ITALIAN MINI MEAT LOAVES WITH MAC AND THREE CHEESES



Italian Mini Meat Loaves with Mac and Three Cheeses image

1 1/3 pounds ground sirloin
1 large egg, beaten
2/3 cup Italian bread crumbs, a couple of handfuls
1/4 cup grated Parmigiano, plus 1/2 cup
1/2 small green bell pepper, chopped
1 small yellow onion, finely chopped
4 cloves garlic, chopped
3 tablespoons tomato paste
Salt and pepper
2 tablespoons extra-virgin olive oil
1 pound corkscrew shaped pasta with lines (cavatappi) or small shell pasta
2 tablespoons butter
2 tablespoon all-purpose flour
2 cups milk
2 cups shredded sharp Cheddar
1/2 cup shredded asiago cheese
1 teaspoon coarse black pepper
1/2 cup Italian bread crumbs
2 tablespoons chopped fresh thyme leaves
2 to 3 tablespoons chopped rosemary leaves
1/4 cup chopped flat-leaf parsley

Steps:

  • Put a large pot of water on to boil for pasta. Preheat oven to 425 degrees F.
  • Place meat in a bowl. Make a well in meat. Fill well with egg, bread crumbs, 1/4 cup cheese, peppers, onions, garlic, tomato paste, salt and pepper. Mix meat and breading and form 4 individual oval meat loaves, 1-inch thick. Coat loaves with extra-virgin olive oil and arrange on a baking sheet. Roast 18 to 20 minutes.
  • When the pasta water boils, salt water and add pasta. Cook until slightly undercooked ? pasta will continue to cook when combined with cheese sauce.
  • Melt butter in a saucepan and add flour. Whisk in milk. Bring to a bubble. Thicken milk, 2 to 3 minutes. Add cheeses: Cheddar, asiago, 1/2 cup Parmesan and black pepper. Stir to melt cheeses. Drain pasta and combine with melted cheese sauce and transfer to a flameproof baking dish or casserole. Place bread crumbs in a bowl and add extra-virgin olive oil and herbs to bread crumbs. Top pasta with bread crumbs. Place under a broiler and brown bread crumbs. Serve cheese and pasta alongside meat loaf.

3/4 cup gluten-free white rice flour cracker crumbs (from 4.4 oz box crackers)
1 can (18 oz) Progresso™ Vegetable Classics French onion soup
1 1/2 lb extra-lean (at least 93%) ground beef
1 teaspoon salt
3/4 teaspoon thyme leaves
1/4 teaspoon pepper
1 egg
6 slices (1 1/2 oz each) provolone cheese
Hot cooked mashed potatoes, if desired

Steps:

  • Heat oven to 350°F. In large bowl, stir cracker crumbs and 1 cup of the soup until well mixed; let stand 10 minutes.
  • Add beef, salt, thyme, pepper and egg to cracker crumb mixture until well mixed. Spread half of beef mixture into ungreased 8x4-or 9x5- inch loaf pan. Cut 3 slices of the cheese into 1/2-inch strips. Arrange strips in center of loaf to within 1/2-inch of sides and ends of pan. Top cheese with remaining beef mixture covering completely to sides of pan.
  • Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until beef is no longer pink in center and thermometer reads 160°F. Arrange remaining cheese slices, overlapping, on top of meatloaf. Top cheese with 1/4 cup of the remaining soup (making sure to get onion pieces). Bake an additional 5 minutes or until cheese is melted. Let stand 5 minutes; remove from pan. Heat remaining soup until hot, serve with meatloaf and potatoes.

8 slices bacon, divided
1 pound ground beef
¼ cup dry bread crumbs
1 egg, beaten
1 clove garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon salt

1 cup shredded Cheddar cheese, or as needed
⅓ cup ketchup
¼ cup brown sugar
¼ cup crushed pineapple, drained
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Chop 4 bacon strips; set remaining 4 bacon strips aside.
  • Cook chopped bacon in a large skillet over medium heat, stirring often, until bacon is browned and crisp, 8 to 10 minutes. Set chopped bacon aside.
  • Lightly mix ground beef, bread crumbs, beaten egg, garlic, 1 teaspoon Worcestershire sauce, salt, and black pepper together in a bowl until thoroughly combined. Spread meat mixture out on a piece of waxed paper, forming a rectangle about 10 inches square. Spread Cheddar cheese and cooked chopped bacon over the meat, leaving a 1/2-inch edge all around. Carefully lift an edge and roll the meat around the filling. Place into a loaf pan with the seam side down.
  • Bake meat loaf in the preheated oven until hot and beginning to brown, about 30 minutes. Mix ketchup, brown sugar, pineapple, and 1 teaspoon Worcestershire sauce together in a bowl, stirring to dissolve brown sugar. Remove meat loaf from oven and place remaining 4 bacon strips onto meat loaf, weaving them together. Spread pineapple mixture over woven bacon and top of loaf.
  • Return meat loaf to oven and bake until bacon topping is crisp and pineapple mixture has baked into a glaze, about 20 more minutes. An instant-read meat thermometer inserted into the center of the meat loaf should read 160 degrees F (70 degrees C).

2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.

1 cup pasta sauce
½ cup Italian-style bread crumbs, or more as needed

1 egg, beaten

¼ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese, or more to taste

I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

1 egg
1 cup seasoned dry bread crumb
1 teaspoon minced garlic
1/2 cup of your favorite pasta sauce, homemade or in the jar
1 cup chopped onion
1/4 cup chopped fresh basil
3/4 lb lean ground beef
1/2 lb hot Italian sausage
1 cup cubed mozzarella cheese, in about 1/4 inch pieces
additional pasta sauce, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
  • Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
  • Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
  • Serve with rice, spaghetti, or scalloped potatoes.
