thoroughly. Fold in stiffly beaten egg whites; mix gently but thoroughly. Pour into greased 2-qt. baking dish. Bake at 375° for 1 hour or until top is golden brown. Serve immediately.

  • In a large saucepan, saute onion and celery in butter until tender. Add potatoes and broth; bring to a boil. ¾ cup all-purpose flour, plus more for dusting
¼ cup rainbow sprinkles
2 cups milk chocolate chips
2 tablespoons coconut oil
ice cream, for serving

Steps:

  • Preheat the oven to 325˚F (160˚C).
  • Place the sugar cookie dough sheet on a lightly floured surface.
  • Sprinkle the flour over the dough and knead together.
  • Roll out the dough to a ¼-inch (6-mm) thick square.
  • Top with sprinkles and lightly roll out the dough again so the sprinkles become submerged in the dough.
  • Place a spoon on top of the dough and trace its shape with a paring knife. Reroll the dough as needed to cut out 8 spoons.
  • Arrange spoons upside-down on a parchment-lined baking sheet. Lightly grease with nonstick cooking spray.
  • Place each cookie spoon cutout on top of a spoon. Lightly press down to mold.

1 tablespoon butter, plus more for baking dish
2 cups milk
1 1/2 cups corn kernels
2/3 cup yellow cornmeal
Coarse salt
Pinch of cayenne pepper
1 cup sharp white cheddar cheese
4 large eggs, separated

Steps:

  • Preheat oven to 400 degrees. Butter a 2-quart souffle dish or casserole; set aside. In a medium saucepan, combine butter, milk, corn, cornmeal, 1 teaspoon salt, and cayenne. Bring to a boil; reduce heat to medium, and simmer, stirring frequently, until mixture is slightly thickened, 3 to 4 minutes. Remove from heat; stir in cheese. Let cool until just warm to the touch, about 15 minutes. Stir in egg yolks until combined.
  • In a clean mixing bowl, beat egg whites and a pinch of salt until soft peaks form. Stir 1/3 of the whites into cornmeal mixture until combined, then gently fold in the remaining whites with a rubber spatula. Pour into prepared dish.
  • Place dish in oven; reduce oven heat to 375 degrees. Bake until browned on top but still slightly loose in the center, 25 to 30 minutes. Let cool 5 minutes before serving.

1 lb breakfast sausage, casings removed
4 tablespoons unsalted butter
¼ cup all purpose flour
3 cups whole milk
½ teaspoon dried thyme
¼ teaspoon red pepper flakes
½ teaspoon ground sage
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cups all purpose flour, plus more for dusting
1 tablespoon baking powder
1 stick unsalted butter, cubed
1 cup shredded cheddar cheese, plus more for dusting
1 teaspoon kosher salt
2 tablespoons fresh chives
¾ cup heavy cream
1 large egg, beaten

Steps:

  • Cook the sausage in a large skillet over medium heat for about 5 minutes until evenly browned, breaking up into small pieces as it cooks. Remove from the skillet with a slotted spoon and transfer to a plate, leaving any rendered fat behind.
  • Add the butter to the skillet. Once the butter melts, add the flour and whisk until light golden brown, about 2 minutes. Slowly whisk in the milk until combined and whisk until the gravy thickens, about 10 minutes.
  • Add the thyme, red pepper flakes, sage, salt, pepper, and sausage to the pan and stir until combined. Transfer the mixture to a glass measuring cup and let cool to room temperature.
  • Carefully pour the cooled gravy into a silicone ice mold and freeze overnight.
  • Make the biscuits: Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • To the bowl of a food processor, add the flour, baking powder, butter, salt, cheddar cheese, and chives. Pulse several times until mixture resembles coarse crumbs.
  • With the processor running, slowly pour in the heavy cream and pulse until the dough comes together.
  • Turn the dough out onto a lightly floured surface and knead until no longer sticky. Roll the dough out to about ⅛ inch (½ cm) thick and cut out 8 4-inch (10 cm) circles with a floured biscuit cutter.
  • Remove the frozen gravy from the mold and place 1 cube at the center of each biscuit. Bring the edges of the dough over the gravy and roll to seal. Save the leftover gravy cubes for another use.
  • Place the stuffed biscuits on the prepared baking sheet. Brush with the beaten egg and sprinkle with more cheese.
  • Bake the biscuits for 15-20 minutes, until golden brown.
